- 3 large eggs, room temperature
- 4TBS. melted ghee or butter
- 1 tsp. sugar, (optional to use, or can use any sweetener of your choice)
- ½ tsp. sea salt
- ¾ cup cassava flour
- 2 c. milk (I use whole milk)
- ½ tsp. vanilla bean paste or vanilla extract (for sweet crepes only)
- ghee or butter for frying

Egg-in-the-Hole
Have you ever had a dish which you always enjoyed growing up but over the years it was forgotten? Well that’s the deal with this easy, past loved recipe from our Secret Recipe Club assigned blog this month. We were perusing Laura’s blog, Mother Would Know, and saw her recipe for Egg-in-the-Hole and all the delicious memories returned. It was a done deal as to what was going to be made this month, especially as Maisie had never tried Egg-in-the-Hole and no child should be deprived of it’s deliciousness! Like Laura, we grew up having this made with cheap white bread but Laura suggests using the best bread you can find. In our case, because of Maisie’s gluten allergy, we went with gluten free bread which worked perfectly and was a huge hit with little Miss. M.
Laura is an attorney that loves to cook and though she’s never worked in a restaurant and doesn’t have a certificate or degree in cooking she has the best credentials of all. As she says, “My credentials are the meals that I make, the fun I have in the kitchen, and the fact that even people who aren’t my kids call me when they have cooking quandaries,” sounds perfect to me! Laura’s site is filled with plenty of great recipes for the home cook or any cook so check it out.
Egg-in-the-Hole (from here)
- 1 egg
- 1 slice of bread, we used A-Maisie-ingly Wonderful Gluten Free Bread but use whichever bread you prefer
- butter
- salt
- ground pepper
Heat a skillet and add a generous pat of butter. Using a juice glass or biscuit cutter, cut out a round hole in the center of the slice of bread. Place the slice of bread and the cut-out hole side by side in the pan and allow to slightly brown. Turn the hole as necessary until golden and remove to a plate. Once the first side of the bread slice is slightly golden, flip it over and add your egg to the hole. It is fine if the egg white is completely contained or spills out over onto the bread, it’s all good! Cook the egg in the bread until the white is almost completely set and then flip it over to continue cooking to desired consistency. Remove to plate, add salt & pepper to taste and enjoy along with the toasty cut out bread circle.

Hearty Bacon, Turkey & Vegetable Frittata
It’s difficult to believe that our previous time participating in The Secret Recipe Club was way back in November!! In some ways it feels like a long time ago, but with the holidays and all that they entail, the time passed quickly. It’s really good to be back and participating again. This month we were assigned Mellissa’s blog, A Fit & Spicy Life. Mellissa is a healthy, wine-loving, dog-loving, recipe-loving gal and reading her blog allows a glimpse into her fun-loving life.
It was a cold, gray, rainy night the evening we perused Mellissa’s blog and the idea of something warm, comforting & easy was what made us stop and drool when we spotted her Bacon & Vegetable Frittata. Seriously, there’s nothing easier, more comforting or delicious than a hearty breakfast for dinner so that’s exactly when and what we enjoyed, using Mellissa’s Bacon & Vegetable Frittata as the inspiration and guide for our meal. Mellissa mentioned in her post, that a frittata “can be the best dish to use up all those veggies that are about to go bad” so we raided our veggie drawer and used what we had. Also, to make it a bit heartier and because we had it already defrosted and it needed to be used, we added ground turkey to the mix. In the end, with the inspiration of Mellissa’s recipe as our guide, we enjoyed a perfectly hearty breakfast for dinner frittata…and it reheated beautifully for meals later in the week. Hearty Bacon, Turkey & Vegetable Frittata (adapted from here)
- 8 Eggs
- 1/4 cup heavy whipping cream
- 1/2 tsp. ground nutmeg
- 1/2 tsp. salt
- 1/2 tsp. ground pepper
- 6 slices bacon, divided
- 2 cups fresh chopped (chunky) broccoli
- 1 lb. ground turkey or chicken
- 3 cloves garlic, minced
- salt & ground pepper to taste
- 1/3 cup oven roasted tomatoes
- 1 cup grated Monterey jack cheese
Heat oven to 325F. In a bowl, whisk together the eggs, heavy whipping cream, nutmeg, 1/2 tsp. salt & 1/2 tsp. pepper, and set aside. In a large skillet, cook the bacon until crispy. Remove the bacon from the pan and set aside. Pour off all but 2 TBS. of the bacon fat and return the pan to the heat. Add the broccoli and cook until tender and golden in spots. Remove the broccoli from the pan and set aside. Add the ground turkey & minced garlic to the pan and season with salt & pepper. Cook the turkey until no longer pink, breaking it up as it cooks. Add the roasted tomatoes just as the turkey finishes cooking. Remove the pan from the heat and add back in the cooked broccoli. Dice three of the bacon strips and add those to the pan along with the grated cheese, stir to combine. Pour the contents of the pan into a 10-inch silicon cake pan which has been placed on a baking sheet, or if your pan is oven-proof, just keep the ingredients in the pan and continue. Pour the egg mixture over the turkey/broccoli mix and top with the remaining three strips of bacon (each cut in half.) Bake for 30 minutes, until the top is golden and bubbly delicious. Serve hot or at room temperature.

Coconut Carrot Soufflé
A delicious personal-sized side dish or grab-and-go snack. These petite soufflés have all the flavor of carrot cake with the texture of a light baked custard. With no added sugar it’s decadence with none of the guilt!
Coconut Carrot Soufflé (adapted from here)
- 1 lb. carrots, cut into chunks
- 2 cups 100% carrot juice
- 1/4 cup coconut butter
- 1 tsp. cinnamon
- 1/2 tsp. ground nutmeg
- 1/4 tsp. ground allspice
- 1/4 tsp. ground cloves
- 2 eggs
- 1/2 tsp. ground vanilla
- pinch of Himalayan salt
- 1 1/2 tsp. unsweetened shredded coconut
Preheat oven to 350F. Line six muffin cups or custard cups (placed on a baking sheet) with foil cupcake liners. Place the carrots and carrot juice in a pot and bring to a simmer. Cover partially and cook until the carrots are very tender. Remove the lid and bring to a boil. Cook until all of the carrot juice has been absorbed and evaporated. Add the carrots and all the other ingredients except for the shredded coconut to a food processor or blender and process until smooth. Divide the batter equally between the six cups. Sprinkle the shredded coconut on the tops of the carrot batter. Bake for 30 minutes, until slightly browned and a toothpick inserted in the center comes out clean. Allow to cool slightly and then remove the foil liner. Enjoy hot or cold. Reheats easily in the microwave.

Carrot & Sweet Potato Pancakes
- 1 3/4 cups shredded sweet potato
- 3 TBS. shredded carrot
- 2 TBS. minced onion
- 1/4 tsp. sea salt
- 1/8 tsp. roasted cinnamon
- 1/4 tsp. fresh ground black pepper
- 2 eggs, (or 2 TBS. chia seed in 6 TBS. warm water)
- coconut oil
In a medium bowl, stir together the sweet potato, carrot, onion, salt, roasted cinnamon and black pepper. Stir in the eggs until the mixture is evenly combined.
Heat a large cast iron skillet over medium heat and add just enough coconut oil to lightly coat the bottom of the pan. Using about a 1/4 cup measure place the sweet potato mixture into the pan and flatten patties to about 1/4-inch thick. Cook until first side is golden brown and then carefully flip and cook the second side until golden.
Serve hot or cold.

Cinnamon Bun Cookie Bars
This month for the Improv Cooking Challenge our hostess Kristen of Frugal Antics of a Harried Homemaker challenged the participating bloggers to make any recipe of their choosing using the specified ingredients of cinnamon and sugar! I wanted to bake something sweet to share with some friends, so what better ingredients than cinnamon and sugar? I thought about all my favorite cookie and bar recipes but realized that I tend to make the same cookies over and over again and I wanted to try something different. So what did I do? I checked out Pinterest of course and happened upon these cinnamon roll cookie bars from Blissful Whimsy.
The bars sounded really good but I almost passed on making them because they use a box cake mix. I don’t know what it is about me but I generally have this thing about using boxed mixes of any kind, thinking everything needs to be made from scratch…but something about these bars just allowed me to look past the whole cake mix thing and I’m so happy about that as these cookie bars are just wonderful. There’s no trace of that cake mix flavor, in fact these cookie bars taste just like cinnamon buns. Everyone really loved the crunchy edges and top and the chewy center and the glaze on top was the perfect amount of frosting. Boxed cake mix and all, I hope that you’ll make these the next time you’re craving a sweet cinnamon treat.
Cinnamon Bun Cookie Bars (recipe from here)
- 1 box yellow cake mix
- 1/2 cup melted butter
- 2 eggs
- 1/2 cup packed brown sugar
- 1/4 cup sugar
- 1 1/2 TBS. cinnamon
- 2-3 TBS. milk
- 2 cups powdered sugar
Preheat oven to 350F. Mix the cake mix, butter, eggs, brown sugar and cinnamon together in a bowl and then spread into a greased 9"x13" baking dish. Bake for 20-25 minutes. Bake until the top is crispy and a pick inserted into the center comes out clean. Remove from the oven and allow to cool a bit before piping on the icing. To make the icing whisk the milk and powdered sugar together until smooth.

Mini Bacon & Swiss Quiche Cups
This month for the Improv Cooking Challenge our hostess Kristen of Frugal Antics of a Harried Homemaker has challenged the participating bloggers to make any recipe of their choosing using the specified ingredients of bacon and eggs! My mind went off in so many directions with these ingredients, of course first thinking about breakfast and then going to the sweet side thinking about my Piggy-Out Cookies which contain bacon and eggs or my over the top Kicked Up Piggy-Out Cookies which also contain eggs along with my Spicy Brown Sugar Bacon…YUM!! In the end though I decided to go the breakfast / brunch / anytime hold-it-in-your-hand, easy-to-reheat, great-on-the-go route with my Mini Bacon & Swiss Quiche Cups. I love that I can bake up a batch of these, they can be eaten right away or saved for later as they reheat beautifully in the microwave. Eammon likes when I have extra as I’ll freeze them so he can, pull out, reheat and enjoy one or two anytime he desires. I hope that you’ll give these easy to make Mini Bacon & Swiss Quiche Cups a try.
Mini Bacon & Swiss Quiche Cups
5 slices bacon
1 brick (8 oz) cream cheese, softened
2 TBS milk (I used fat-free)
2 large eggs
1/2 cup shredded Swiss cheese
2 medium green onions, chopped
1 can (12 oz) flaky refrigerated biscuits (10 biscuits)
Heat oven to 375F. In a skillet cook the bacon until crisp and then drain on paper towels. Take two strips and cut each into 5 equal pieces. Crumble the remaining three slices and set aside. In a bowl the beat cream cheese until smooth. Add the milk and eggs, beating on low speed until smooth. Stir in the Swiss cheese and green onions. Set aside.
Spray 10 regular-sized muffin cups with cooking spray. Separate the dough into 10 biscuits. Press biscuit to form a 5-inch round. Place one biscuit round in each muffin cup and firmly press into the bottom and up sides. Divide the crumbled bacon between the 10 dough lined muffin tins, placing it into the bottom of dough-lined muffin cups. Spoon the cheese mixture evenly into cups. Bake 21 to 26 minutes or until filling is set and edges of biscuit cups are golden brown. Remove from the oven and into the top center of each Quiche Cup, stick a piece of the cut bacon for decoration. Remove biscuit cups from pan and serve.
These do really well being reheated in the microwave so a great do-ahead breakfast meal-to-go.

A-Maisie-ingly Wonderful Gluten, Egg & Dairy Free Bread
My A-Maisie-ing Maisie adores bread…well at least she used to until we found out that she’s allergic to wheat, egg & dairy and she had to give up her favorite, Nutella on bread…my poor girl! I quickly found dark chocolate peanut butter which though not Nutella, was close enough to satisfy her. In my attempt to give Maisie the bread she so dearly missed, we tried every.single.bread that I could find which was free of wheat, egg & dairy. I swear though, there’s a racket going with gluten-free bread makers as each loaf seemed to run close to $10 and Maisie hated them all! After spending a small fortune and having all my “bread” thrown in the rubbish bin we sort of gave up and Maisie resigned herself to not being able to eat bread and life went on. But just recently I saw a recipe named Finally…Gluten Free Bread That Doesn’t Suck on One Good Thing by Jillie and honestly the name drew mw in and I just couldn’t pass it by without giving it a try. After reading through the recipe I knew that I could adapt it for Maisie’s allergies as Jullie’s original recipe contained egg and milk powder.
Maisie’s excited, just waiting to bite into her bread. Honestly in this picture she knows what she’s getting because I have made six loaves of this bread already because Maisie absolutely LOVES it!! This bread is crazy delicious and though I’ve tweaked the recipe each time I’ve made it, from the first batch it was wonderful. The first time I made it, I gave a slice to Eammon and he thought that I made a loaf of regular yeasty bread and wanted more, but this bread was for Maisie so Eammon was just out-of-luck.
Maisie was so thrilled with the first two loaves that she finished them in three days!! I swear, all she wanted to eat was bread with her Maisie “safe” butter. It got to the point where I was using the bread as a treat, telling her that she could have some after she finished her meal and she opted for the bread in lieu of dessert!! I’ve tried a taste of each of the three batches I’ve made and if I didn’t know, I wouldn’t know that this bread was gluten, egg and dairy free as it has that wonderful smell of yeast, the flour mixture doesn’t taste like you’re eating rice, the texture is tender and moist and there’s a nice chew to the bread. I have to say, gluten-filled or gluten-free, this is some of the best sandwich bread I’ve ever eaten.
The dough in the pans before it rises. I honestly wasn’t too hopeful for a real bread the first time that I made this but now I know that from this step, it won’t be long before my home will smell of fresh baked bread and Maisie will be begging for a slice or two.
In the original recipe that Jillie posted, her bread rose about an inch above her pans but as I didn’t use eggs or milk, I found that a rise to just above the lip of the pan is about as far as I can take it before the dough will start to spill over the edge of the pan. I keep a Silpat lined baking sheet on the rack below the bread pans so that if any dough does spill over, it doesn’t end up burning on the base of my oven.
Even though my dough rose to just above the lip of the pan, once I started baking the bread I did have a little spill over. I’m sure that if I had egg in the bread it would hold together a bit better, allowing for a higher rise.
A little spill over or not, each time that I’ve made this, I’ve ended up with two gorgeous and delicious loaves of bread.
Let the bread cool completely before slicing. Look at the gorgeous texture and when I press in gently with my thumb, it springs right back up (see next picture) so no dry as the dessert or super dense bread like most of the ones Maisie ended up trashing.
A-Maisie-ingly Wonderful Gluten, Egg & Dairy Free Bread (Adapted from here)
- 1 1/3 cups brown rice flour
- 1 1/3 cups tapioca flour
- 1 1/3 cups cornstarch
- 1 TBS. potato flour
- 6 TBS. ground golden flax seed
- 1 TBS. xanthan gum
- 1 TBS. gluten free egg replacer
- 2 tsp. sea salt
- 1 packet active dry yeast (not Instant or Rapid Rise dry yeast)
- 5 TBS warm water (110-115*F) to activate yeast
- 1/2 tsp sugar to activate yeast
- 1/4 cup Earth Balance Buttery Spread or dairy free margarine, at room temperature
- 2 tsp. apple cider vinegar
- 1/2 cup honey
- 2 cups warm water, divided
Spray into two 8-inch bread pans with cooking spray and set aside.
Add the yeast and sugar to the 5 TBS. of warm water and stir until mixed. Set aside to activate while you mix the rest of the ingredients.
In a medium sized bowl mix together the brown rice flour, tapioca flour, cornstarch, potato flour, golden flax seed, xanthan gum, egg replacer and salt. Set aside.
In the bowl of a stand mixer fitted with the paddle attachment, add the margarine, apple cider vinegar, honey and 1/2 cup of the warm water. Mix together for about 30 seconds. The butter will be chunky, that’s okay.
Add half the dry ingredients to the wet mixture in the mixer and mix just until blended. Then add the remaining dry ingredients and mix for another 30 seconds, until blended.
With the mixer on low speed, slowly add the yeast mixture and the remaining 1 1/2 cups of warm water, then turn the mixer to medium-high speed and beat for 4 minutes. Half way through stop the mixer and scrape down the sides of the bowl and make sure that nothing is stuck to the bowl.
After 4 minutes the bread dough should resemble a thick cake batter.
Spoon the dough into the greased bread pans. If desired, dip your fingers in water and smooth the top of the dough. Set aside in a warm place to rise for approximately about 60 - 90 minutes. (I found that 90 minutes in my 100F proofing oven worked perfectly) While the dough rises, preheat oven to 375F.
When the dough has risen to just above the top of the pans, place the pans in your preheated oven on the middle rack and bake for 45 to 55 minutes or until the top is golden brown and a skewer poked into the center of the bread comes out clean. Remove the bread from the oven and let cool in pans for 10 minutes. Then remove the loaves from pans and place on a rack to cool.
After allowing the bread to cool COMPLETELY (this is important! Don’t rush it and cut into it while it’s still warm or you will flatten it.) VERY carefully start cutting slices. Also very important, let your bread knife do the cutting for you! You provide the “sawing” action, but let the knife blade do the work. Don’t press down, just keep “sawing” across the top until you get all the way to the bottom of the loaf and hit the cutting board. The bread slices will keep their shape much better this way. I have also found that slicing the bread top crust down makes for easier slicing. Slice the entire loaf, put into a Ziploc bag and freeze. When ready to serve, from frozen, toast or microwave the bread (40 seconds in my microwave) brings the bread back to that fresh baked texture.
