Copycat “KFC” Original Recipe Fried Chicken

IMG_4849eUpdated:  Thank you everyone for clicking on my link (#5) in the list below and making this Copycat “KFC” Original Recipe Fried Chicken the ultimate winning recipe for this Crazy Cooking Challenge.  I have been participating in the Crazy Cooking Challenge since its inception eleven months ago and this is my first win so thank you, thank you, thank you!!

For this month’s Crazy Cooking Challenge the participating bloggers were challenged by our hostess Tina, of Moms Crazy Cooking to find the ultimate fried chicken recipe.  The way that the Crazy Cooking Challenge works is that each month there is a dish that our hostess Tina challenges the participating bloggers to make.  We all go out searching for what we think is the ultimate recipe for that dish and once we find it, we make it and then all on the same day we do our post featuring the recipe.  Here in the Cook Lisa Cook home Eammon is the big fried chicken lover and when he craves it, it’s KFC original recipe that he wants as to him that is the ultimate fried chicken.  Eammon is really good about only having fried chicken as a once in a while treat but now that I can make it at home thanks to a copycat recipe I found on CopyKat.com he may, just may request it a bit more often.  This chicken is really spot on to the original and if you serve it along with my Copycat “KFC” coleslaw, you’ll think that Colonel Sanders himself made dinner in your kitchen.

IMG_4846eCopycat “KFC” Original Recipe Fried Chicken (very slightly adapted from here)

In a large bowl mix the water and salt together.  Add the chicken so that it’s completely covered by the salt water and chill for least 1 hour.

Combine the salt, Ac’cent, onion powder, instant chicken bouillon, seasoned salt, fines herbs and black pepper in a spice grinder or blender and mix well. Place the herb mixture in a bowl and add the flour.  Mix the flour and seasonings well.

Remove chicken from water shake off the water but don’t dry the chicken.  Dip the chicken pieces into the flour mixture and coat well. Place the coated pieces of chicken on a wire cooling rack for 5 minutes.

In a large cast iron skillet melt enough Crisco to allow for a 1 inch depth of oil. Heat to 375F. Fry the chicken pieces turning every 5 minutes.  Be sure to cook the chicken until cooked through and then lift the chicken out of the hot oil and drain on paper towel lined wire cooling racks placed over a baking sheet. You can keep the chicken warm by placing the baking sheet/cooling rack with the chicken on it, into a 250F oven and then serve when all pieces are finished cooking.

Enjoy!

Mini Cheesecake Bites

IMG_5164eWho doesn’t just love cheesecake?  I know that it’s a favorite of mine and always has been so I was very excited that our Crazy Cooking Challenge hostess Tina, of Moms Crazy Cooking chose cheesecake for this month’s challenge. Sadly, this is the twelfth and final month of the Crazy Cooking Challenge.  It’s been fun participating for all these months and I’m looking forward to hopefully taking on a new cooking challenge in the coming months.

Growing up my Mom used to make wonderful little cookies and pastries for holidays and one of my favorites were her Mini Cheesecake Bites.  Though I have changed her recipe a bit over the years with my changing tastes and diet, these are still totally awesome and remind me very much of my Mom’s wonderful Mini Cheesecake Bites.

IMG_5144eI added the cream cheese mixture and they’re ready to bake.

IMG_5160eBaked, chilled, decorated and delicious!

Oh and my secret, I love these best straight from the freezer…total YUM!

IMG_5164e Mini Cheesecake Bites

Preheat oven to 375F. Lay the sliced almonds on a foil lined baking sheet and bake until they start to get toasted.  Remove from oven and allow to cool.  Add the toasted almonds to the bowl of a food processor and using the pulse action, process until they are finely ground.  Add the butter, 2 packets of Stevia and the cinnamon and process until well combined.

Line mini muffin tins with 36 mini muffin liners and add 1/2 teaspoon of the almond crust mixture to each.  Lightly press the mixture into the bottom of each muffin cup.  Bake for 5 minutes and then allow to cool.

While the crusts are baking and cooling add the cream cheese, egg, 6 packets of Stevia, vanilla bean paste & sour cream to the bowl of a stand mixer and blend until perfectly smooth.  Top each crust with the cream cheese mixture, filling the cup almost to the top.  Bake for 12-15 minutes until the mini cheesecakes are puffed and just starting to get golden on the top.  Remove from the oven and cool completely in the muffin tins. Once cool, remove the cheesecake bites from the pan and refrigerate or freeze.  To serve, top with a piece of candied cherry

Enjoy!

Skinny Blueberry Lemon Poppy Seed Muffins

IMG_3762eI seem to have an addiction, but it’s not what you might think.  It’s not to muffins, blueberries or even to my much adored lemon, it’s an addiction to my monthly recipe challenges, The Secret Recipe Club, The Improv Cooking Challenge and today’s Crazy Cooking Challenge.  Here’s why I say that I have an addiction… The way that the Crazy Cooking Challenge works is that each month there is a dish that our hostess Tina, of Moms Crazy Cooking challenges the participating bloggers to make.  We all go out searching non-celebrity blogs looking for what we think is the ultimate recipe for that dish and once we find it, we make it and then on the same day we do our post featuring the recipe and the blog where it was found.  Well this month we were challenged to find the ultimate blueberry muffin recipe.  Sounds easy enough as the internet is littered with food bloggers who have posted gorgeous blueberry muffin recipes to their blog so finding one is up to what really just suits your fancy.  My problem though is that I’m anaphylaxis allergic to blueberries so as a general rule, I don’t cook with them.  But…BUT… I have participated in the Crazy Cooking Challenge since the beginning and I just couldn’t miss a month, so I was going to make it work.

IMG_3680eMy friend Lisa (yes Lisa is a popular name) is doing Weight Watchers (and doing great at it I might add) and she recently had surgery so while she was recovering I brought her dinner one night.  For her meal I decided to make Slimmed Down Loaded Potato & Buffalo Chicken Casserole and I also wanted to bring her some WW friendly sweet treats.  I decided that her sweet treats would be my blueberry muffin challenge.  Up front I knew that I wasn’t going to use fresh or frozen blueberries but rather blueberry yogurt as I felt it would be safer for me.  I then set out searching the internet looking for my, well really Lisa’s, not me Lisa but friend Lisa’s, ultimate blueberry muffin recipe.  I knew that the recipe I would choose needed to include yogurt and because of Lisa’s diet I wanted to avoid recipes which included a lot of oil, butter or eggs.  In my search I decided to look for recipes which included yogurt (my blueberry addition) and applesauce in place of the fat and as far as the sugar, well that I knew I could easily substitute.  When I happened upon Ruth’s She-Fit.com and her Skinny Lemon Poppy Seed Muffins, well I knew that I had found my recipe.  I’ve heard that lemon and blueberry go fabulously together and with Ruth’s recipe all I had to do was swap out her lemon yogurt for my blueberry yogurt, easy-peasy!!  I held pretty true to Ruth’s recipe just switching out the yogurt flavor and I didn’t bother with the additional sprinkling of Splenda on top of the muffins.

IMG_3741eAs the muffins cooked the house smelled absolutely delicious and I do wish that I was able to sample one of the muffins but Maisie (because of her food allergies) and I (because of my blueberry allergy) had to just watch as Eammon was our taste tester.

IMG_3748eThe results, both Eammon and Lisa had thumbs up for this recipe and said that even though it’s skinny and healthy you’d never know it as these muffins were moist, tender, delicious and full of flavor.  Sounds like a winner to me!

IMG_3768eSkinny Blueberry Lemon Poppy Seed Muffins   (Adapted from here)

Preheat oven to 350F.  In a medium bowl mix the flour, baking powder, salt, baking soda and Splenda together.  Add the yogurt, lemon juice and applesauce, lemon peel and poppy seeds.  Stir to combine.  This will make a very thick batter.  In a separate bowl whip the egg whites to stiff peaks.  Add the egg whites to the flour mix and fold in.  Spray a muffin tin with non-stick cooking spray.  Using a large cookie scoop place approximately 1/4 cup of batter into each muffin mold.  Bake for approximately 20-25 minutes, until a tooth pick inserted in the muffin comes out clean.

Enjoy!

Mango Melon Banana & Chia Smoothie

IMG_4587E For this month’s Crazy Cooking Challenge the participating bloggers were challenged by our hostess Tina, of Moms Crazy Cooking to find the ultimate smoothie recipe.  The way that the Crazy Cooking Challenge works is that each month there is a dish that our hostess Tina challenges the participating bloggers to make.  We all go out searching non-celebrity blogs looking for what we think is the ultimate recipe for that dish and once we find it, we make it and then all on the same day we do our post featuring the recipe and the blog where it was found.  As I said, this month the challenge was to find the ultimate smoothie recipe and in our home Eammon is the big smoothie lover.  One of his favorite flavors is mango so when I came across Chaya’s Mango Melon Smoothie on her blog My Sweet and Savory I knew that I had found my recipe.  I only made two little additions to Chaya’s recipe in that I added 1/2 of a frozen banana which thickened up the smoothie a bit more and added another flavor and I also put in a tablespoon of chia seed gel just because I love adding it to our diet anyway that I can.  Eammon really loved his smoothie and I loved that I got some fruit into him.

IMG_4584EMango Melon Banana & Chia Smoothie

  • 1/4 mango, cut into chunks
  • 1 slice of melon, cut into chunks
  • 1/2 frozen banana
  • 1/2 teaspoon lemon juice
  • 1 TBS. chia seed gel
  • 1 cup low-fat vanilla yogurt

Place all ingredients into a blender and process until it’s the consistency you desire.

Enjoy!

Totally Outrageous Jalapeno Popper Grilled Cheese Sandwiches

IMG_3994eFor this month’s Crazy Cooking Challenge the participating bloggers were challenged by our hostess Tina, of Moms Crazy Cooking to find the ultimate grilled cheese sandwich and I’m telling you, I found it.  This is no ordinary grilled cheese sandwich, this is an over the top totally outrageous Jalapeno Popper Grilled Cheese Sandwich.  Let me explain the challenge a bit and then I’ll get to the sandwich. As I said, this month the challenge was to find the ultimate grilled cheese sandwich and I was excited because though I’m not a real sandwich lover, I have always adored grilled cheese sandwiches.  Honestly, school cafeteria grilled cheese and tomato soup was my absolute favorite when I was growing up.  Can’t say that you’d get me to eat it today but oh, the sweet delicious memories.

When I started searching blogs for grilled cheese inspiration my first thought was to do a more grown up version of my childhood favorite, maybe mini grilled cheese sandwich croutons floating on creamy roasted tomato soup but then decided that I needed to leave my childhood behind so I ventured out into a whole new world of grilled cheese sandwiches.  I found so many fabu grilled cheese sandwiches the choices were overwhelming.  I drooled over a gorgeous pepper jack cheese, bacon, avocado & apple grilled sandwich as well as a caprese sandwich with pesto, tomato & fresh mozzarella, but I make an open faced version of that so I thought I’d move on.  I was tempted to make a pizza grilled cheese on rosemary focaccia as well as a very unique and delicious sounding goat cheese, strawberry & watercress sandwich.  Then I happened upon Kevin’s Jalapeno Popper Grilled Cheese Sandwich and I knew I had found my sandwich because I am a jalapeno popper lover and I knew that by using his sandwich as inspiration I could create popper grilled cheese nirvana…and I did.

IMG_3961eI started with a mini jalapeno cheddar loaf which I had sliced thin.  I then spread the bread liberally with soft, room-temperature salted butter.

IMG_3962eI laid half the slices of bread, buttered side down, in a cool cast iron skillet.

IMG_3964eI added a generous layer of shredded Fiesta Blend Cheese.

IMG_3968eTopped the cheese with crispy bacon bits.

IMG_3972eBack after our final summer harvest of 8 million jalapenos, I stuffed some of them with cream cheese and froze them to be used later.  I pulled a few of them from the freezer and baked them from frozen at 500F for 20 minutes, until they were cooked through and delicious.  Thankfully I made more than I needed as I couldn’t resist eating a few and man were they delicious and really got me even more excited about the sandwiches I was making.  So after I popped a few of the hot poppers in my mouth I added the cooled down ones to the sandwiches.

IMG_3974eAfter the poppers another layer of cheese was essential.

IMG_3977eI then topped all the deliciousness off with the remaining slices of buttered bread.  I then started cooking the sandwiches over a medium low flame.

IMG_3978eAs the sandwiches were stuffed so full I decided to press them a bit and one of my pot lids worked perfectly.

IMG_3983eUsing a medium low flame so that all the cheese would perfectly melt, I cooked the first side until golden delicious and then carefully flipped to cook the other side.

This sandwich is not for the faint of heart and don’t even ask how you can turn down the heat on it because it ain’t gonna happen.  This is hot, cheesy, creamy, bacony, buttery, crispy over-the-top deliciousness.  And see all those crispy little bits of cheese in the pan and attached to the sandwiches?  Yep I ate every last piece.

IMG_3993eTotally Outrageous Jalapeno Popper Grilled Cheese Sandwich

  • thinly sliced jalapeno cheddar bread
  • salted butter, room temperature
  • Fiesta Blend Cheese
  • bacon bits
  • cream cheese filled jalapenos, roasted and cooled

Generously butter one side of each slice of bread and place half of the slices buttered side down in a cool cast iron skillet or heavy bottomed pan.  Add a generous amount of shredded cheese to each slice of bread.  Top the cheese with desired amount of bacon bits.  Add the roasted jalapenos and more cheese.  Add the remaining buttered slices of bread, buttered side up.  Turn on the heat to medium low and using a press or a pot lid, press the sandwiches a little.  Cook sandwiches until the bottom is golden brown and then carefully flip the sandwich and cook until the cheese is completely melted and the remaining side of bread is golden.  Allow to sit for a minute or two before slicing.

Enjoy!

Tomato Sauce with Onion & Butter

This sauce is absolute delicious simplicity and I could easily, and I almost did, eat the entire batch just out of a bowl and forget about even putting it on pasta.  This sauce didn’t need added cheese or spices…I’m telling you, this sauce is just AMAZING!

IMG_3632eIt’s Crazy Cooking Challenge time again and this month our hostess Tina of Moms Crazy Cooking challenged the participating bloggers to search non-celebrity blogs looking for the ultimate spaghetti with red sauce recipe.  Once we find what we think is the ultimate recipe we are to make and feature that recipe and the blog where we found it.  This month I *KNOW* that I found the ultimate spaghetti with red sauce recipe as I’ve read the panegyric accolades of Marcella Hazan's Tomato Sauce with Onion & Butter on so many blogs including More than Burnt Toast, My Italian Grandmother, Orangette, Shockingly Delicious and numerous others, well I just had to make her sauce and highlight it.

This recipe is crazy easy with only three ingredients and it’s essentially hands off simple as there’s no slicing, dicing, mincing or messing around with fancy ingredients.  I’m telling you too, if you’re a cook and you’re used to adding and subtracting ingredients and spicing to fit your tastes and trust me, I do it all the time, DON’T DO IT!  Make this recipe as written and you will be rewarded with a perfectly balanced creamy sauce where the taste of the tomato shines through and the butter gives a richness and gorgeous silky mouth feel.  Even better, this sauce freezes beautifully so make a big batch and freeze some for later use.

IMG_3635eMarcella Hazan's Tomato Sauce with Onion & Butter

  • One 28-ounce can whole San Marzano tomatoes
  • 5 tablespoons salted butter
  • 1 medium yellow onion, peeled and halved
  • Kosher salt

Combine the tomatoes, their juices, the butter and the onion halves in a medium sized, heavy bottomed saucepan. Add a pinch or two of salt. Place over medium heat and bring to a simmer. Cook uncovered at a very slow and steady simmer, adjusting the heat as necessary, for about 45 minutes or until droplets of fat float free from the tomato. Stir occasionally, mashing any large pieces of tomato with the back of a wooden spoon. Taste and salt as needed. Discard the onion. Serve over cooked pasta.

Enjoy!

Thai Chicken Noodle Soup

IMG_2855eIt’s Crazy Cooking Challenge time again!  Each month our hostess, Tina of Moms Crazy Cooking challenges the participating bloggers to search non-celebrity blogs looking for the ultimate recipe of the month.  We are then to make and feature that recipe and the blog where we found it.  This month the challenge was to find the ultimate chicken noodle soup recipe.  I almost passed on participating this month because my mind wasn’t thinking past traditional chicken noodle soup which isn’t a favorite for me as I generally strain the noodle out so to just enjoy the soup.  As a rule noodles in soup isn’t a favorite and now with Maisie’s food allergies, well I just wasn’t feeling the challenge.  Then I saw a recipe for Thai Chicken Noodle Soup on Lesa’s blog Edesia's Notebook and I knew I had found the ultimate chicken noodle soup recipe and I just had to make it.  Lesa’s soup looked delicious and simple to make and with a few little changes I knew that it could be made “Maisie safe,” delicious and perfect for us…and it was.  Maisie loved the soup as I made it and Eammon and I enjoyed it spiced up a bit with a squirt of Sriracha.  Mild or spiced up, this IS the ultimate chicken noodle soup.

IMG_2851eThai Chicken Noodle Soup (Adapted from here)

1 TBS peanut oil
2 carrots, julienned
4 cloves garlic, minced
1 TBS fresh grated ginger
1 tsp dried lemon grass powder
1/2 tsp turmeric
1/2 tsp red pepper powder
4 cups Cheaters Chicken Soup
3/4 cup lite coconut milk
1/2 cup creamy peanut butter
1 lb cooked chicken meat (I used the meat from when I made my “Rotisserie” Chicken and Cheaters Chicken Soup)
3 oz dry vermicelli rice noodles, prepared according to package directions
1 TBS sugar
2 TBS fresh chopped cilantro
2 TBS fish sauce
Salt and pepper to taste
Sriracha

In a medium stockpot, heat the oil over medium heat.  Add the carrots and cook until slightly softened.  Add the garlic and ginger and cook for 1 minute until it is fragrant.  Add the lemon grass powder, turmeric and red pepper powder and stir fry it for 1 minute.  Add the chicken broth, coconut milk, peanut butter, chicken meat and cooked noodles.  Bring to a low boil, cover, and simmer for 15 minutes.  Stir in the sugar, cilantro and fish sauce.  Season with salt and pepper.  Serve and add Sriracha to taste.

Double Chocolate Meyer Lemon Mousse Cake

IMG_3150eIt’s Crazy Cooking Challenge time again and this month our hostess Tina of Moms Crazy Cooking challenged the participating bloggers to search non-celebrity blogs looking for the ultimate chocolate cake recipe.  Once we find what we think is the ultimate recipe we are to make and feature that recipe and the blog where we found it.  I posted recently in my Dark Chocolate Dipped Candied Lemon Peel post that since making my Ponderosa Lemon & Sour Cream Tart I’ve been on a major lemon kick so when I saw Mimi’s Double Chocolate Tangerine Mousse Cake I knew immediately that I could tweak the recipe a bit switching out the tangerine for lemon and I could get my tangy lemon fix, still meet the requirements of making a chocolate cake while also making the ultimate chocolate cake.

IMG_3146eThis cake used both white and dark chocolate and that combined with tangy lemon, well it was exactly what I had been craving.  The chocolate cake is flourless so it’s dense and rich.  The mousse uses gelatin which is something that I haven’t done before but it seemed to help the mousse keep it’s shape but the mousse remained light, soft, rich and creamy.  Everyone who tried the cake thought it was beautiful and adored the rich flavors…and they were rich so small slices are a must.  If you adore dark chocolate and lemon like we do, I think you will find this to be a favorite in your home too.

IMG_3149eDouble Chocolate Meyer Lemon Mousse Cake  (Adapted from here)

Cake
1 cup butter
9 oz. dark chocolate chips
3/4 cup sugar
5 large eggs
1/2 cup ground toasted walnuts

Mousse
1 cup fresh Meyer lemon juice
1/3 cup lemon sugar syrup from making the Dark Chocolate Dipped Candied Lemon Peel
2 1/2 teaspoons unflavored gelatin
12 oz. white chocolate chips
6 TBS sour cream
2 cups chilled whipping cream

Garnish:
Dark Chocolate Dipped Candied Lemon Peel
walnut halves, toasted

For Cake:
Preheat oven to 325°F. Butter an 8-inch round cake pan with cutter and then dust with cocoa powder.  Melt the butter and chocolate chips in a microwave safe bowl, checking and stirring often until smooth.  Whisk in the sugar, eggs and ground nuts. Pour the batter into prepared pan. Bake the cake until a toothpick inserted into center comes out with very moist crumbs attached, about 45 minutes. Cool completely on rack (cake will fall and crack).  Once cool, using the pan’s cutter release the cake from the pan.

Lightly brush the sides of a 10-inch springform pan with vegetable oil. Set the cooled cake in center of pan (there will be space around cake that will be filled in with mousse). Refrigerate cake.

For Mousse:
Place 3 TBS of the lemon juice in a small bowl and sprinkle in the gelatin. Let stand for 10 minutes to allow the gelatin to soften.  Meanwhile, simmer the remaining lemon juice and lemon sugar syrup, stirring until combined, about 3 minutes.  Add the gelatin mixture to the lemon juice mixture and stir to dissolve.  Add 12 ounces white chocolate and whisk over low heat just until melted.  Remove from heat and whisk in the sour cream. Pour the lemon white chocolate mixture into a large bowl. Chill the mixture until cool and thickened but not set, whisking occasionally, about 1 hour 45 minutes.

Beat the chilled whipping cream to stiff peaks. Fold into the lemon white chocolate mixture. Pour the mousse over the chocolate cake in the springform pan, covering the top and sides completely. Refrigerate cake overnight.

Run a small sharp knife around pan sides to loosen cake. Release pan sides. Place cake on platter. Garnish as desired.

Enjoy!

Caramel Stuffed Apple Cider Cookies

Yep, I’ve gone out and done it again and I joined yet another monthly cooking challenge.  I now participate in The Secret Recipe Club, the Crazy Cooking Challenge, Cook Around the Globe and now my newest, The Improv Cooking Challenge.  This challenge is hosted by Sheryl over at Lady Behind the Curtain and how this challenge works is, each month two ingredients are assigned and you can make any recipe of your choice as long as it includes those two ingredients.  For this, the inaugural month of The Improv Cooking Challenge Sheryl has chosen two ingredients which are perfect for this time of year, apples and caramel.

IMG_1191eWhen I first saw the two required ingredients I knew immediately which recipe I would be making for the challenge as I’ve had Scrambled Hen Fruit's recipe for Caramel Stuffed Apple Cider Cookies saved in my “need to make” file since she first posted it almost a year ago.  It was another one of those recipes which called to me but I just never got around to making until this opportunity put it front and center.

I did have one difficulty in making this recipe and that was, for the life of me I couldn’t find the traditional square wrapped Kraft Caramels anywhere locally and I was just itching to make the cookies so I decided to make them with Kraft Caramel Bits.  Then wouldn’t you know it, two days after making the cookies I spotted the Kraft Caramels and because the cookies were so delicious with the Kraft Caramel Bits I just had to make them again with the traditional caramels.  Though we loved the cookies with the caramel bits I do think that the traditional caramels worked better in that I ended up with a larger gooey caramel center but I’ll tell you, the bits were a darn good substitute and provided nice gooey bits in the cookie so either way these cookies were a hit.

IMG_0955eFill a medium cookie scoop with the cookie batter.

IMG_1177ePress an unwrapped Kraft Caramel or

IMG_0956eSix-to-seven Kraft Caramel Bits into the center of the cookie dough.

IMG_0958ePinch the cookie dough to cover the caramel or bits.

IMG_1180eReady for the oven.

IMG_0960eGorgeous cookies hot from the oven.

I made a couple of changes to the cookie batter.  The first time that I made the cookies with the bits I mixed the batter up exactly as written on Scrambled Hen Fruit's blog and then I did my usual “quality control” taste testing of the batter.  The flavor was wonderful with the apple cider flavor shining through but then I thought caramel apple pie and decided to add some additional apple pie spices to give it more of that apple pie flavor.  The final batter was delicious and once baked everyone loved the flavors of the cookies.  When I made the cookies the second time with the traditional caramels I made one additional change, I substituted half of the granulated sugar with brown sugar just to bump up the caramel flavor a wee bit more.  I liked the batter and cookies best with the additional spices and the brown sugar and it would have been wonderful baked up on it’s own or with some toasted nuts or as I followed through and did, with the addition of the caramel.  Whether you choose to use the original recipe or one of my variations you’re looking at a fabulous tasting cookie.

Caramel Stuffed Apple Cider Cookies  (Adapted from here)

1 cup butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar
1/2 tsp salt
1 box (7.4 oz) Alpine Spiced Apple Cider Instant Original Drink mix -not sugar free- all 10 packets (I found this in my grocery store near the hot chocolate mixes.)
2 eggs
1 tsp vanilla bean paste or vanilla extract
1 tsp baking soda
1/2 tsp baking powder
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground allspice
1/4 tsp ground cardamom
3 cups all purpose flour
1 bag Kraft Caramel Bits (11 oz.) or Kraft Caramels (14 oz.)

Preheat oven to 325F.  Line baking sheets with either a Silpat or parchment paper.  In the bowl of a stand mixer add the butter, sugar, salt and the contents of all 10 packets of Alpine Spiced Apple Cider and blend until light and fluffy.  Add the eggs one at a time mixing until incorporated.  Add the vanilla and blend until mixed.  Add the baking soda, baking powder, cinnamon, nutmeg, allspice, cardamom and flour and mix until well blended.

Using a medium cookie scoop (1.5 TBS) fill the scoop level with the cookie dough.  While the cookie dough is still in the scoop, press either one unwrapped Kraft Caramel or 6-7 Kraft Caramel Bits into the center of the dough and then pinch the dough to cover the caramel.  Release the scoop of dough onto prepared cookie sheet placing about 2-inches apart.

Bake 12-14 minutes, or until very lightly browned around the edges. Please don't over-bake! Once the cookies are done, allow the cookies to partially cool on the Silpat or parchment. When cookies are cool enough to be firm but still slightly warm, carefully remove from the Silpat or twist off the parchment and allow to finish cooling upside down (either on the parchment or on a rack.) The cookies can cool completely on the Silpat and they release without any problems but If you forget about them and they cool too much and stick to your parchment, put them into the freezer for a few minutes and they'll pop right off.

Makes about 3 1/2 dozen, depending on how large you make your cookies, how much batter you’ve “taste tested” and how many caramels you’ve snitched from the bag before you begin.  Store in an airtight container.

Once the cookies have cooked completely, to enjoy the nice soft caramel center again either set your cookie over a nice hot cup of tea to warm up the caramel or microwave the cookie for approximately 15 seconds.

Enjoy!
