Belizean Stew Chicken ~ Instant Pot

We have visited Belize a number of times, but always quickly as one of many port stops on a cruise. Because of the quick visits, sadly we have rarely enjoyed the cuisine of the island.   On one of our visits though we did explore and had the opportunity to enjoy some traditional Belizean food, including the Stew Chicken.  Well, when we love something, and trust me, we adored the Stew Chicken, we have to come home and try and re-create it, and do it in our Instant Pot.  When in Belize we enjoyed the Stew Chicken with rice & beans with a side of potato salad.  While we adored the sides with the chicken,  they are a bit too carb heavy for our current diet, so we paired this almost dead-on-knock-off Belizean Stew Chicken with our favorite Toasted Cauli-rice.   This Stew Chicken with the Toasted Cauli-rice gave us all the deliciousness of being in Belize while helping to keep us fitting into our bathing suits for the next time we visit.

Belizean Stew Chicken ~ Instant Pot

In a large bowl, mix together the Recado rojo, vinegar, coconut aminos, garlic, cumin, oregano, thyme, black pepper and Medjool date.  Stir to mix well.  Add the chicken pieces and mix to coat all the chicken completly with the sauce.  Cover and refrigerate for at least an hour or over night.  When ready to make, press the saute button and add the coconut oil to the liner of the Instant Pot.  Once the oil is hot, add the onions and saute, stirring occasionally, until they are golden.  Remove the onions from the pot and add the chicken pieces.  Place the pieces so that they are skin side up.  Add the onions back on top of the chicken along with any sauce remaining in the bowl.  Add the chicken stock and bay leaves.  Turn off saute by pressing the Keep Warm/Cancel button.  Secure the lid and set the steam release valve to closed.  Press either the Poultry button or use the manuel button, setting time for 15 minutes.  Once the 15 minute cook time is finished, quick release the steam by opening the steam valve.  Carefully remove the chicken pieces and place them skin side up on a foil lined baking sheet.  Place the chicken under a hot broiler to crisp and toast the skin.  Serve hot, with sauce ladled on top.  Enjoy with Toasted Cauli-rice or more traditionally, with rice & beans and potato salad.

Enjoy!!

Coconut Mango Salsa Verde Chicken ~ Instant Pot

We have a favorite Salsa Verde Chicken recipe which we've enjoyed many, many times, but it was time to change it up a bit and add a twist, so enter Coconut Mango Salsa Verde Chicken.  The heat of the peppers and the creaminess of the coconut milk along with the sweetness of the mango are perfection. Add in that it cooks in the Instant Pot in just mere minutes, makes this a winning dish all around.  The dish has a good heat kick to it, but it mellows after the first day.  This reheats beautifully and don't be suprised if everyone is licking their plate to get the last bits of the sauce...it's that crazy good!

Coconut Mango Salsa Verde Chicken ~  Instant Pot

  • 10-12 bone-in chicken thighs with skin (or chicken pieces of your choice)
  • 8 oz. coconut milk
  • 1 1/2 tsp. cumin seed
  • 1 1/2 tsp. ground cumin
  • juice of 1 lime
  • 3/4 tsp. dark chili powder
  • 3/4 tsp. sweet paprika
  • 3/4 tsp. sea salt
  • 1 med. onion, quartered
  • 8 oz. poblanos, roughly chopped, seeds and stems discarded
  • 8 oz. Cubanelle peppers, roughly chopped, seeds and stems discarded
  • 2 large jalapenos, roughly chopped, seeds and stems discarded
  • 8 oz. tomatillos, quartered
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
  • 2 med. red bell peppers, cut in long strips about 1/4-inch thick, seeds and stem discarded
  • 2 med. poblanos, peppers, cut in long strips about 1/4-inch thick, seeds and stem discarded
  • 8 oz. tomatillos, medium dice
  • 2 mangoes, peeled and large dice
  • 1/2 bunch fresh cilantro, roughly chopped
Place the coconut milk in the liner of the Instant Pot and add the cumin seed, ground cumin, lime juice, chili powder, paprika & salt.  Stir to combine.  Add the chicken thighs, layering in, skin side up. Top the chicken with the quartered onion, roughly chopped poblanos, roughly chopped Cubanelle peppers, jalapenos and the quartered tomatillos.  Secure the lid and close the steam vent.  Use either the "Poultry" button or set manually for 15 minutes.  Once the 15 end, quick releast the steam.
Gently remove the chicken pieces and place them skin side up on a foil lined baking sheet.  Broil the chicken 5-10 minutes to toast and crisp the skin.
While the chicken is in the broiler, using an immersion blender, carefully blend the sauce left in the Instant Pot.  Once smooth, add the sliced red bell peppers, sliced poblanos & diced tomatillos. Secure the lid and close the steam valve.  Set manual timer for 2 minutes, high pressure.  When the 2 minutes end, quick release the steam.  Open lid and add the diced mango & cilantro and stir to combine. Check seasonings and add salt if needed.  Ladle the sauce over the chicken and serve.
Enjoy!
Yucatan Green Chile Saute ~ Instant Pot
Chile is often on the menu at our home and this Yucatan Green Chili Saute from Melissa Joulwan's book Well Fed Weekends, has become a favorite!  We love that this is a quick onepot meal which includes protein and vegetables.  Even better, it's delicious freshly made or as leftovers.  Of course in our home, no good recipe can be left as found so we tweaked this one to our taste by mostly amping up the heat.  We also made this in the Instant Pot instead of on the stovetop.  Both are easy but we're in love with our Instant Pot and use is whenever possible. Great thing about chili, it's easily tweaked to your individual taste.  Check out both Melissa's original recipe and our adaption and make one or both, you won't be disappointed.
Cumin - lime sauce  (have all ingredients at room temperature)
  • 1 egg yolk
  • 3 TBS. fresh lime juice
  • 1/4 tsp. Himalayan salt
  • 1/3 cup avacado oil or light tasting olive oil
  • 2 large garlic cloves, peeled
  • 1 tsp. ground cumin
  • 1 bunch fresh cilantro leaves
  • 1-2 small fresh jalapenos, (seeds and ribs removed if you want less heat)
Set the Instant Pot to saute and add the olive oil, heat until warmed.  Add the onion and saute until golden.  Add the garlic and saute until fragrant.  Add the ground beef, salt, cumin, paprkika, pepper and oregano and brown the meat, breaking it up as it cooks.  Once browned, add the tomato paste and red wine, mix well.  Add the raisins, cauliflower and chilies.  Mix well. Lock the lid on the Instant Pot, close valve and set high pressure for 10 minutes.  Use natural pressure release.
While the chili is cooking, prepare the cumin-lime sauce.
Place all the ingredients in a flask, and using an immersion blender, blend until thick and creamy.  Or, place all ingredients in a blender and blend till smooth and thick.
Serve the chili with a drizzle of the cumin-lime sauce and sprinke on some pumpkin seeds for a little crunch.
Enjoy~~
Doro Wat ~ Spicy Ethiopian Chicken Stew
18184_10153318473946663_359599586458061225_n We adore spicy food here in the Cook Lisa Cook house so when we spied this recipe for Doro Wat on Nom Nom Paleo’s site, we just knew it had to be made.
20804_10153318474276663_3498061256689766102_nThe original recipe called for a tablespoon of the spice berbere but Michelle said that they used 1½ tablespoons because they’re masochists, so we figured what the heck, if they can do it, we’ll be masochists too, so we went for the larger amount.
1908179_10153318474171663_6826604838516639440_nThe berbere gave the dish a wonderful flavor and it was hot…but not spitting fire hot so it was perfect for us…well not Maisie.
10985454_10153318474351663_3419171284036343824_nThe chicken was absolutely delicious, the flavors were just amazing.  The eggs in the dish were…well…interesting but we felt they just weren’t quite needed.  Maybe if the eggs had been simmered in the sauce, I don’t know.  I know that we’ll make and enjoy this dish again but probably sans eggs.
11193380_10153318474026663_1215055567906255250_nDoro Wat ~ Spicy Ethiopian Chicken Stew (adapted from here)
  • 3 pounds chicken drumsticks (about 10 drumsticks), skin on or off
  • Kosher salt
  • ¼ cup ghee
  • 2 medium onions, thinly sliced
  • 6 garlic cloves, finely minced
  • 1 (1-inch) piece fresh ginger, peeled and finely grated (about 1 TBS.)
  • 1 1/2 TBS. berbere seasoning (more or less to taste)
  • 1/4 tsp. ground cardamom
  • 1/4 tsp. freshly ground black pepper
  • 2 cups chicken stock
  • 4 hard-boiled eggs, quartered into wedges
  • Juice from 1 lime (optional)
Thoroughly season the drumsticks with salt, and set aside. Heat the ghee in a large Dutch oven over medium heat. Add the sliced onions, and let them cook undisturbed for 1 to 2 minutes. Season liberally with salt, and gently turn over the pile of onions every 3 to 4 minutes to ensure even cooking. Once the onions have softened and significantly reduced in volume, about 15 minutes, turn the heat to medium-low.  Continue cooking, turning over the onion pile every 10 minutes or so, for 30 to 40 minutes or until golden brown and nicely caramelized, tender and sweet.
Stir the garlic and ginger into the caramelized onions, and cook until fragrant, about 30 seconds.  Add the berbere, cardamom, and black pepper. Next, pour in the chicken stock and stir to mix well. Nestle the drumsticks into the liquid, and bring the contents of the pot to a low simmer. Cover and cook, turning the drumsticks occasionally, about 45 minutes or until the meat is tender and cooked through.
Once the chicken’s done, remove the lid of the Dutch oven and turn the heat up to medium-high.  Cook for 5 to 10 minutes until the liquid is reduced by approximately one-third.  Add lime juice, do it now. The citrusy zing adds a nice, zesty brightness to this long-simmered dish. Transfer the chicken drumsticks to a serving platter, garnish with the egg wedges, and ladle the spicy sauce on top.
Enjoy!
Chile Relleno Casserole
10408544_10153026166381663_7536828326446344676_nWe adore Chile Rellenos but they are an absolute pain in the bottom to stuff and fry,  so we enjoy them as a once in a while treat when we happen to go to a Mexican restaurant…which trust me, isn’t all that often.
10168010_10153026169626663_4809715156382651063_n This though is an easy casserole and it has all the wonderful flavor of the real thing, without all the work and also without any of the gluten that is used for the typical fry coating.  There are many recipes for similar casseroles on the internet, but this version, of no recipe in particular, is our favorite.  It’s not overly spicy hot, just tingly so.  The balance of flavors is spot on and the casserole reheats perfectly, who could ask for more?  Make and enjoy!
10885379_10153026170131663_1996835004615993391_n Chile Relleno Casserole
Preheat oven to 375F.  Char the skin of the peppers, either on an outdoor grill, over the burner of a gas stove or under the broiler.  Once the skin is charred on all sides, put the peppers in a bag to allow them to sweat.  While the peppers are sweating, heat the olive oil in a skillet and sautĂ© the onions until golden.  Add the beef to the onions and brown until fully cooked. Once the peppers have cooled enough to be handled, remove the stem and seeds and the skin.  Grease an 8x10-inch pan with olive oil and arrange three of the peppers to cover the bottom of the pan.  Cover the peppers with the beef & onion mix.  Spread the cheese on top of the beef.  Lice the remaining poblano into strips and arrange over the cheese.  In a bowl, whisk together the heavy whipping cream, eggs, cumin, salt & pepper.  Pour the cream mixture over the cheese.  Bake for 35-40 minutes uncovered, until golden and bubbly.  Serve hot, room temperature or cold, all ways are delicious.  Top with sour cream if desired.  To reheat, place desired portion on a plate and heat in microwave.
Enjoy!!
Crack Slaw
10641082_10152890728091663_7226816134170495745_nSo a friend of ours (hi Heather!! Big wave!) posted a picture and recipe for a dish called Crack Slaw. It looked like a simple and delicious dish so we decided to give it a try.  Heather said that it’s one of those dishes that you adjust the amounts to make it your own and that’s just what we did.  Here is our delicious version of Crack Slaw10644845_10152890728001663_5973961366070589563_nCrack Slaw
In a large skillet brown the ground beef and season with the fish sauce and ground pepper.  Remove from pan and set aside.  In the same pan, heat the sesame oil and sautĂ© the garlic, green onions, ginger & red pepper flakes until fragrant.  Add the coleslaw mix and cook until desired tenderness. (I like it so that it still had a bit of crunch.)  Stir in the coconut aminos and the vinegar and add back in the reserved beef and any accumulated juices.  Serve hot or cold, great either way!.
Enjoy!
Beef Keema
10527312_10152582649766663_6709504565997041626_n This month for Secret Recipe Club I was assigned Ilona’s blog Ilonaskitchen.  Ilona’s blog is chockfull of wonderfully delicious sounding recipes but when Indian food lovers like us happened upon not one, not two, but three keema recipes, well we knew what would be making an appearance in our home this month.  Out of the three recipes that Ilona had posted, we decided on this version as she made it once without the addition of coconut milk and then revisited the recipe making it a second time with the coconut milk, so we figured if she loved it the first time and went back to add in an ingredient as delicious as coconut milk, well it just had to be really, really good.  And good it was, totally delicious in fact and the creaminess of the coconut milk with the spiciness of the meat…pure perfection!
10525944_10152582649626663_1868865758867977544_nOf course there were a few changes we made to the original recipe.  We really love intense flavors so we cut the amount of meat back but kept the original amount of spice.  Also, we haven’t been eating white potatoes or peas so we swapped out the white potato with sweet potato and just nixed the peas.  We enjoyed the Beef Keema with Plantain Wraps, which kept our meal gluten and grain free but totally flavorful and satisfying.  Enjoy this version or Ilona’s version, either way you won’t be disappointed.
10308216_10152582649821663_789507190292853144_n Beef Keema (adapted from here)
  • 1 tablespoon Ghee
  • 1 pound ground beef
  • 1 large onion, finely chopped
  • 3 large garlic cloves, minced
  • Salt and freshly ground pepper
  • 2 TBS. minced fresh ginger
  • 2 TBS. Madras curry powder
  • 1 medium sweet potato, peeled & cut into 1/4-inch chunks
  • 1 1/2 cups chicken stock
  • One 14-ounce can unsweetened coconut milk
  • One 14-ounce can diced tomatoes
  • Chopped fresh cilantro, for serving
In a large skillet, over medium high heat, heat the ghee. Add the ground beef, seasoning with salt and pepper.  Cook, breaking the meat apart into small pieces, until there is no pink left.  Add the onion, garlic, ginger & curry powder. Stir and cook until the onion has softened, about 5-7 minutes.  Stir in the sweet potato, making sure to coat it with all the flavors in the pan. Add the broth, coconut milk and canned tomatoes.  Bring to a boil, turn down to a simmer, and cook until the sweet potatoes are tender and the sauce has thickened, about 15-20 minutes.  Using a wooden spoon, crush about half of the sweet potatoes into the broth.  Season to taste with salt and pepper.
Serve sprinkled with chopped cilantro, accompanied by plantain wraps, naan or chapati.
Enjoy!!
Roasted Grape Tomato, Garlic & Poblano Ragu
10436009_10152509977261663_8086085425085612435_n I swear that just a week ago here in Georgia, we were still sporting long pants and sweatshirts.  I don’t like being cold so I'm thankful that the warmth of summer has finally arrived. It was one of those cold days though when it came time to cook for this month's Secret Recipe Club so we were looking at recipes which were healthy, easy, warm and hearty. That's how we decided on Beth's Roasted Grape Tomato, Garlic & Poblano Ragu, it fit all our criteria. Beth's blog, It's Good to be the Cook is my assigned blog this month.  Beth has lots of wonderfully delicious looking and sounding recipes on her blog and had the weather been warmer we probably would have made her Emily’s Chicken Marinade and Thai Slaw with Spicy Peanut Butter, both of which will probably now be made as the weather is thankfully warmer.  We have been following Beth’s blog for quite a while as she cooked from this blog last September when she made two of our recipes, Slow Cooker Chicken Tikka Masala and Strawberry Soup so it was fun to now cook from hers.
Getting back to the ragu, we stayed pretty true to Beth’s original recipe, just doubling the amount of poblano and cumin we used as we tend to like dishes more on the spicy hot side.  In the end though, the sauce wasn’t spicy at all, just well balanced, flavorful and delicious.  We also changed around the preparation method a bit just to make it easier for us and the way we cook but either method would work just as well.  We enjoyed the ragu over zucchini pasta, totally delicious!  This is a great make-ahead recipe as we enjoyed the ragu the first night but totally loved it as leftovers once the flavors really melded.
10334280_10152509977491663_5788123173885144084_nRoasted Grape Tomato, Garlic & Poblano Ragu  (adapted from here)
Preheat the oven to 400F.  Line a baking sheet with aluminum foil and drizzle with a little coconut oil or oil of your choice.  Put the tomatoes and garlic cloves on the prepared pan and stir everything around so that all is covered with a light coating of the oil.  Dust with salt & pepper.  Bake for 30-45 minutes, until the tomatoes are a bit browned and the garlic is tender.  While the tomatoes and garlic are roasting, char the poblano on either the grill or on the burner of a gas stove.  Char the skin on all sides and then place the poblano in a plastic bag so that it can sweat.
In a skillet, add a small amount of coconut oil and then add the diced sweet peppers and onion.  sautĂ© until the onions and peppers begin to caramelize.  Push the vegetables to one side of the pan and add the ground beef.  Season the beef with salt and pepper as it browns then stir in the cooked peppers and onions into the browned beef.
Once the roasting vegetables are finished, scrape all of the tomatoes, garlic and accumulated juices into a blender or food processor.  Remove the skin and seeds from the poblano and add that to the tomatoes and garlic, along with the can of diced tomatoes, fresh basil leaves, garlic powder, onion powder, cumin & parsley.  Pulse until blended but still a bit chunky.  Season to taste with salt & pepper.
Pour the contents of the blender into the pan with the beef, peppers & onions and bring to a simmer.  Cook for 15-20 minutes to allow the flavors to blend.  Season as needed with additional salt & pepper.
Serve the ragu over pasta of your choice.
Enjoy!!
Coconut Crusted Tilapia in a Coconut Garlic Lemon Sauce
Coconut Crusted Tilapia w Coconut Garlic Lemon SauceA fast but fancy, perfect for family or company, delicious way to enjoy tilapia or other white flaky fish.  The fish cooks quickly in a pan making a crunchy delicious crust while keeping the fish moist and tender.  The coconut milk adds a creaminess to the strong lemon garlic sauce without adding dairy so perfect for everyone in our home with diets and allergies.  Interestingly we all love this fish freshly made but I think we like it even better the second day.  Got to love easy leftovers!
Coconut Crusted Tilapia in a Coconut Garlic Lemon Sauce
Sauce
Rinse and with paper towels, pat dry the filets and then season with 1/2 tsp. salt and fresh cracked pepper. Set aside.  Prepare 3 shallow bowls.  In the first mix the arrowroot, garlic and onion powders. In the second bowl, lightly whisk the eggs and water together. In the third bowl, mix the shredded coconut, paprika, thyme, and 1/2 tsp. salt.
In a large skillet, melt 1-2 TBS. of coconut oil over medium-high heat. Lightly dredge the fish in the arrowroot mixture, shaking off any excess. Then dip the fish in the egg mixture and finally dredge it in the coconut mixture, again shaking off any excess.  Lay the filet carefully in the hot pan. Repeat with the remaining pieces.
Cook until you see the edges of the filets turn opaque and the bottom crust is golden brown and crispy, then carefully turn the filets allowing the second side to crisp and brown.  Do not over-cook as you want to keep the fish moist.  Add additional coconut oil if necessary. Once cooked, remove the fish to a plate.
In the hot pan add the minced garlic and sautĂ© quickly until fragrant but not browned.  Add the lemon juice and stir in any remaining crunchy bits in the pan.  Add the coconut milk and stir well.  Simmer the sauce until reduced and it thickly coats the back of a spoon.  Remove from the heat and stir in the parsley and season to taste with salt & pepper.  Plate the fish and top with the sauce.
This was served with a delicious and perfect accompaniment, Coconut Carrot Soufflé, click on the link for the recipe.
Enjoy!
Lamb & Eggplant with Chiles
1395326_10152001167371663_784997146_n Does anyone else feel like the holidays are racing toward them like an out of control speeding freight train?  I just feel like in a blink of an eye 2013 will be over and I have so much left to do before that happens!  I thought that once I made it through Maisie’s birthday and the party, that life would settle down and I could find the time and return to things like blogging but alas, this and my Moments with Maisie blog have both fallen by the wayside even as fun times with Maisie and daily cooking continues.  Guess in the scheme of things, if one thing needs to be cast aside for a while, it’s better to be living and eating than reporting on it all.
I guess that it’s good that I participate in the Secret Recipe Club and the Improv Cooking Challenge, otherwise I don’t know when I would have added recipes over the past couple of months.  Sometimes it’s nice having those deadlines, just to keep myself in the game and in touch.  Anyhow, it’s Secret Recipe Club time and this month I was assigned Jenna’s Cooking Journey. I scrolled through Jenna’s blog and found it filled with hundreds of delicious sounding recipes but the one that really caught my eye was her Lamb & Eggplant with Chiles over Orzo.  I adore eggplant and it just happened to be a loss leader at the market recently and I had a package of ground lamb in the freezer, so it was kismet!  I did change Jenna’s recipe a bit, most notably, I left out the orzo and instead decided to serve the lamb and eggplant over roasted spaghetti squash, and I served it with a side of grilled sweet baby peppers.  I changed around a few items and the cooking steps but overall, I kept very close to the original recipe.  Jenna stated that her one regret when she made the dish was that she only used one chili and the dish lacked some of the heat she was hoping for.  I went in the other direction and used two red jalapenos from my garden and left the seeds in…so the dish had a really, really good kick, perfect for me but I’m sure way too hot for most so adjust those chilies accordingly.  This dish had wonderful flavor and was just all around delicious.  Thanks Jenna for a wonderful recipe.
 1381572_10152001165406663_1161039357_nLamb & Eggplant with Chiles (adapted from here)
  • 2 tablespoons coconut oil
  • 1 onion, coarsely chopped
  • 4 cloves garlic, minced
  • 1 pound ground lamb
  • 1 medium, firm eggplant, peeled and chopped into 1/2-inch pieces
  • 2 red jalapenos, sliced in half rounds (seeded for less heat)
  • 2 tablespoons fresh rosemary, minced finely
  • 1 can (15 ounces) diced tomatoes
  • 1 cup Cheaters Chicken Soup
  • Salt and Pepper to taste
Heat the coconut oil in a large skillet, over medium-high heat.  Add the onions and sautĂ© until caramelized.  Add the garlic and stir until fragrant.  Add the lamb and cook until well browned, about 10 minutes, seasoning with salt and pepper.  Stir in the eggplant, jalapenos & rosemary.  Partially cover the pan and cook until the vegetables are softened, about five minutes. Stir in the tomatoes and chicken soup.  Lower the heat and simmer, partially covered, until thickened, about 5 minutes.  Serve over orzo, couscous, pasta or spaghetti squash.
Enjoy!
Creamy Mac & Cheese, Gluten, Egg & Dairy Free
Mac & Cheese M-safe2 I swear that the weeks are passing faster than I can keep up as here we are again at the third Thursday of the month and it’s Improv Cooking Challenge reveal day.  Years seem to be passing quickly too as this post is also my 24th reveal in this challenge, so two full years and not a month missed…yay me!!
This month for the Improv Cooking Challenge our hostess Kristen of Frugal Antics of a Harried Homemaker challenged the participating bloggers to make any recipe of their choosing using the specified ingredients of pasta & cheese!  Sounds simple enough but this was a tough one for me but shoot I wasn’t going to miss this month and break my posting streak.  The reason that this month was difficult was, I haven’t been eating pasta in any form, nor have I been eating cheese or any of it’s fake versions, Maisie has her allergies and only eats non-wheat pastas and non-dairy cheese and Eammon, well he eats pasta but doesn’t care for cheese at all.  Then I got to thinking about it and before we found out about Maisie’s allergies, one of her favorite foods was good old mac & cheese.  Well right then and there I decided it was time to make an old favorite for my girl in a Maisie “safe” version so that’s exactly how this recipe came about.  I added one of her new favorites to the dish for some added protein, sweet Italian sausage.  This dish was made exclusively for my Maisie and she just adored it, delighted to have an old and new favorite meal all in one bowl.
Prepare pasta according to box directions.  Once the pasta is tender, drain.  In the now empty pot melt the margarine and whisk in the flax seed, mustard and garlic powder until you have a thick paste.  Whisk in the almond milk until the sauce is smooth and creamy.  Stir in 1 1/2 cups of the Daiya and stir until completely melted.  This may take a while as Daiya cheese takes a lot longer to melt compared to real cheese.    Stir in the pasta and coat with the sauce.  Stir in the remaining 1/2 cup of Dayia and stir to incorporate. Add salt & fresh ground pepper to taste.  Add sliced grilled sweet Italian sausage and serve.
Enjoy!
Tandoori Chicken Wings
I adore tandoori chicken but as I don't have a tandoor to authentically recreate the dish at home, I try to come as close as possible by using a delicious marinade and high heat cooking in my oven or on my grill.
This recipe is a bit different in that I've made it dairy free by using coconut milk in place of the yogurt that is traditionally used and I chose to use chicken wings, which though I'm sure has been done, I've never had them tandoori style. Eammon was in the mood for wings and I was craving tandoori...so there you have it, Tandoori Chicken Wings.
I realize that the recipe appears a bit overwhelming with the long list of ingredients but it really is simple in that everything is dumped into one big bowl and left to marinate for a few hours and then the chicken is baked or grilled so the hands on time is really minimal and the reward is huge. The wings were crispy on the outside, juicy on the inside and flavorful throughout. These Tandoori Wings were a perfect way to satisfy everyone's craving.
Combine the coconut milk, lemon juice and all the spices in a large bowl and mix well. Add the chicken pieces and stir to coat well. Cover and refrigerate at least 4 hours, preferably overnight. Preheat oven to 500F. Line a baking sheet with aluminum foil and lightly grease with coconut oil or oil of your choice. Lay the chicken pieces skin side up. Bake for 20-25 minutes until cooked through and the skin is crispy.
Enjoy!
