Crispy Baked Parmesan Garlic Wings


Here in the Cook Lisa Cook home, we adore wings. Some of the wings we've blogged about were our Baked Buffalo Wings, Baked Teriyaki Wings, Baked Tandoori Wings, and Baked Chinese Five-Spice Wings.  One thing you'll notice about all the wings which we make is, every-single-one is baked.  We bake them hot and fast so they remain juicy and moist inside and even without frying, they have a wonderful golden & crispy skin.  We each have our favorite but honestly, lately, I feel like we've been in a wing rut and in need of a new flavor.  Enter, Crispy Baked Parmesan Garlic Wings.  What made me think to make these was, I was making for Maisie, the gluten-free version of one of my favorite childhood dishes, noodles with butter, parmesan & garlic and thought, wouldn't that be wonderful on some wings.  Seeing as we had just purchased wings and we were going to do the same-old-same-old, we just went with the new idea and winged it...get it? Winged it... ;)  The new wing recipe was a hit!  Buttery, garlicy and cheesy all on a perfectly cooked and crispy skinned wing. Perfection and delighted to have a new flavor in our wing line-up!

Crispy Baked Parmesan Garlic Wings


Line a baking sheet with foil and place a baking rack on top. Using a paper towel, dry the wings off as well as possible. Place the wings in a large bowl and sprinkle with the baking powder, salt, pepper and 1 tsp of the garlic powder. Using your hands, toss to coat well. Place the wings, skin side up, so that they are close but not touching one another, on the rack. Allow the wings to dry with the mixture on them for about 30 minutes. Heat oven to 500F. Bake wings for 20 minutes, until golden brown. If at the 15 minute mark, you notice that they are not browning nicely, place the wings under the broiler for the remaining 5 minutes. (I have a convection oven and use the roast setting so our wings are cooked from top and bottom.) During the last 5 minutes of cook time, melt the ghee or butter and add to a large bowl. Stir in the 1 TBS. garlic powder & 1/4 cup of grated Parmesan. Once the wings are fully baked, using tongs, add them to the bowl of buttery garlic cheese and toss to coat. Add the parsley and give a final toss. Place wings on serving plate and sprinkle with the shredded Parmesan and remaining 1/8 cup grated Parmesan.  Serve hot.

Baked Teriyaki Chicken Wings

11800481_10153560682131663_1812914463961244563_n We adore chicken wings!  Baked Buffalo Chicken Wings, Tandoori Chicken Wings, Chinese Five-Spice Wings and now, Baked Teriyaki Wings.  This month for Secret Recipe Club we were assigned Sarah’s blog, Things I Make for Dinner.  We immediately spied her recipe for Teriyaki wings and knowing that we had wings in the freezer which were purchased during a fabu sale, (wink, wink Sarah) it was a done deal!  These wings fit in perfectly with our ongoing theme this summer of foods to eat whilst relaxing on our dock sipping adult beverages.  In fact, next time we make these wings we’ll most likely also be making Sarah’s Pineapple Sangria to enjoy as well. 

We adapted Sarah’s recipe to make it Paleo & Whole30 by swapping out the soy sauce and using Coconut Aminos and in place of the honey, we used some Medjool dates.  The wings were a wonderful treat and Sarah’s recipe or ours, you won’t be disappointed.

Line a baking sheet with aluminum foil for easy cleanup and lightly grease foil with oil.  Preheat oven to 450F.  Place the vinegar, Coconut Aminos & dates in a blender and process until smooth.  Place the wings pieces in a large bowl and cover with the sauce from the blender.  Toss to coat the wings thoroughly.  Spread the wings in a single layer on foil, skin side up and bake for 20 minutes, until light golden in color.  Baste with pan juices before serving.

Tandoori Chicken Wings

I adore tandoori chicken but as I don't have a tandoor to authentically recreate the dish at home, I try to come as close as possible by using a delicious marinade and high heat cooking in my oven or on my grill.

This recipe is a bit different in that I've made it dairy free by using coconut milk in place of the yogurt that is traditionally used and I chose to use chicken wings, which though I'm sure has been done, I've never had them tandoori style. Eammon was in the mood for wings and I was craving tandoori...so there you have it, Tandoori Chicken Wings.

I realize that the recipe appears a bit overwhelming with the long list of ingredients but it really is simple in that everything is dumped into one big bowl and left to marinate for a few hours and then the chicken is baked or grilled so the hands on time is really minimal and the reward is huge. The wings were crispy on the outside, juicy on the inside and flavorful throughout. These Tandoori Wings were a perfect way to satisfy everyone's craving.

 

Tandoori Chicken Wings

Combine the coconut milk, lemon juice and all the spices in a large bowl and mix well. Add the chicken pieces and stir to coat well. Cover and refrigerate at least 4 hours, preferably overnight. Preheat oven to 500F. Line a baking sheet with aluminum foil and lightly grease with coconut oil or oil of your choice. Lay the chicken pieces skin side up. Bake for 20-25 minutes until cooked through and the skin is crispy.

Baked Buffalo Chicken Wings

IMG_5483eLast month for Secret Recipe Club, Kim of Everyday Mom cooked from my blog and using my  Nutella No Bake Cookies recipe she turned my cookies into a crust and created a lovely and delicious looking Nutella Cheesecake.  Well now it’s my turn to work with one of her recipes as this month I was assigned Kim’s blog for The Secret Recipe Club.  I enjoyed reading through all of Kim’s blog, seeing her especially lovely cake creations and also seeing her children cooking with her in the kitchen because if you’ve read this blog at all, you know I love cooking with my Maisie.  As always it was difficult to pick just one recipe but in the end I decided to make one of Eammon’s favorite foods, Buffalo Chicken Wings.  When Kim made her Buffalo wings she said that it was a flop, that the sauce didn’t stick and that the wings lacked flavor.  She asked for suggestions on why hers flopped so I decided to take on the challenge, determined to make it work and make some spicy and delicious Baked Buffalo Chicken Wings.

The only ingredient change I made to Kim’s recipe was to cut the amount of butter from 1/2 cup to 1 TBS.  But then I doubled the total amount of all the sauce ingredients as I decided that I was going to not only toss the wings in the hot sauce mixture once they were cooked but that I would also marinate the wings before cooking, trying to infuse some additional spicy hot goodness into them.  The other change I made was to really crank up the oven temperature from Kim’s 350F to 500F.  I have found in the past when cooking chicken wings in the oven, like my Chinese Five Spice Wings, that by cooking hot and fast I get nice crispy skin and juicy tender meat so I figured that would be the way to go.

So how did the Baked Buffalo Chicken Wings turn out?  Well the sauce stuck, the flavor was spicy hot deliciousness, the skin was crispy, the meat tender and moist…all-in-all total finger-licking spicy success!  Eammon was an especially happy guy when I served these wings so thank you Kim for inspiring me to make these delicious Baked Buffalo Chicken Wings

Pre-heat oven to 500F.

In a large bowl whisk together the softened butter, hot sauce, Tabasco & chili powder until well blended.  Divide the sauce equally between two large bowls and set one aside.   Add the wing pieces to one bowl and toss to coat until all the wing pieces are coated.  Cover and let marinate in the refrigerator for at least one hour. Lay the wings skin side up on an aluminum foil lined baking sheet which has been sprayed with cooking spray and bake for 20-25 minutes, until the chicken is cooked through and the skin is crispy with golden charred bits.  Remove from oven and immediately add the wing pieces (but NOT all the fat and juice on the pan) to the reserved bowl of hot sauce mixture and toss well, coating all the wing pieces.  Serve immediately with Ranch or bleu cheese dressing*, carrot and/or celery sticks.

* Kim raved about her bleu cheese dressing which she made and served with her wings but because no one in this house cares for bleu cheese anything I passed on making the dressing but hop on over to Kim’s blog to find that recipe.

Chinese Five Spice Wings with Labneh & Cilantro Dipping Sauce

P5210040aWe adore hot and spicy wings and these with the combination of Chinese five-spice and cayenne are right up our alley.  They are easily made in the oven, which is great as I really don’t like frying, but they still come out nice and crispy.  The dipping sauce is a nice cool foil and because it’s dairy it helps cut the capsicum.
Chinese Five Spice Wings with Labneh & Cilantro Dipping Sauce
For dipping sauce:
  • 1/2 cup labneh*
  • 1/2 cup sour cream
  • 1/2 cup Mayonnaise 
  • juice of 1 lemon
  • 1 clove of garlic, finely minced
  • 1/2 cup of finely minced cilantro
  • sea salt & ground pepper to taste
Pre-heat oven to 500F.

In a large bowl mix together the five spice powder, cayenne, salt & pepper. Add wing pieces and toss to coat until all the spices are attached to the wings. Lay the wings skin side up on an aluminum foil lined baking sheets and bake for 25-30 minutes.

While the wings are cooking, mix together all the dipping sauce ingredients and allow for the tastes to blend.

Serve the spicy wings with the cooling sauce.

* you can substitute 1/4 cup sour cream mixed with 1/4 cup cream cheese for the labneh.
