For example, in Maisie's cheesecake we use gluten-free Graham cracker crumbs. Eammon gets a regular Graham cracker crumb crust and personally, I prefer no crust at all, so mine is crumb-free. Easy-peasy to customize when you're making minis!! The sous vide method produces cheesecake perfection... dense, smooth, rich, & creamy deliciousness.

Loaded Potato Soup
It’s Secret Recipe Club time and this month I was assigned the blog Cupcakes with Sprinkles which is written by Meghan, a sweets loving, cooking and crafting Mama to two cutie-patootie little girls. So I know you’re scratching your head thinking Cupcakes with Sprinkles and a sweets loving Mama and here I am posting a recipe for Loaded Potato Soup??? Well I had just done a whole slew of sweet treat baking as I was sending a care package off to a friend’s daughter who’s away on her mission for the next year, so here in the Cook Lisa Cook home we were sort of sweet treated out. Also, about a month ago we were out for dinner and Eammon ordered loaded potato soup and just adored it and had asked if I would try to make some at home for him, so when I saw Meghan’s loaded potato soup recipe I knew what I’d be making. Trust me though a number of her sweet treat recipe have been saved to make in the future. I mean check these out and I know you’ll be adding them to your list of recipes to make: Boston cream pie, one of my all time favorites, white chocolate mousse torte for my white chocolate loving husband and Avalanche Bars which I know I’ll be making one day soon with Maisie.
The day that I made Meghan’s soup was a cold day here in Georgia so it was a perfect & delicious meal. I’m not even going to mention how much of the pot Eammon consumed in just one day but I’ll put it to you this way, I have already made this soup again and seeing how much Eammon especially loved it the first time, I was smart and made a double batch the second time around. Oh and here’s something amazing and almost unheard of, other than adding a bit of salt, I changed nothing in Meghan’s recipe…yes amazing for the cook who is always tweaking and changing recipes. Oh and when I say I didn’t change anything, I mean even the second time around, this recipe is just absolutely perfect and I hope you’ll give it a try…but make a double batch, trust me on that one!
Loaded Potato Soup (recipe from here)
- 1/2 lb bacon, diced
- 1 large onion, diced
- 5 large potatoes, peeled and cubed
- 30 oz. Cheaters Chicken Soup or 2 - 15oz cans chicken stock or vegetable stock
- 3 TBS. butter
- 3 TBS. all-purpose flour
- 1 1/2 cups milk (I used skimmed)
- 3/4 cup cheddar cheese, shredded
- 1/2 tsp. fresh ground black pepper
- sea salt, to taste
- sour cream for garnish
In a large stock pot, cook bacon until crisp. Remove and set aside. Keep the bacon grease in the pot and add the onions, cook until tender. Leave the onions in the pot and add the potatoes and chicken broth. Bring to a boil, reduce heat and simmer until potatoes are tender. With a slotted spoon remove about a cup of potatoes. Place in a bowl and mash with a fork. Set aside.
In a small sauce pan melt the butter. Stir in the flour and cook for 2 minutes on med-low. Whisk in the milk, turn up the heat and bring to a boil. Simmer until thickened. Slowly stir the milk mixture in to stock pot of potatoes. Bring to a boil, reduce heat and simmer. Stir the bowl of smashed potatoes back into pot. Add 1/2 cup of the shredded cheese and three-fourths of the bacon to the pot. Add pepper and salt to taste. Stir to combine. Cook an additional 5 minutes.
To serve, ladle the soup into bowls and top with some shredded cheese, bacon and sour cream.

Mom’s Curried Chicken Salad
My Mom has been making a curried chicken salad for years and as she’s been raving about how wonderful it is, I decided to give it a try…but of course I made a few little changes, but what else is new. This Curried Chicken Salad is a little different from my Curried Grilled Thai Chicken Salad but just as delicious. My Mom often makes this recipe with leftover turkey so perfect for your Thanksgiving leftovers. This is just one of those recipes which can be tailored to what you have in hand or to your tastes.
As I’ve been avoiding carbs lately, I’ve been enjoying this Curried Chicken Salad as pictured, atop a thick slice of fresh tomato and wrapped in a leaf of Romaine lettuce, so basically an awesome lettuce wrap…Delish!!
- 1/4 cup sour cream (I prefer Breakstone sour cream)
- 1/4 cup real mayonnaise (I prefer Hellmann’s mayonnaise)
- 3/4 tsp. garlic powder
- 4 tsp. Jamaican curry powder
- 1/4 tsp. cayenne pepper powder
- 3/4 tsp. spicy brown mustard (I prefer Gulden’s mustard)
- 1 TBS. fresh lemon juice
- 3 TBS. finely chopped mango chutney (I prefer Raffetto Chut-Nut Colonial Chutney)
- 1 lb. cold cooked chicken, diced (I prefer my leftover “Rotisserie” Chicken)
- 1/4 cup thinly sliced green onions, whites and greens
- 1 large peeled apple, diced (I prefer Granny Smith apples)
- 1/3 cup slivered almonds, toasted
- 1/3 cup finely diced celery
- 1/4 cup golden raisins
In a large bowl mix together the sour cream, mayonnaise, garlic powder, curry powder and cayenne. Add the mustard, lemon juice and chutney and combine well. Add the diced chicken, green onions, apple, almonds, celery & raisins and toss to mix. Cover and refrigerate. This is best made a day in advance so that all the flavors can come together. Serve cold on a salad or in a sandwich.

Mini Cheesecake Bites
Who doesn’t just love cheesecake? I know that it’s a favorite of mine and always has been so I was very excited that our Crazy Cooking Challenge hostess Tina, of Moms Crazy Cooking chose cheesecake for this month’s challenge. The way that the Crazy Cooking Challenge works is that each month there is a dish that our hostess Tina challenges the participating bloggers to make. We all go out searching for what we think is the ultimate recipe for that dish and once we find it, we make it and then all on the same day we do our post featuring the recipe. Sadly, this is the twelfth and final month of the Crazy Cooking Challenge. It’s been fun participating for all these months and I’m looking forward to hopefully taking on a new cooking challenge in the coming months.
Growing up my Mom used to make wonderful little cookies and pastries for holidays and one of my favorites were her Mini Cheesecake Bites. Though I have changed her recipe a bit over the years with my changing tastes and diet, these are still totally awesome and remind me very much of my Mom’s wonderful Mini Cheesecake Bites.
I added the cream cheese mixture and they’re ready to bake.
Baked, chilled, decorated and delicious!
Oh and my secret, I love these best straight from the freezer…total YUM!
- 1 cup sliced almonds
- 1 tsp. butter, at room temperature
- 2 packets Stevia
- 1/4 tsp. roasted cinnamon
- 1 lb. cream cheese (I prefer Philadelphia cream cheese), at room temperature
- 1 egg
- 6 packets Stevia
- 2 tsp. vanilla bean paste, or vanilla extract
- 1/2 cup sour cream (I prefer Breakstone sour cream)
Preheat oven to 375F. Lay the sliced almonds on a foil lined baking sheet and bake until they start to get toasted. Remove from oven and allow to cool. Add the toasted almonds to the bowl of a food processor and using the pulse action, process until they are finely ground. Add the butter, 2 packets of Stevia and the cinnamon and process until well combined.
Line mini muffin tins with 36 mini muffin liners and add 1/2 teaspoon of the almond crust mixture to each. Lightly press the mixture into the bottom of each muffin cup. Bake for 5 minutes and then allow to cool.
While the crusts are baking and cooling add the cream cheese, egg, 6 packets of Stevia, vanilla bean paste & sour cream to the bowl of a stand mixer and blend until perfectly smooth. Top each crust with the cream cheese mixture, filling the cup almost to the top. Bake for 12-15 minutes until the mini cheesecakes are puffed and just starting to get golden on the top. Remove from the oven and cool completely in the muffin tins. Once cool, remove the cheesecake bites from the pan and refrigerate or freeze. To serve, top with a piece of candied cherry.

Curried Grilled Thai Chicken Salad
I know that it seems like I’ll never stop posting about the meal I made when friends Lisa, Doug & Briana came to visit, eat and play almost two weeks ago. I’m telling you the food was delicious, Grilled Thai Chicken and it’s perfect complement, Thai Cucumber Salad with cukes fresh picked from the garden. Then to satisfy my rib cravings, Chili Maple Mustard Ribs and my still un-posted chocolate dessert recipe which will post on Monday, July 9 as my Secret Recipe Club entry, well the meal all around was just delicious. I did have quite the leftovers though and I easily froze the ribs but with the Grilled Thai Chicken I decided to make it into a curried chicken salad using flavors to compliment the marinade already grilled onto the chicken while using ingredients I had already in my pantry. I made the recipe up as I went along but I’m so pleased that I had the sense to write it down as I went along as this chicken was absolutely wonderful and a huge hit with both Eammon and I. I know that I’ll be making this salad again even using plain grilled chicken breasts if I don’t have leftover Grilled Thai Chicken breasts because this salad was the bomb!
I would have had this recipe posted sooner but between Maisie’s always busy schedule and the fact that I have been suffering with a major sinus infection and a wicked ~going on five days already~ migraine, well just staying up and out of bed with my eyes open is a huge accomplishment for the day when I can do it…but trust me, this recipe was worth the wait and I hope that you’ll give it a try.
Curried Grilled Thai Chicken Salad
- 3-4 leftover Grilled Thai Chicken breasts, small dice (or leftover grilled skinless, boneless chicken breasts)
- 1/2 c. Hellmann’s real mayonnaise
- 1/2 c. sour cream (I prefer Breakstone Sour Cream)
- 2 TBS. Major Grey chutney
- 1 TBS. Jamaican curry powder
- 1 Granny Smith apple, small dice
- 1/4 c. golden raisins
- 2 TBS. finely minced cilantro
- 1/4 c. slivered almonds, toasted
- 2 TBS. unsweetened shredded coconut, toasted
In a large bowl mix together the mayonnaise, sour cream, chutney & curry powder. Add the diced chicken, diced apple, raisins & cilantro. Using a large spoon, mix everything together until well blended. Top the chicken salad with the toasted almonds and Coconut. For myself, I served the chicken salad on full leaves of romaine lettuce so that the whole thing could be rolled into a little wrap. For Eammon I took the entire serving above, lettuce and all and put it onto some toasted multi-grain bread and he enjoyed it as a sandwich. So many options and all delicious.

Strawberry Soup
Strawberries and Cream, those are this month’s Improv Cooking Challenge ingredients assigned by our hostess Kristen of Frugal Antics of a Harried Homemaker. I went back and forth thinking about all the wonderful and delicious things I could make with the assigned ingredients but after enjoying delicious cold fruit soups every lunchtime during our recent 2 week transatlantic cruise I decided that I needed to make my own cold soup. I did a bit of searching on the internet and the recipe that kept coming up as a standout winning recipe was the Strawberry Soup from the 1900 Park Fare restaurant in Disney’s Grand Floridian Resort & Spa.
I scaled back on the amounts in the recipe as I was going to be the only one eating the soup as it’s not Maisie “safe” and Eammon doesn’t care for cold or fruit soups, but had I put this in a glass and told him it was a smoothie he would have gobbled it down and loved it! I was happy to have it all to myself as the soup was absolutely delicious and when you read the recipe, beyond simple to make. I wish that Maisie could enjoy this soup as it would be so special to serve for a Princess lunch. With strawberries in season, this is a perfect soup to make and enjoy.

Strawberry Soup (Adapted from here)
- 1 lb.strawberries (frozen variety with no added sugar, thaw with juice)
- 6.4 oz. heavy cream
- 0.8 oz.sour cream
- 1.2 oz. vanilla yogurt
- fresh strawberries for garnish
- sour cream for garnish
- fresh mint for garnish
Using a blender mix together the strawberries, heavy cream, sour cream & yogurt until smooth.
Chill.
Shake well before serving. Add a dollop of sour cream, fresh strawberries and mint leaves as garnish.
Makes 3 servings.

Fruit, Nut & Poppy Seed Chicken Salad
I was very excited this month when I received my Secret Recipe Club assignment as I was assigned Amy’s A Little Nosh, a blog which I have followed for a long time and one where, when I have my act together, I participate in her weekly Tastetastic Thursday blog hop. Since I’ve been a long time reader of Amy’s blog it didn’t take me ages and ages to find a recipe that I wanted to make as I already had a few of hers saved in my “need to make” file. For some reason most of the recipes included using chicken like her Spicy Honey-Brushed Chicken Thighs, Sweet and Sour Chicken and the one I chose to make, Amy’s Chicken Salad. Part of the reason I chose Amy’s Chicken Salad was, I was asked by Maisie’s gym to make lunch for the judges at a gymnastics meet the gym was hosting and they happened to request chicken salad on croissants so what better time to try out a new recipe.
One thing that I really liked about Amy’s recipe was that she made it sound adaptable to whatever added ingredients you’d choose to include. I have to say that this chicken salad was the hands down best chicken salad I’ve ever eaten and it only got better the second day once all the flavors really came together. I really loved the sweet little bites of apple and cranberry and the little added cinnamon crunch of the cashews was always a nice surprise. The combination of yogurts, sour cream & mayonnaise gave a creamy richness and because I used some honey yogurt, just a touch of sweetness. This is now my go-to chicken salad recipe and I know that this summer it will be served time and time again in wraps, sandwiches and atop salads.
Fruit, Nut & Poppy Seed Chicken Salad (Adapted from here)
- 2 lbs. boneless, skinless white meat “Rotisserie” Chicken, cut or pulled into small bite-size chunks
- 1 1/2 cups dried cranberries
- 1 large Fuji apple, peeled, seeded & cut into 1/8-inch dice
- 1 cup coarsely chopped cinnamon cashews
- 2 tablespoons poppy seeds
- 6 oz. plain Greek yogurt
- 6 oz. honey Greek yogurt
- 8 oz. sour cream
- 8 oz. Hellmann’s real mayonnaise
In a large bowl mix the yogurts, sour cream and mayonnaise together. Add the chicken, dried cranberries, apple, cinnamon cashews and poppy seeds and mix together. Enjoy immediately or for even better flavor, cover and refrigerate overnight.

Broiled Sushi
I love being a member of The Secret Recipe Club and each month I’m excited to receive my Secret Recipe Club assignment to see who I’ve been assigned. Just as in months past, as soon as I received the email from our Group ‘A’ hostess Jane, which contained all the information for my assigned blog, I was off stalking it. This month I was assigned Lisa’s Sweet as Sugar Cookies which is a wonderful blog filled with dozens and dozens of sweet treat recipes as well as some main dishes. I looked at so many of Lisa’s bar, cookie and ice cream recipes and there were just dozens that I wanted to make but because of Maisie’s allergies she can’t really eat most of the sweets and the fact that neither Eammon nor I really need to be eating sweets right now I decided to look at the main dish recipes. Once I saw Lisa’s recipe for Broiled Sushi I knew that I had found my recipe.
I’ll bet that it was less than four hours from the time I opened the email containing my assignment to the time that I served this meal. As it worked out I opened the email late on a Sunday morning and as I didn’t have any plans for meals that day and the fact that I had everything I needed to make this in my pantry and freezer…well it was meant to be. I got my mushrooms and sushi rice soaking and I pulled a package of imitation crab meat from the freezer and got that defrosting and then I was good to go. This dish came together in no time at all and Eammon especially adored it and ate it for meal after meal until he finished the entire dish. Surprisingly for me, I didn’t change Lisa’s recipe at all, I made it exactly as written and when I make it again, which I will, I wouldn’t change a thing…well maybe I would make one of her wonderful looking sweets to enjoy after the Broiled Sushi. Oh and if you’re turning your nose up thinking sushi = raw fish well not in this dish, as there’s nothing raw, just wonderful flavors so give it a try.
In a large bowl mix together the mushrooms, crab meat, sour cream and mayonnaise.
Spread a layer of sushi rice in a baking dish.
Sprinkle the rice layer with furikake.
Add the crab & mushroom mixture and it’s ready for the broiler.
Bubbly and lightly browned, fresh from the broiler.
Furikake and roasted laver (Gim). I keep both the sheets and the individual packets of Gim in the house. The sheets are when we eat at home and the small packets I send with Maisie for snack at school and at the gym. To see our no-mess way of cutting the sheets into neat little squares, click here.
Broiled Sushi (from here)
- 10 dried shiitake mushrooms, soaked in water until rehydrated and then chopped
- 1 1/2 lbs. imitation crab meat, shredded
- 1 cup sour cream
- 1/2 cup mayonnaise
- furikake (Japanese rice seasoning)
- 3 cups cooked brown sushi rice
- Korean roasted laver (Gim)
- Sriracha
In a large bowl combine the chopped mushrooms, crab meat, sour cream and mayonnaise and stir to combine Spray a 9 x13-inch Pyrex with cooking spray and spread the sushi rice in an even layer. Sprinkle with furikake seasoning. Spread with the crab meat mixture. Put under the broiler for about 10 minutes until the top begins to brown. Serve with Sriracha. Scoop into pieces of Gim, and eat.

Double Chocolate Meyer Lemon Mousse Cake
It’s Crazy Cooking Challenge time again and this month our hostess Tina of Moms Crazy Cooking challenged the participating bloggers to search non-celebrity blogs looking for the ultimate chocolate cake recipe. Once we find what we think is the ultimate recipe we are to make and feature that recipe and the blog where we found it. I posted recently in my Dark Chocolate Dipped Candied Lemon Peel post that since making my Ponderosa Lemon & Sour Cream Tart I’ve been on a major lemon kick so when I saw Mimi’s Double Chocolate Tangerine Mousse Cake I knew immediately that I could tweak the recipe a bit switching out the tangerine for lemon and I could get my tangy lemon fix, still meet the requirements of making a chocolate cake while also making the ultimate chocolate cake.
This cake used both white and dark chocolate and that combined with tangy lemon, well it was exactly what I had been craving. The chocolate cake is flourless so it’s dense and rich. The mousse uses gelatin which is something that I haven’t done before but it seemed to help the mousse keep it’s shape but the mousse remained light, soft, rich and creamy. Everyone who tried the cake thought it was beautiful and adored the rich flavors…and they were rich so small slices are a must. If you adore dark chocolate and lemon like we do, I think you will find this to be a favorite in your home too.

Cake
1 cup butter
9 oz. dark chocolate chips
3/4 cup sugar
5 large eggs
1/2 cup ground toasted walnuts
Mousse
1 cup fresh Meyer lemon juice
1/3 cup lemon sugar syrup from making the Dark Chocolate Dipped Candied Lemon Peel
2 1/2 teaspoons unflavored gelatin
12 oz. white chocolate chips
6 TBS sour cream
2 cups chilled whipping cream
Dark Chocolate Dipped Candied Lemon Peel
walnut halves, toasted
For Cake:
Preheat oven to 325°F. Butter an 8-inch round cake pan with cutter and then dust with cocoa powder. Melt the butter and chocolate chips in a microwave safe bowl, checking and stirring often until smooth. Whisk in the sugar, eggs and ground nuts. Pour the batter into prepared pan. Bake the cake until a toothpick inserted into center comes out with very moist crumbs attached, about 45 minutes. Cool completely on rack (cake will fall and crack). Once cool, using the pan’s cutter release the cake from the pan.
Lightly brush the sides of a 10-inch springform pan with vegetable oil. Set the cooled cake in center of pan (there will be space around cake that will be filled in with mousse). Refrigerate cake.
For Mousse:
Place 3 TBS of the lemon juice in a small bowl and sprinkle in the gelatin. Let stand for 10 minutes to allow the gelatin to soften. Meanwhile, simmer the remaining lemon juice and lemon sugar syrup, stirring until combined, about 3 minutes. Add the gelatin mixture to the lemon juice mixture and stir to dissolve. Add 12 ounces white chocolate and whisk over low heat just until melted. Remove from heat and whisk in the sour cream. Pour the lemon white chocolate mixture into a large bowl. Chill the mixture until cool and thickened but not set, whisking occasionally, about 1 hour 45 minutes.
Beat the chilled whipping cream to stiff peaks. Fold into the lemon white chocolate mixture. Pour the mousse over the chocolate cake in the springform pan, covering the top and sides completely. Refrigerate cake overnight.
Run a small sharp knife around pan sides to loosen cake. Release pan sides. Place cake on platter. Garnish as desired.

Ponderosa Lemon & Sour Cream Tart
This is month four of the Improv Cooking Challenge which is hosted by Kristen of Frugal Antics of a Harried Homemaker. This month I was super excited to participate as we were tasked to use two of my favorite ingredients, lemon and sour cream. How the challenge works is, each month the participating bloggers are given two ingredients and asked to make any recipe of their choosing which contains those two ingredients. Well I have been looking forward to this month because not only are lemon & sour cream personal favorites but for almost a year I’ve been itching to make this tart from Mary’s blog, One Perfect Bite and this was the perfect opportunity. I have previously cooked from Mary’s blog with great success, when I made Stir-Fried Asparagus with Water Chestnuts, Ginger & Cashews so had high hopes for this recipe. This tart not only lived up to my expectations but it far exceeded them. This tart was absolutely delicious and both Eammon and I couldn’t stop eating it and the entire tart barely lasted a day. Okay I did share a couple of slices with some friends, who also loved it but Eammon and I managed to polish off the lion’s share.
Quite fortuitously this ponderous Ponderosa lemon magically appeared on my doorstep just a couple of days before I made my tart.
This gorgeous almost 2 1/2 pound Ponderosa lemon was a surprise gift from fellow bloggers Alyson & Ford. It was a great treat as I’ve never heard of nor tried this lemon before and not only did it have wonderful flavor but this baby gave me two full cups of juice!
Mary said in her post “The crust is as negotiable as your standards. It need not be homemade and a really good commercial crust or puff pastry will work just fine.” I debated on the crust for a while, undecided on whether to go with a graham cracker, shortbread or just a pie crust…until I remembered that I had some homemade pie crust dough in the freezer so easy-peasy I went that route.
This tart was super simple to make and oh-so delicious. The lemon & sour cream together were gorgeous and the tart was tangy, creamy and silky smooth, just pure perfection. This tart will be made again and again as this was a winning recipe.

Ponderosa Lemon & Sour Cream Tart (from here)
1 9-inch pie or tart crust
1/4 cup cornstarch
1 cup sugar
1 TBS finely grated lemon zest
1/2 cup lemon juice
3 egg yolks, beaten
1 cup milk
4 TBS butter
1 cup sour cream
Preheat oven to 400F. Line a tart pan with pastry and trim edges. Prick the bottom & sides with a fork. Bake until light golden brown, about 20 minutes. Remove from the oven and cool to room temperature.
In a saucier combine the cornstarch, sugar, lemon zest, lemon juice, egg yolks and milk. Cook on medium heat until thick, stirring constantly. Stir in the butter until fully combined and let the mixture cool to room temperature. Stir in sour cream and pour filling into the tart shell.
Refrigerate for at least 4 hours. The tart can be refrigerated for up to 24 hours. Top with fresh lemon zest, berries or whipped cream.
