Rolo Brownie Bites with Caramel Cream Cheese Frosting

Today Maisie and I decided to bake a special treat for a chocolate and caramel loving friend.  After a bit of thought we settled on making mini brownie bites stuffed with a Rolo candy and topped with a caramel cream cheese frosting.  A perfect two bite treat, surprisingly not over-the-top sweet, adorable and YUM!!

IMG_8919eThe brownie bites were very easy to make and Maisie and I had fun cooking together.

IMG_8897eBut I think that Maisie’s favorite part was licking the spoon, she really got into her work.

Rolo Brownie Bites with Caramel Cream Cheese Frosting

  • 1 box fudge brownie mix plus necessary eggs, oil & water per package instructions (or your favorite homemade recipe)
  • 24 Rolo candies plus extras for the cook's snack
  • 4 TBS. butter, softened at room temperature
  • 4 oz. cream cheese, softened at room temperature
  • 2 TBS. caramel sauce
  • 1 cup confectioners sugar

Remove all the wrappers and refrigerate the Rolo candies.  Pre-heat oven to 325F.  Prepare brownies according to package directions.  Grease a 24 cup mini muffin tin with cooking spray and fill each cup 3/4 full with batter.  Bake for 15-20 minutes until a toothpick inserted comes out clean.  Remove from oven and immediately press a Rolo, smaller side down, into the center of each brownie bite until the top of the Rolo is even with the top of the brownie bite.  Cool for a couple of minutes then carefully remove the brownie bites from the pan to a cooking rack.  Allow to cool completely.

To make the frosting, whip the butter and cream cheese together until smooth.  Add the caramel sauce and blend.  Add the confectioners sugar and whip until creamy and smooth.  Using a pastry or plastic bag with a piping tip, pipe the frosting onto the top of each brownie bite.  Chill in the refrigerator to set the frosting a bit before serving.

  6. Yummm. I made your cookie oreo brownie dessert for the 4th and everyone loved it. I am going to make it again with the Triple Chunk brownie mix just to add some more chocolate. I served small pieces with ice cream on the side.

    These I think I will make for my Treat Thursday with my co-workers.

  49. I made these for my office and they got rave reviews. I didn't have caramel sauce, so left it out of the frosting and I like the tart contrast. I also added a dash of sea salt to the top of the frosting and it popped so much! Nothing better than that salty/sweet combo. Thanks so much for this easy & fun recipe.

Yiotta, you can easily bake a tray of brownies and when you pull it hot from the oven quickly press the frozen Rolos into the top, spreading them out so that when you cut the brownies you get one in each piece. Once completely cooled, just spread the frosting as if frosting a sheet cake and then cut into bars. Good luck and enjoy.

    1. Try using a silicon pan, spray it with cooking spray, bake the brownies and add the Rolos and then refrigerate to let everything set then you should easily be able to press from the bottom of each cup to get them out of the pan. Good luck!

  55. Hi, why wouldnt i bake the Rollos inside the dough? I imagine them to melt more into the brownie? I have made a peanut butter cup beaked into dough before, which asked to bake them as well. Would you be cincerned with the chocolate or caramel not turning out right? Thanks. Will make these today.

    2. I've tried that, pretty recently in fact, and here's the problem: the Rolos get kind of hard inside the brownies. Not rock hard, just unpleasantly difficult to chew. I think it might actually be the caramel... caramelizing? Again? Haha anyway they were tasty, just not what I had expected.

  58. I've just made these and they smell delicious!! (I haven't made the frosting yet, they're still cooling.) For anyone curious about amounts, I used a 19.9 oz Betty Crocker "family size" box of brownie mix and got 36 mini muffin sized brownies out of it, so 36 Rolos would be about the right amount for that size brownie mix. :-)
