Carrot Cake Cheese Cake Fudge

10365720_10153046685606663_1819659123318443561_nAt one of the local farmer’s markets, there is a vendor who sells fudge, and one of the flavors she sometimes carries is Carrot Cake Cheesecake.  Well, Eammon just adored her fudge so we worked to replicate the recipe at home as a treat over the holidays.  Yes, another holiday recipe which only took us 4 months to finally post!  We dissected the farmer’s market fudge layer-by-layer and noted that the fudge was the cheesecake flavor and the bottom crust, even without any carrots, tasted like carrot cake.  So, we researched all sorts of recipes to finally come up with this one which is indistinguishable from the farmer’s market one he loved.  Though there are a few steps to the recipe, it is simple to execute and the results are worth the time.

For the carrot cake base:

For the Cheesecake Fudge:

Preheat oven to 425 degrees. Line an 8x8-inch baking dish with aluminum foil and grease with butter or coconut oil.  Arrange the Ritz Crackers in a even layer on the bottom of the baking dish, breaking some to fill in all the gaps and overlapping as needed.  In a medium saucepan, bring butter and brown sugar to a boil over medium-high heat.  Once the mixture is at a FULL boil, cook for 2 minutes.  Remove from the heat and stir in the sweetened condensed milk, cinnamon, cocoa,  nutmeg & walnuts.  Pour the mixture over the crackers and bake for 10 minutes.  Set aside to cool while making the fudge.

In a medium saucepan combine the white chocolate chips, butter, salt and condensed milk and heat until melted and smooth. Add the dry pudding mix and stir until the mix dissolves and is smooth.  Add the Marshmallow Fluff and stir until melted and smooth. Pour the melted fudge over the crust and use an offset spatula to smooth. 

Refrigerate until set.  Carefully remove the fudge from the pan and peel back the foil.  Using a sharp knife which has been heated in a bowl of hot water and then wiped dry, cut the fudge into small squares.  Clean the knife between each cut with a dish towel and reheat it as necessary.   Store the fudge at room temperature.

Fried Fudge

10897797_10153046685461663_8191443314098020644_n Totally off our regular eating plan, but we decided that some Christmas treats were in order this year.  The first of these sugary treats was some super smooth, chocolaty Fried Fudge.  The fudge isn’t actually fried, it’s just made in a fry pan, thus the name.  Simple to make and delicious to eat.  Make it with or without nuts, it’s up to you!

In a heavy fry pan, mix the sugar, butter &  milk together and then bring to a boil.  Reduce heat to low and cook for six more minutes, stirring occasionally. Remove from the heat & add the chocolate chips and nuts. Stir until fudge begins to form and then quickly add the vanilla, stirring to incorporate. Using a tablespoon, drop the fudge onto a Silpat or wax paper. Allow to cool and store in an airtight container.

Zucchini Noodles Aglio et Olio

Zucchini Aglio et olio 1Who knew that zucchini noodles could be so amazingly delicious!!  We now make these noodles in large batches so they’re always on hand to eat, hot or cold.  What a fabu way to get in your veggies!  We’ve enjoyed the noodles topped with some Bolognese or other sauces but our favorite way to eat the noodles is as a side dish…or late night straight from the fridge…shhhhhhh…  To get the best possible noodles, make sure to take the time to salt, drain and dry the zucchini otherwise you’ll end up with watery noodles.

Spiralize or julienne the zucchini and place in a colander or wire strainer and toss generously with salt until all the strands are lightly crusted.  Allow the zucchini to sit for at least 30 minutes…or a few hours, to help remove the excess water.  Rinse the noodles under running water and then drain well.  Top a dishtowel with paper towels and then spread out the noodles.  Roll the towel up into a cylinder and twist, pushing out as much of the excess water as possible.  Unroll the towel and then place the noodles onto a baking sheet lined with fresh paper towels and spread the noodles out.  Place the tray in the refrigerator for an hour or so and allow the noodles to dry further. 

When ready to prepare the noodles, heat a large skillet over medium-high heat, for about 2 minutes.  Add the coconut oil and when it’s melted, add the almond flour and a pinch of salt.  Sauté, stirring often, until toasty brown.  Remove the almond crumbs to a plate and reserve for garnishing. 

Return the pan to the heat and add the dried zucchini noodles and sauté until just tender, about 2 minutes.  Push the noodles to one side of the pan and reduce the heat to low.  Add the olive oil, garlic and crushed red pepper flakes to the empty side of the pan and stir with a wooden spoon until the garlic is fragrant.  Push the zucchini noodles into the oil and stir gently to coat evenly.  Turn off the heat and stir in the parsley, salt & pepper.  Sprinkle the noodles with the almond crumbs and either stir to combine or leave as a topping.

Orange-Car​damom Date Nut Bars

1425540_10152080801316663_706446332_n It’s Improv Cooking Challenge reveal day and this month for the Improv Cooking Challenge our hostess Kristen of Frugal Antics of a Harried Homemaker challenged the participating bloggers to make any recipe of their choosing using the specified ingredients of orange & cardamom.  My very first thought were of some delicious orange & cardamom Christmas cookies which I haven’t had in years, but as I’m not eating wheat, gluten, sugar or sweeteners these days, they weren’t going to happen.  But, I did have my heart set on something sweet which would fit into my current diet and after a little looking around I found this wonderful recipe for Orange-Cardamom Date Bars with a Nutty Crust

1426136_10152080801216663_979848146_n I made only one small ingredient change to better fit our diets and I simplified the process of making the bars.  The bars are delicious and sweet with no added sugar or sweeteners and the flavor of the orange and cardamom works perfectly with the flavors of the nuts and dates.  Even though there’s no cooking or baking involved, the nuts make a wonderful crunchy crust and the date puree in the center is creamy and delicious.  A wonderful little treat if you’re looking for a healthy sweet dessert or snack.

Grease an 8-inch-square baking pan with the coconut oil.  Working over the bowl of a  food processor, peel the oranges and remove and discard all the white pith and the membranes.  Add the dates and process to a smooth puree. Scrape the puree into a bowl.  Rinse and dry the processor bowl.  Add the almonds to the empty processor bowl and process until very finely ground. Add the pecans, cinnamon and ground cardamom and pulse until the pecans are coarsely chopped. Add 1/4 cup of the date puree and pulse until the mixture holds together. Using oiled fingers, press half of the nut mixture into the prepared pan in an even layer. Spread the date puree over the crust. Crumble the remaining nut mixture evenly over the filling; pressing down to compact it. Refrigerate for at least 2 hours, until firm enough to cut.

Cut into 24 squares and serve.

Dan Dan Noodles ~ healthier~ low carbs but with Full Flavor!

IMG_6741e I am not a huge pasta lover but I absolutely adore really spicy Dan Dan Noodles.  Recently I had a craving for them and instead of running out to my favorite Szechuan restaurant I decided to make them at home and to try and do a healthier version.  My concession to making them healthier was to replace the Chinese egg noodles with some no calorie/no carb Shirataki noodles and instead of pork (which I generally order) I decided to use some ground turkey breast. 

Holy cow this recipe rocked and had all the wonderful flavors found in the restaurant version and even better, I didn’t feel all full and bloated after eating it.  I just found a new winner with this recipe and I’ll be making it time and time again.  Oh and when Eammon tried it, he thought that I had brought in take-out ;-)

If using the Shirataki noodles, drain and rinse very well.  If using the Chinese egg noodles, bring a large pot of water to boil and cook the noodles according to package instructions. Drain the noodles, rinse under cold water, and drain again. Transfer the noodles to a serving dish.

Heat a large skillet or wok over medium-high heat. Add the oil and swirl to coat the base and sides of the wok. Add the garlic, ginger and red chili peppers. Stir fry until lightly brown and fragrant.  Add in the meat, breaking it apart with a spatula. Stir-fry until the meat no longer pink and slightly browned. Add in the Chinese wine, black vinegar and Szechuan preserved vegetable and cook until fragrant, about a minute. Add in the green onions, soy sauce, sesame paste, Szechuan peppercorns, chili oil, ground peanuts, chicken stock, sesame oil and sugar.

Stir well and bring to a boil. Cook until the sauce thickens. Check the seasonings and add salt if needed.  Spoon the cooked meat mixture over the noodles. Sprinkle the chopped green onions on top before serving.

Lemon Almond Biscotti

IMG_6579eIt’s Secret Recipe Club time again, one of my favorite times of the month.  I love receiving my secret cooking pal assignment, going through their blog, checking out all their recipes, choosing one to make and feature and of course reveal day is best of all as I we all post and see what everyone has made.  This month my assignment was to cook from Kate’s Food Babbles.  I have been a reader of Kate’s blog for a while as I not only participate in the Secret Recipe Club with her but we also both participate monthly in the Improv Cooking Challenge.  I also “know” Kate from the lovely and kind comments she always leaves on my challenge recipes.  Kate’s blog is filled with so many gorgeous food photos, I just wanted to make everything,  I think that this month I was craving sugar as I had a real rough time deciding on a recipe.  I narrowed it down to Kate’s peppermint patties, maple bacon caramel corn, bacon caramel tart, potato chip cookies, Mexican hot chocolate and her Lemon Biscotti. In the end the biscotti won out as I had everything in the house and I’ve also been craving lemon, but trust me, a few others from the list will be made soon. 

I’ve made biscotti in the past and both Eammon and I love them with our tea and coffee but I’ve never made them with a citrus and as I’ve been craving lemon, these biscotti were just perfect.  I changed Kate’s recipe a little, really just bumping up the lemon a bit with the addition of lemon extract and in place of her almond extract I used vanilla bean paste and then to get that bit of almond flavor back in, I chose to add toasted slivered almonds.  These biscotti were simple to make, super crunchy, the lemon flavor really shined through and the combo of the lemon, almonds and white chocolate was light and delicious.  These biscotti were a big hit here in the Cook Lisa Cook home and I’m looking forward to making more of Kate’s delicious recipes.  Hop over to Kate’s blog to check out the original recipe and all of her other wonderful treats.

Preheat oven to 375F. Line a baking sheet with a Silpat or parchment paper and set aside.  In a medium mixing bowl, whisk together the flour and baking powder and set aside.

In the bowl of a stand mixer fitted with the whisk attachment, combine the eggs, sugar, vanilla bean paste, lemon extract, lemon zest and lemon juice. Whisk at medium speed for about 5 minutes, or until the mixture thickens and holds its shape.  Using a silicone spatula, fold the flour mixture into the egg mixture and then fold in the slivered almonds.

On a lightly floured surface, with damp hands, divide the dough into 2 portions and shape each into a 3-inch diameter log.  Transfer the logs to the prepared baking sheet, spacing evenly.  Bake for 16 minutes, or until lightly browned.  Remove from oven and let cool for 10-15 minutes on the baking sheet.  Reduce oven temperature to 300F.

With a sharp slice each log into ½”-thick slices.  Arrange cookies, cut sides up, in a single layer on a Silpat or parchment paper lined baking sheet.  Bake until firm, about 20 minutes, flipping midway through baking.  Cool completely. They will get crunchier as they cool.

Line a cool baking sheet with a Silpat or parchment paper. Set aside.

Chop the white chocolate and place in a glass or metal bowl. Place the bowl over a pot of barely simmering water. Do not let the bowl touch the water. Stir until the chocolate is smooth and melted.  Dip the bottoms of the biscotti into the melted chocolate and place on the parchment lined baking sheet. Allow the chocolate to set completely.

Store in an airtight container up to one week.

Sweet Potato Cranberry Nut Cookies

IMG_6199eHere it is, January 1, 2013 and I hope that everyone had a wonderful New Year’s eve and we wish everyone a wonderful and delicious year.  I’m hoping that in this new year I can be a bit more organized and caught up with things as here I am, still posting recipes from Thanksgiving. 

After Thanksgiving I had some leftover sweet potatoes and I couldn’t decide what to do when them until I saw a recipe for Sweet Potato Cookies on Stephanie’s blog, Eat Your Heart Out and I thought, what a perfect way to use them, and as it worked out,  I had all the other ingredients needed for the recipe already in my pantry.

IMG_6200eThese cookies were wonderful, almost a cross between a cookie and muffin.  I loved these cookies plain, but even better when they were heated a little in the microwave, split open and topped with a nice pat of butter  My parents too really loved the cookies and my Mom has been asking for weeks now, that I post the recipe, so for her this is my first recipe of the new year. . 

IMG_6203eSweet Potato Cranberry Nut Cookies (adapted from here) 

Preheat oven to 350 F. Prepare two baking sheets lined with Silpats or parchment paper.

In a large bowl, whisk together the eggs and Whey Low Gold (or brown sugar) until thick and pale.  Whisk in the coconut oil until well combined.  Stir in the sweet potato & vanilla extract.  Add the flour, baking powder, baking soda & spices. Fold together with a spatula until no flour remains. Fold in the crystallized ginger, cranberries and chopped pecans.

Using a large cookie scoop portion out the batter onto the prepared pans.  Bake for 10 to 12 minutes, or until puffed and lightly golden and a toothpick inserted into the center of one of the cookies comes out clean. Allow to cool for 5 minutes on the baking sheet before removing to a wire rack to cool completely.  Cookies will last, well wrapped, at room temperature for up to 4 days. If storing in layers, separate with parchment or wax paper so they don’t stick together.

Cranberry Almond Oat Breakfast Cookies ~ no added sugar ~ egg, flour & dairy free!!

IMG_6446eIn the Cook Lisa Cook home we go through a lot of oats.  Not only do we all enjoy oatmeal for breakfast but I also use oats in all of the granola bars that I make for Maisie and in a number of my cookie bars too.  So when I was contacted by Foodie Blogroll* regarding participating in a promotion for Better Oats, I of course said yes! 

Once the Better Oats were in the house we were all excited to give them a try.  Eammon immediately went for the MMM...Muffins Blueberry and said that it was the best flavored oatmeal he had ever eaten.  Maisie opted for the Oat Revolution! Apples & Cinnamon as that’s her favorite flavor.  Maisie liked the oatmeal though she said, not as much as her regular one, but I think that’s because her regular one tastes much sweeter.  I enjoyed the MMM...Muffins Oatmeal Raisin Cookie which was tasty, not too sweet and had a great texture.  We also tried the RAW Pure & Simple Pomegranate with Flax which was interesting and different from what we generally eat.  I set aside the RAW Pure & Simple bare to be used in the recipe below but honestly any of the flavors would have worked in the cookies but I wanted to keep them no-added sugar so I opted for the plain oatmeal.

I saw a recipe for breakfast cookies and tailored that recipe to flavors which we enjoy.  What’s really nice though about using this basic recipe is that it can be made to fit any taste you enjoy.  Don’t like cranberries or they contain too much sugar, try raisins.  Allergic to almonds or don’t like nuts?  Just use ones you like or leave them out.  Not a fan of bananas, use mango pulp…what about mango pulp, apple sauce, dried mango bits and some unsweetened coconut with the oats…sure sounds delicious and still wheat, egg and dairy free!  So grab some Better Oats and use your imagination to make some delicious Oat Breakfast Cookies of your own, they’re delicious.

Preheat oven to 350F.  Line a baking sheet with a Silpat or parchment paper.  In a medium bowl mash the bananas.  Stir in the applesauce & almond extract.  Add the oats, dried cranberries and toasted almonds and mix well.  Allow the mixture to sit for about five minutes before proceeding.  With a large cookie scoop portion out the mixture making 12 cookies.  Flatten the cookies down a bit as they will not spread or puff as they bake.  Bake for 30-35 minutes until golden.  Allow the cookies to cool for 5 minutes on the pans before removing to a cooling rack.  Store in an airtight container.

Crockpot Baked Stuffed Apples

I know, here it is the last day of November and I’m still trying to get my Thanksgiving recipes posted and shoot, this isn’t even my last one.  Busyness, continued sickness and tiredness…well I’m just behind and maybe one day I’ll catch up…maybe by next Thanksgiving??  I mentioned both over on my Moments with Maisie and on this blog that this year with all the food restrictions and sickness, I went really simple with our dinner and especially with dessert.  I mean think about it, what do you make with the following restrictions?  Maisie can’t have wheat, egg or dairy, my Mom can’t have dairy, my Dad limits sugar, Eammon really doesn’t care for desserts which are too chocolaty and I’ve been avoiding flour & sugar and also, though I enjoy crisps, crumbles & some tarts, I generally don’t care for pies, the making or the eating.  

Dessert really was a dilemma until I saw a recipe for Crock-Pot Baked Apples on the blog, Skinny Chef.  The recipe was perfect as it it was the right seasonal flavors and it pretty much met everyone’s dietary restrictions.  Even better, it was simple to prepare and once it was put in the slow cooker no one had to think about it until dessert was served.  Even though the original recipe met most of our dietary restrictions I still tweaked it a bit by changing out the trans-fat free margarine called for in the original recipe, instead using coconut oil and I also decided to add dried cranberries, crystallized ginger and some additional spices to make the dish more my own. 

I loved the simplicity of the dish and the flavor of the filling and the apples.  The only thing I would do differently next time is to use less fat and that’s only because I didn’t care for the mouth feel but on that, I was the only one who complained.  We enjoyed these apples both hot and cold as leftovers.  These apples provided all of the flavors of the holiday without all the heaviness, calories, fat and work of pies and by having these apples I think we all felt a bit less stuffed and possibly…even a bit healthier!

Using an apple corer and a serrated grapefruit spoon, core the apples, scooping out all the seeds and opening the cored hole a little wider at the top of the apple than the corer.  It’s okay if you go all the way through as the apples don’t move when they cook and if you carefully scoop them from underneath when serving, the filling stays in them without a problem. 

In a large bowl, mix the Whey Low Gold, walnuts, pecans, cranberries, coconut oil, cinnamon, ginger & ground clove.  Fill each apple with approximately 2 TBS. of the filling, packing it in, and place the filled apples in the crockpot. Pour in the apple cider and orange liquor.  Cover and cook for 2 1/2 to 3 hours on high heat until the apples are soft and begin to collapse.

Mini Cheesecake Bites

IMG_5164eWho doesn’t just love cheesecake?  I know that it’s a favorite of mine and always has been so I was very excited that our Crazy Cooking Challenge hostess Tina, of Moms Crazy Cooking chose cheesecake for this month’s challenge.  The way that the Crazy Cooking Challenge works is that each month there is a dish that our hostess Tina challenges the participating bloggers to make.  We all go out searching for what we think is the ultimate recipe for that dish and once we find it, we make it and then all on the same day we do our post featuring the recipe.  Sadly, this is the twelfth and final month of the Crazy Cooking Challenge.  It’s been fun participating for all these months and I’m looking forward to hopefully taking on a new cooking challenge in the coming months.

Growing up my Mom used to make wonderful little cookies and pastries for holidays and one of my favorites were her Mini Cheesecake Bites.  Though I have changed her recipe a bit over the years with my changing tastes and diet, these are still totally awesome and remind me very much of my Mom’s wonderful Mini Cheesecake Bites.

IMG_5164e Mini Cheesecake Bites

Preheat oven to 375F. Lay the sliced almonds on a foil lined baking sheet and bake until they start to get toasted.  Remove from oven and allow to cool.  Add the toasted almonds to the bowl of a food processor and using the pulse action, process until they are finely ground.  Add the butter, 2 packets of Stevia and the cinnamon and process until well combined. 

Line mini muffin tins with 36 mini muffin liners and add 1/2 teaspoon of the almond crust mixture to each.  Lightly press the mixture into the bottom of each muffin cup.  Bake for 5 minutes and then allow to cool.

While the crusts are baking and cooling add the cream cheese, egg, 6 packets of Stevia, vanilla bean paste & sour cream to the bowl of a stand mixer and blend until perfectly smooth.  Top each crust with the cream cheese mixture, filling the cup almost to the top.  Bake for 12-15 minutes until the mini cheesecakes are puffed and just starting to get golden on the top.  Remove from the oven and cool completely in the muffin tins. Once cool, remove the cheesecake bites from the pan and refrigerate or freeze.  To serve, top with a piece of candied cherry
