Chicken Dumpling Patties

IMG_6283eMaisie adores dumplings but as she’s allergic to wheat, I make her special Pork Dumplings with Rice Wrappers which are delicious but extremely time consuming to make.  Maisie’s been asking for dumplings but life has been crazy and I just haven’t found the time to devote to making them.  I started thinking about her dumplings and realized that it wasn’t the wrapper which she loved, it really was the flavors of the filling.  It was sort of spur of the moment the night that I decided to make these patties and I happened to have boneless chicken breasts in the house so I decided to grind them up and use that meat instead of the pork, which I usually use in dumplings, and it worked out beautifully.  Since these were a last minute decision, I didn’t have any Napa cabbage so after checking my pantry I decided to add water chestnuts which worked out beautifully, providing a nice little crunch and wonderful additional moisture to the patties.  I chose to pan fry the patties to give them a little crunch on the outside and they held together well and cooked up easily & quickly. These patties really did have the flavor of dumplings and were totally delicious, super simple to make, healthy and loved by all.  I know that I’ll be making these Chicken Dumpling Patties again very soon as they’ll be a perfect Chinese New Year meal for my little allergy girl.  I also know that it won’t be the last time I make these patties as I see them becoming a regular menu item in our home especially as they travel well for lunches, freeze and reheat beautifully.  A perfect little snack or meal..

In a large bowl combine all the ingredients except the cooking oil.  Form the mixture into six to eight, pointer finger thick, patties.  Heat a large cast iron skillet over medium heat and add enough cooking oil to just lightly coat the bottom of the pan.  Brown the patties on both sides making sure to not over-cook the patties but making sure that they’re cooked all the way through.  Serve the patties with Dumpling Dipping Sauce.

Enjoy!

Maisie “Safe” Bacon & “Cheese” Zucchini Fritters (gluten, egg & dairy free)

IMG_5404e Maisie has been gobbling these fritters down like crazy and I’m thrilled that she loves them so much.  Recently I made Bacon & Cheese Zucchini Fritters which were crazy good and they tasted more like loaded potatoes then zucchini and I knew that Maisie would love them but because of her allergies she couldn’t have any.  Well as I stated in that recipe, our garden is producing a lot of zucchini so I figured that I’d give this recipe another go but make it safe for my girl to eat…and am I ever glad that I did because she’s eating lots of zucchini, not knowing it and loving it.

Add the grated zucchini and grated onion to a cheesecloth lined sieve and squeeze & press out as much of the water as possible.  In a small bowl mix together the hot water and Chia seeds and allow a gel to form.  In a large bowl add the squeezed out zucchini & onion, Chia seed gel, potato flakes, Daiya “cheese” shreds, bacon bits, salt & pepper.  Stir to combine well.

Heat a large cast iron skillet over medium high heat and add just enough oil to coat the bottom of the pan.  Using a large cookie scoop portion out the zucchini mixture into the hot pan, being careful not to over crowd the pan.  Press and spread the zucchini mixture just a little.  Cook until the bottom side is golden and then carefully flip to cook the other side.  Once both sides are golden remove to a paper towel lined cooling rack.  Serve hot, room temperature or chilled.

Enjoy!

Chicken Tenders

IMG_3731eMaisie has never been a chicken nuggets type of girl and now with her food allergies we obviously can’t just go to the drive through to get some but I did want to try and make some which maybe she would enjoy and with these I succeeded.  These chicken tenders were super simple to make, Maisie “safe” and delicious for all of of us. Best of all, there are no weird processed chicken parts involved.

Slice the chicken breasts into strips about pointer finger wide.  In a shallow bowl mix together the potato flakes, Italian seasoning, garlic powder, salt & pepper and set aside.  Over a medium-high flame, heat a large heavy bottomed or cast iron skillet.  When hot, add just enough oil to lightly coat the bottom of the pan.  One-by-one press the chicken strips into the potato flake mixture to coat completely and then carefully add to hot pan.  Do not crowd the pan.  Turn the chicken when the potato flakes get golden brown and remove from pan once the chicken strips are cooked through.  Add oil as needed throughout the cooking process.  Serve with a dipping sauce of your choice…Maisie chose ketchup.

Enjoy!

Baked Meatballs

IMG_3310eMaisie adores meatballs and last week she asked for some and as they’re so simple to make I whipped up a batch.  Because of Maisie’s allergies I don’t use eggs or bread crumbs when making the meatballs.  To substitute for the egg I use chia seeds and for the bread I use potato flakes.  To add some extra calories I also incorporate ground walnuts into the mixture and they add a really nice texture to the finished meatball.  These meatballs have great flavor and texture and I love that Maisie adores them and will easily eat six to eight of them at one go.  Maisie enjoys eating the meatballs dipped either in ketchup or bbq sauce but they’re also delicious over pasta with a sauce or as part of a meatball sub sandwich.

IMG_3520eEverything goes in one bowl and is mixed together,

IMG_3304eI portion out the meat using a large cookie scoop then roll the scoops into balls before placing them on a foil lined baking sheet.  Twenty minutes in the oven and Maisie’s meatballs are ready to serve.

Preheat oven to 400F.

Line a sheet pan with foil and coat with cooking spray.  In a medium bowl add the hot water and chia seeds and mix well.  Allow the chia seeds to hydrate for five minutes.  Add all the other ingredients and using your hands mix well.  Using a large cookie scoop portion out the meat.  Roll the portioned out meat into balls and place the meatballs on a the prepared pan.  Bake for 20 minutes, until cooked through.  Serve with sauce or as Maisie likes them, with a side of ketchup or bbq sauce.

Enjoy!

Potato Crusted Pork Chops

IMG_2447eBefore we left for Aruba I was walking through the grocery and had a major AHA moment when I happened to notice an end cap filled with boxes of something I’ve never purchased, potato flakes and I realized that they looked just like panko.  It dawned on Marblehead here that I could use them to “bread” pork, chicken or fish, making some of our favorite meals “safe” for Maisie and her food allergies.  I am really starting to find my way and though a bit of a pain in the tush, it is interesting to find new ways of making meals so that Maisie can continue to enjoy some of her favorite foods in a new and safe way and soon it will be my norm in cooking.  Once I got home with the potato flakes I looked up recipes on the web and sure enough there were dozens of them.  Most said dip the meat in an egg wash and coat with the potato flakes but obviously that wasn’t going to work for Maisie as she can’t have egg whites.  So I just lightly coated the meat with a little peanut oil and then the potato flakes which I seasoned with some garlic powder, salt, pepper and Italian seasonings and I baked the pork the way I always have and it worked out wonderfully.  The seasoned potato flakes were delicious and we we enjoyed one of our favorite meals in the new “safe for Maisie” way.

2 boneless pork chops
1/2 cup potato flakes
1 tsp. Italian seasoning
1 tsp. garlic powder
salt to taste
pepper to taste
Peanut or oil of your choice

Preheat oven to 450F.  Line a baking sheet with foil and lightly oil.  In a bowl mix together the potato flakes, Italian seasoning, garlic powder, salt & pepper.  Lightly coat the pork chops with oil and then dip into the potato flake mixture covering all sides of the pork.  Place the pork on prepared baking sheet.  Bake 20 minutes or until cooked though.
