After a month off because of some administrative and housekeeping changes in how things run at The Secret Recipe Club it’s nice to be back cooking and posting my Secret Recipe Club posts again. Each month participating Secret Recipe Club members are each assigned a blog from which they can make any recipe of their choosing and this month I was assigned Anne’s blog, Quick and Easy, Cheap and Healthy. As it works out, Anne has a “Certain Little Someone” who like Maisie has food allergies so right off the top I decided that this month I would make a delicious Maisie “safe” treat. After perusing the “Allergy-Friendly” section of Anne’s blog I decided to make her Simple Fudgy Bites.
Maisie and I made the super simple Fudgy Bites together but as we went along Anne’s recipe got changed a bit. We started with Anne’s recipe only switching out her sunflower butter for the peanut butter that I already had in the house. We mixed together all the ingredients and Maisie tasted the “fudge” and said that it was too smooth and needed something. We added in some ground walnuts, which I have been adding to a lot of recipes lately as I’ve been trying to get some extra healthy calories into all of Maisie’s food. After the addition of the walnuts Maisie said that it still needed more crunch so a quick look in the pantry and we decided Rice Krispies would be a great crunchy addition.
In the end, Anne’s Fudgy Bites with Maisie’s crunchy additions were a big hit with my girl!
Crunchy Fudgy Heart Bites (Adapted from here)
1/4 cup coconut oil1/4 cup cocoa
1/4 cup peanut butter
1/8 cup honey
1/2 tsp. vanilla extract
1 cup ground walnuts
1 1/2 cups Rice Krispies
In a food processor blend the coconut oil, cocoa, peanut butter, honey and vanilla extract until smooth. Pour the mixture into a large bowl and stir in the ground walnuts and Rice Krispies. Evenly scoop the mixture into a mini heart silicone muffin mold and refrigerate until set. Press the bottom of each muffin cup to release the Crunchy Fudgy Bites. Keep refrigerated.

ReplyDeleteThese look fantastic. But I have a question. I bought coconut oil because I read so many amazing things about it, but it is solid, is that what you use in these? I have this amazing almond butter with roasted flax seed from Trader Joes that I think would be so yummy in this! Love SRC!

ReplyDeleteI had your blog as my SRC assignment this month and I made these crunchy bites. They are really yummy! I noticed this recipe last year when you posted it and now finally got to make it. The only change I made was using Nutella instead of peanut butter. I really love this recipe, it's so simple. I think I will be making many many more variations on it. Thank you!
