Egg-in-the-Hole

11201168_10153644611041663_228969263182478133_n Have you ever had a dish which you always enjoyed growing up but over the years it was forgotten?  Well that’s the deal with this easy, past loved recipe from our Secret Recipe Club assigned blog this month. We were perusing Laura’s blog, Mother Would Know, and saw her recipe for Egg-in-the-Hole and all the delicious memories returned.  It was a done deal as to what was going to be made this month, especially as Maisie had never tried Egg-in-the-Hole and no child should be deprived of it’s deliciousness!  Like Laura, we grew up having this made with cheap white bread but Laura suggests using the best bread you can find.  In our case, because of Maisie’s gluten allergy, we went with gluten free bread which worked perfectly and was a huge hit with little Miss. M. 

11987165_10153644611146663_2479034864772133001_n Laura is an attorney that loves to cook and though she’s never worked in a restaurant and doesn’t have a certificate or degree in cooking she has the best credentials of all.  As she says, “My credentials are the meals that I make, the fun I have in the kitchen, and the fact that even people who aren’t my kids call me when they have cooking quandaries,” sounds perfect to me!  Laura’s site is filled with plenty of great recipes for the home cook or any cook so check it out.

Heat a skillet and add a generous pat of butter.  Using a juice glass or biscuit cutter, cut out a round hole in the center of the slice of bread.  Place the slice of bread and the cut-out hole side by side in the pan and allow to slightly brown.  Turn the hole as necessary until golden and remove to a plate.  Once the first side of the bread slice is slightly golden, flip it over and add your egg to the hole.  It is fine if the egg white is completely contained or spills out over onto the bread, it’s all good!  Cook the egg in the bread until the white is almost completely set and then flip it over to continue cooking to desired consistency.  Remove to plate, add salt & pepper to taste and enjoy along with the toasty cut out bread circle.

Grilled Pizza Sandwich

10453313_10153221584711663_3750192831993381339_n It’s crazy that it’s already April, I swear that time is passing at breakneck speed.  Flowers in the garden are popping up and blooming, Maisie’s level 7 gymnastics season is over and as crazy as it sounds, she has only twenty days left in fifth grade and in her current school.  It feels like we just celebrated Christmas yet here we are planning for summer and some time off!!  And here it is again, Secret Recipe Club time.  This month our assignment was Nicole’s blog, Daily Dish Recipes.  We all had fun perusing Nicole’s blog and drooled over many of her recipes, including her garlic herb spiralizer fries, chicken scampi appetizer bites and her asparagus dip, but when Maisie saw Nicole’s grilled pizza sandwich she was all over it and the decision was done and made. 

10615432_10153221584486663_366078801547884549_nThe sandwich was super simple to make and as it uses everyday ingredients, we had everything in the house.  We of course adapted Nicole’s recipe to fit Maisie’s allergies and her tastes.  The wonderful thing about this sandwich is that it can be adapted any way you’d like.

10305062_10153221584631663_5946957916972381308_nThe sandwich was a huge hit with Maisie, who ate the entire thing in record time, because in her words, “it’s delicious and I’m starving after practice.”

Lightly butter one side of each slice of bread.  Lay one buttered side down in a cold pan and turn the pan on to medium low.  Immediately start building the sandwich with a layer of mozzarella, then add the pepperoni, a dash of garlic powder and top with the remaining slice of buttered bead, buttered side facing the ceiling.  Cover the pan and allow the sandwich to cook until the bottom is golden brown then flip the sandwich over, cover again and cook until the bottom is again golden.  Remove from pan, slice and serve with pizza sauce or spaghetti sauce.

Plantian Wraps

10464077_10152582883741663_7526245433071474159_n Maisie, because of her allergies has been gluten, egg and dairy free for a couple of years.  I have never been a huge bread lover so I haven’t missed not having bread in the house and it’s done us no harm not having all the baked goods either.  Then about a year ago I cut all gluten/grains from my diet so gluten-free breads and corn tortillas were no longer on my plate, though Maisie continues to eat them.  Not eating grains I have come to love plain burgers on a plate and chicken and various other “sandwich” salads served in lettuce wraps.  Then I saw a number of recipes for plantain tortillas/wraps/bread and they captured my attention.  Some of the recipes were very plain, plantains, water, salt & pepper and then others included the addition of coconut or tapioca flour.  Some of the recipes called for green plantains while others wanted partially ripe yellow ones.  In the end I put together my own version and we’ve been happily enjoying them, warm or cold, wrapping a whole variety of foods. 

10479576_10152582709121663_6354987559437153414_nWe enjoy the slight banana taste of the ripe plantain so yellow with a few dark spots works perfect for us.

 10511333_10152582708931663_4993243137204266106_nThis recipe is beyond simple as all the ingredients are added to a blender and then once smooth, dollops are spread into rounds on a parchment paper lined baking sheet and baked until golden.  Easy-peasy!!

10458112_10152582843906663_7692423888870189819_nOh and don’t judge but my favorite filling for these Plantain Wraps is a slightly rare, cold, broiled chicken liver…Even if you hate liver, give these Plantain Wraps a try, they’re really quite amazing.

Preheat oven to 400F.  Line three baking sheets with parchment paper and set aside.  Cut each plantain into a few pieces and then score and pry off the peel.   Place the peeled plantain pieces and all the other ingredients into a blender and process until smooth and about the consistency of yogurt.  Add additional water if necessary.  Using a large cookie scoop (approx 3 TBS) portion out the plantain mixture for 6 wraps per sheet (will only have 3-5 on the third baking sheet) and then using a small offset spatula smooth the batter for each wrap to an approximate 5-inch round.  Bake for 10 minutes and then rotate the pans to different shelves and turn each pan for even cooking, and bake for approximately 5 minutes longer until the wraps are golden and puffed.  Remove from the oven and allow the wraps to cool on the baking sheets.  Then easily peel the wraps off the parchment paper and enjoy.  Store the wraps in either a Ziplock bag or sealed container in the refrigerator.  There is no need to layer parchment between the wraps, they can just be stacked.

A-Maisie-ingly Wonderful Gluten, Egg & Dairy Free Bread

IMG_6938eMy A-Maisie-ing Maisie adores bread…well at least she used to until we found out that she’s allergic to wheat, egg & dairy and she had to give up her favorite, Nutella on bread…my poor girl!  I quickly found dark chocolate peanut butter which though not Nutella, was close enough to satisfy her.  In my attempt to give Maisie the bread she so dearly missed, we tried every.single.bread that I could find which was free of wheat, egg & dairy.  I swear though, there’s a racket going with gluten-free bread makers as each loaf seemed to run close to $10 and Maisie hated them all!  After spending a small fortune and having all my “bread” thrown in the rubbish bin we sort of gave up and Maisie resigned herself to not being able to eat bread and life went on.  But just recently I saw a recipe named Finally…Gluten Free Bread That Doesn’t Suck on One Good Thing by Jillie and honestly the name drew mw in and I just couldn’t pass it by without giving it a try.  After reading through the recipe I knew that I could adapt it for Maisie’s allergies as Jullie’s original recipe contained egg and milk powder.

 IMG_6942eMaisie’s excited, just waiting to bite into her bread.  Honestly in this picture she knows what she’s getting because I have made six loaves of this bread already because Maisie absolutely LOVES it!!  This bread is crazy delicious and though I’ve tweaked the recipe each time I’ve made it, from the first batch it was wonderful.  The first time I made it, I gave a slice to Eammon and he thought that I made a loaf of regular yeasty bread and wanted more, but this bread was for Maisie so Eammon was just out-of-luck. 

  IMG_6948eMaisie was so thrilled with the first two loaves that she finished them in three days!!  I swear, all she wanted to eat was bread with her Maisie “safe” butter.  It got to the point where I was using the bread as a treat, telling her that she could have some after she finished her meal and she opted for the bread in lieu of dessert!!  I’ve tried a taste of each of the three batches I’ve made and if I didn’t know, I wouldn’t know that this bread was gluten, egg and dairy free as it has that wonderful smell of yeast, the flour mixture doesn’t taste like you’re eating rice, the texture is tender and moist and there’s a nice chew to the bread.  I have to say, gluten-filled or gluten-free, this is some of the best sandwich bread I’ve ever eaten. 

IMG_6923eThe dough in the pans before it rises.  I honestly wasn’t too hopeful for a real bread the first time that I made this but now I know that from this step, it won’t be long before my home will smell of fresh baked bread and Maisie will be begging for a slice or two.

IMG_6931eIn the original recipe that Jillie posted, her bread rose about an inch above her pans but as I didn’t use eggs or milk, I found that a rise to just above the lip of the pan is about as far as I can take it before the dough will start to spill over the edge of the pan.  I keep a Silpat lined baking sheet on the rack below the bread pans so that if any dough does spill over, it doesn’t end up burning on the base of my oven.

IMG_6932eEven though my dough rose to just above the lip of the pan, once I started baking the bread I did have a little spill over.  I’m sure that if I had egg in the bread it would hold together a bit better, allowing for a higher rise.

IMG_6936A little spill over or not, each time that I’ve made this, I’ve ended up with two gorgeous and delicious loaves of bread. 

IMG_6939eLet the bread cool completely before slicing.  Look at the gorgeous texture and when I press in gently with my thumb, it springs right back up (see next picture) so no dry as the dessert or super dense bread like most of the ones Maisie ended up trashing.

Spray into two 8-inch bread pans with cooking spray and set aside.

Add the yeast and sugar to the 5 TBS. of warm water and stir until mixed. Set aside to activate while you mix the rest of the ingredients.

In a medium sized bowl mix together the brown rice flour, tapioca flour, cornstarch, potato flour, golden flax seed, xanthan gum, egg replacer and salt.  Set aside.

In the bowl of a stand mixer fitted with the paddle attachment, add the margarine, apple cider vinegar, honey and 1/2 cup of the warm water.  Mix together for about 30 seconds.  The butter will be chunky, that’s okay.

Add half the dry ingredients to the wet mixture in the mixer and mix just until blended.  Then add the remaining dry ingredients and mix for another 30 seconds, until blended.

With the mixer on low speed, slowly add the yeast mixture and the remaining 1 1/2 cups of warm water, then turn the mixer to medium-high speed and beat for 4 minutes.  Half way through stop the mixer and scrape down the sides of the bowl and make sure that nothing is stuck to the bowl. 

After 4 minutes the bread dough should resemble a thick cake batter.

Spoon the dough into the greased bread pans. If desired, dip your fingers in water and smooth the top of the dough. Set aside in a warm place to rise for approximately about 60 - 90 minutes.  (I found that 90 minutes in my 100F proofing oven worked perfectly)  While the dough rises, preheat oven to 375F.

When the dough has risen to just above the top of the pans, place the pans in your preheated oven on the middle rack and bake for 45 to 55 minutes or until the top is golden brown and a skewer poked into the center of the bread comes out clean.  Remove the bread from the oven and let cool in pans for 10 minutes. Then remove the loaves from pans and place on a rack to cool.

After allowing the bread to cool COMPLETELY (this is important! Don’t rush it and cut into it while it’s still warm or you will flatten it.)  VERY carefully start cutting slices. Also very important, let your bread knife do the cutting for you! You provide the “sawing” action, but let the knife blade do the work. Don’t press down, just keep “sawing” across the top until you get all the way to the bottom of the loaf and hit the cutting board. The bread slices will keep their shape much better this way.  I have also found that slicing the bread top crust down makes for easier slicing.  Slice the entire loaf, put into a Ziploc bag and freeze.  When ready to serve, from frozen, toast or microwave the bread (40 seconds in my microwave) brings the bread back to that fresh baked texture.

Baked Reuben Casserole

IMG_5912eI don’t remember where I first saw a recipe for this casserole but as soon as I did, I knew that I had to make it for Eammon as he adores Reuben sandwiches so I thought this would be perfect for him.  I know that once I decided to make this Reuben Casserole I searched the internet and found numerous variations and put together this recipe.

IMG_5895eThe casserole was simple to put together and Eammon (and my Dad who also enjoyed some) said that it tasted just like a delicious Reuben sandwich.  I have never tried a Reuben sandwich as I don’t care for rye bread, corned beef, sauerkraut or Thousand Island salad dressing so I’m totally taking their word on how this casserole tasted but with the amount that they both ate…well it had to be good.

Preheat oven to 350F.  Coat an 8x8-inch casserole dish with cooking spray.  Cut three pieces of the bread into 1-inch cubes and line the bottom of the dish with them.  Place half of the corned beef over the cubed bread and lightly press down the layers as you go.  Spread the sauerkraut evenly over the corned beef and then top with half of the shredded cheese.  Evenly sprinkle the cheese with the caraway seeds.  Evenly spread the remaining corned beef over the previous layers and finish with the remaining cheese.  

In a small bowl whisk the eggs, milk, cream, Thousand Island dressing, mustard & ground pepper until fully mixed.  Pour the egg mixture over the casserole and allow it to sit and sink in for 10 minutes. 

Finely dice the remaining two slices of bread and spread it over the casserole.  Bake for 60 minutes, until the top is golden brown and the casserole is set in the middle.  Check the casserole after 45 minutes and if the bread crumbs are beginning to get too dark, lightly tent the casserole with aluminum foil during the last 15 minutes of cooking.  Once the casserole is fully cooked, remove from the oven and allow it to rest for 15 minutes before cutting and serving.

Loaded Buffalo Chicken Texas Toast

IMG_6620eHere in the Cook Lisa Cook home, Eammon and I are huge fans of buffalo-ed foods.  One of our favorite meals is my Loaded Potato & Buffalo Chicken Casserole and we can’t resist Baked Buffalo Chicken Wings, so when I saw a recipe on Mercedes’ The Kitchen Life of a Navy Wife for Buffalo Chicken Texas Toast, well I was on it faster than you can say aye, aye Captain!

IMG_6611e I made a few changes to Mercedes’ recipe.  First, I didn’t have wing sauce so I made my own and then I completely mixed her Gorgonzola cheese as we don’t care for stinky or blue veined cheeses.  I also decided to add bacon because…well, I just thought it would make the recipe and for us, and it did.  These Loaded Buffalo Chicken Texas Toasts were wonderful and I will say,quite filling. 

IMG_6597eI’m not a huge bread person but I loved the thick, buttery, garlic Texas Toast and it held up well to the creamy ranch dressing and the spicy chicken and sauce.  

IMG_6613eI loved that I could make all the components of the dish and have them ready so that when it was time to serve, it only took a minute or two to assemble, heat it up and have a wonderful little meal or a delicious appetizer, and these will be especially easy and good for the guys on game day.

IMG_6616eLoaded Buffalo Chicken Texas Toast

Bake Texas Toast according to package directions, allowing them to get a bit toasted.  In a microwave safe bowl combine the hot sauce and butter and heat, stirring occasionally, until the butter is melted and incorporated into the sauce.  Set the sauce aside.

In a separate bowl mix together the cheese, bacon bits and green onions and set aside.

Heat a large cast iron skillet over medium-high heat and add the oil. Toss chicken with salt, pepper and garlic powder and add to the skillet.  Cook quickly until the chicken is just cooked through.  Don’t over cook as you want the chicken to remain moist.  Add 1/2 cup of the buffalo wing sauce and stir to toss and coat the chicken.  Remove garlic bread from oven and switch oven to broil. Brush each slice first with ranch dressing, then with hot sauce mixture.  Next add the chicken and top with the cheese mixture.  Broil toast 2-4 minutes, watching closely and rotating the pan as needed. Once the cheese has melted, remove from the broiler and top with another drizzle of the hot sauce mixture.

Note:  This recipe is spicy and on my Loaded Potato & Buffalo Chicken Casserole I get a lot of questions from people saying that they don’t do hot foods and what could they substitute for the hot sauce or how to tone down the spiciness.  So to address that question on this recipe, here are some suggestions if you don’t care for spicy foods.  Feel free to use your favorite BBQ sauce in place of the hot sauce.  Another suggestion is to increase the ratio of butter to hot sauce so to cool it a bit, On my casserole recipe people have had good luck using Italian dressing as the seasoning on the chicken and still using the ranch sauce as well.  Still others have mixed a little bit of hot sauce in with a larger amount of ranch dressing just to give a little flavor of Buffalo chicken.  Use this basic recipe and tailor it to you tastes and enjoy.

Sweet Italian Sausage & Roasted Chestnut Stuffed Mushrooms PLUS a Giveaway from Mrs. Cubbison’s **Giveaway CLOSED**

I recently received a sample package from Mrs. Cubbison’s and you have the opportunity to receive an even better gift package!  Check out what I made with their Mrs. Cubbison’s Classic Dressing and then there’s info on the giveaway at the bottom of the post.

IMG_6085eI was asked recently to try a Mrs. Cubbison’s product and use it in an original recipe.  They sent a sample package which included a box of Mrs. Cubbison’s Classic Dressing.  Well with Thanksgiving coming up I figured that everyone would have a one track mind thinking and stressing about whether to make stuffing inside their turkey or dressing in a side casserole.  Honestly I don’t need the stress and just wanted something a bit different, so what better than a nice little appetizer which includes that holiday favorite, stuffing. 

hero_turkeyWhat’s nice about this recipe is that it’s really versatile, so if you don’t want to make stuffed mushrooms, just follow the recipe and use it to either stuff your bird or put it in a casserole dish and serve it as dressing.  No matter which way you go, this is one delicious stuffing/dressing.

STUFF 12-12 OZ CLASSIC DRESSING CARTON 23111698_FINAL_OLWhen I opened the Mrs. Cubbison’s Classic Dressing, it smelled like Thanksgiving with all the herbs and spices already there, I’d bet that this dressing would be delicious on its own but I’m the type of girl who has to always add to a recipe and switch it around, but I found out that there are some who don’t add a thing, other than liquid, to store-bought stuffing mix.  Who knew?    

By the way, do you call it stuffing or dressing?  Well, Mrs. Cubbison's was interested in all these questions, along with some other interesting holiday facts like, do you use store-bought stuffing mix and what do you add to your stuffing?  To find all the answers Mrs. Cubbison’s conducted a Thanksgiving Across America Survey.  Did you know that the number one item handed down from generation to generation is the stuffing/dressing recipe?  It’s a fact that I didn’t know so I guess you learn something new everyday.  I wasn’t part of the survey but I’m going to give you a little insight into the Cook Lisa Cook home as I’m going to answer all the questions here and now.  Click on the Thanksgiving Across America Survey link to see how my answers compared and how your answers compare as well, it’s quite interesting based on gender and where we live.  Our demographics in the Cook Lisa Cook home are, I’m a New Englander, married to a Londoner, our daughter is from China and we live in Georgia. 

Here are my answers to all the survey questions:

A:  Thanksgiving as it’s all about family and food.

A:  Family and health.

Q:  Who did you spend Thanksgiving with last year? 
A:  Last year it was just me, Eammon, Maisie and my parents.  We had been invited to a friend’s home but I was sick, trying to get over a major case of pneumonia, we just the week prior to Thanksgiving found out that Maisie was allergic to wheat, egg & dairy and I was still trying to find my way with food for her and my Mom wasn’t feeling well so it was just our Intimate group of five.

Q:  Who/where do you go for help with the menu? 
A:  The internet, I love finding new and interesting recipes online but year to year I tend to make our traditional favorites.

Q:  Who were the cook(s) at the Thanksgiving meal you attended last year? 
A:  I did all of the cooking and my Mom helped with a lot of the prep-work. 

Q:  What is the farthest someone has travelled to attend your Thanksgiving dinner? 
A:  My parents travel over 800 miles (round trip) each year to enjoy Thanksgiving with us.

Q:  What are favorite items for the Thanksgiving meal? 
A:  1st: my Spice Rubbed Turkey with Cognac Gravy, 2nd: stuffing,  3rd: my totally awesome Corn Soufflé, all must haves for it to feel, taste & smell like Thanksgiving.

Q:  What are your favorite items for Thanksgiving leftovers?    
A:  A flaky, buttery croissant filled with sliced turkey, stuffing, sweet potato and cranberry sauce and for Eammon, turkey dump soup which includes turkey, all the leftovers including the veggies, stuffing, Corn Soufflé and even the remaining gravy.  Everything goes in his soup but the sweet potatoes and cranberry sauce.

Q:  Which items have been handed down from previous generations at your Thanksgiving?  
A:  Though my Mom is an awesome cook and made fabulous Thanksgiving meals when I was growing up, I don’t use any of her Thanksgiving recipes.  But check out her “Grandma’s Teriyaki Steak” recipe as it’s one of Maisie’s favorite meals.

Q:  Do you make your stuffing from scratch or do you use store-bought stuffing mix? 
A:  I am a store-bought stuffing mix kind of gal.  I guess I get that from my Mom as she’s the same.

Q:  Which term do you use:  stuffing, dressing, both or something else?
A:  I call it stuffing if I stuff it into something but call it dressing if I make it in a casserole dish.

Q:  How do you cook your stuffing?
A:  I cook it on the stovetop and finish it in the oven in a casserole dish.

Q:  What ingredients do you like to add to the stuffing when you cook it? 
A:  Onions top my list and are always included.  Roasted chestnuts, mushrooms and carrots are up there too as favorite add-ins.  Honestly it just depends on my mood, who’s going to be eating it, and the direction I want to go. 

Q:  Did you do anything special last year to prepare the turkey? 
A:  For the second year in a row I made my Spice Rubbed Turkey with Cognac Gravy, totally awesome, just an all around winning recipe. (check it out!)

Q:  Have you ever had to consider special diets at your Thanksgiving meal? 
A:  Oh yes.  With Maisie’s allergies to wheat, egg & dairy, my Mom’s inability to eat dairy, my Dad’s avoidance of offal, mushrooms, asparagus and sugar, Eammon’s dislike of fruit mixed in with anything savory and me trying to not eat too many processed foods, carbs or sugar, preparing the meal is…well interesting.  I try to go simple with my recipes and we don’t all eat every item made and served but we all have our favorites which have to be made or it just doesn’t feel like Thanksgiving.  Other than Maisie because of her allergies, we all cheat a bit with what we should and should not have but hey, it’s a holiday and only once a year so we indulge a little and enjoy!

Q:  What special diets have you had to consider? 
A:  Gluten-free, lactose-free, diabetic, low carb & picky eaters.

Q:  When do you start shopping for the Thanksgiving meal? 
A:  I would say about a week ahead.  Shelf items I pick up before that if I happen to see them on a good deal.

Q:  Where do you shop for the Thanksgiving meal? 
A:  Just like my usual shopping, most items come from the International/Asian Farmer’s Market.

Q:  How much time is spent in the kitchen preparing the Thanksgiving meal? 
A:  I usually start a couple of days ahead, so to spread out the work and have everything prepped and ready to go.

Q:  Did guests bring items to the holiday dinner last year or did the host do the whole meal? 
A:  As it was just five of us, me, Eammon, Maisie and my parents, I did the whole meal with my Mom’s help.

Q:  Have you ever snuck in the kitchen and sampled some of the food when no one was looking? 
A:  Heck yea!!  And I don’t believe those people who say they haven’t…I mean with all the delicious smells, who can resist?  Resistance is futile, resistance is futile…

Q:  What is your biggest worry on Thanksgiving?
A:  I don’t really worry or stress as it’s just close family.  I just do my best to get everything out on the table, hot, juicy and delicious and thus far, no complaints…and if I hear any complaints, they’re going to be doing the dishes!!

Q:  Other than the meal, what are your family’s favorite traditions or activities on Thanksgiving.
A:  We’re a lazy bunch, after eating it’s just a relaxing day, maybe a walk around the neighborhood but most likely, a good nap!

IMG_6081eBaby portabella mushrooms stuffed and ready for the oven.  These can be prepared to this point a couple of days ahead then covered and kept in the fridge.  When you’re ready to bake them it’s just a quick 20 minutes in the oven and hot, delicious appetizers are ready to serve.

These mushroom caps were a hit with everyone who tried them and the Mrs. Cubbison’s Classic Dressing had perfect seasonings so no additional herbs, spices, salt or pepper were needed.  I liked that the bread crumbs held up well and didn’t dissolve into mush.  I now look forward to using Mrs. Cubbison’s products again.

 IMG_6091eSweet Italian Sausage & Roasted Chestnut Stuffed Mushrooms

Preheat oven to 400F.  Prepare a baking sheet by covering it with aluminum foil and coating lightly with cooking spray.  Wash and dry the mushrooms.  Remove the stems and place the mushroom caps open side up on the prepared baking sheet.  Finely mince the stems and set aside.  In a large cast iron skillet heat the oil.  Add the onions and cook until they just begin to caramelize.  Add the minced mushroom stems and cook until they are soft.  Add the garlic and cook for an additional minute until the garlic is fragrant.  Add the sausage and breaking it up and mixing it in with the onion mixture, cook until lightly browned and cooked through.  Add the diced chestnuts and the Mrs. Cubbison’s Classic Dressing.  Stir well to mix.  Add the water and toss everything well to get all the dressing moist.  Cover the pan tightly and remove from the heat.  Allow the pan to sit covered and undisturbed for 10 minutes so that all the moisture steams through the dressing mix. 

Fluff up the cooked dressing and using a tablespoon, fill the mushroom caps nice and high with the filling.  Place the filled mushrooms on the prepared baking pan.

Bake for 20 minutes until the mushrooms are tender and the top of the filling is golden brown.
