Orange-Car​damom Date Nut Bars

1425540_10152080801316663_706446332_n It’s Improv Cooking Challenge reveal day and this month for the Improv Cooking Challenge our hostess Kristen of Frugal Antics of a Harried Homemaker challenged the participating bloggers to make any recipe of their choosing using the specified ingredients of orange & cardamom.  My very first thought were of some delicious orange & cardamom Christmas cookies which I haven’t had in years, but as I’m not eating wheat, gluten, sugar or sweeteners these days, they weren’t going to happen.  But, I did have my heart set on something sweet which would fit into my current diet and after a little looking around I found this wonderful recipe for Orange-Cardamom Date Bars with a Nutty Crust. 

1426136_10152080801216663_979848146_n I made only one small ingredient change to better fit our diets and I simplified the process of making the bars.  The bars are delicious and sweet with no added sugar or sweeteners and the flavor of the orange and cardamom works perfectly with the flavors of the nuts and dates.  Even though there’s no cooking or baking involved, the nuts make a wonderful crunchy crust and the date puree in the center is creamy and delicious.  A wonderful little treat if you’re looking for a healthy sweet dessert or snack.

Grease an 8-inch-square baking pan with the coconut oil.  Working over the bowl of a  food processor, peel the oranges and remove and discard all the white pith and the membranes.  Add the dates and process to a smooth puree. Scrape the puree into a bowl.  Rinse and dry the processor bowl.  Add the almonds to the empty processor bowl and process until very finely ground. Add the pecans, cinnamon and ground cardamom and pulse until the pecans are coarsely chopped. Add 1/4 cup of the date puree and pulse until the mixture holds together. Using oiled fingers, press half of the nut mixture into the prepared pan in an even layer. Spread the date puree over the crust. Crumble the remaining nut mixture evenly over the filling; pressing down to compact it. Refrigerate for at least 2 hours, until firm enough to cut.

Cut into 24 squares and serve.

Special Dark Chocolate Cupcakes with Chocolate Fluff Frosting ~ Gluten, Egg & Dairy Free

Today is a triple special day, it's my A-Maisie-ing Maisie's eighth birthday, it’s Improv Cooking Challenge reveal day AND after weeks of neglect I'm finally adding a new recipe to the blog. How appropriate is it that this month for the Improv Cooking Challenge our hostess Kristen of Frugal Antics of a Harried Homemaker challenged the participating bloggers to make any recipe of their choosing using the specified ingredients of cake & frosting! She must have known that it was my girl's day and that she adores cake and frosting.

Of course Maisie with her allergies, I had to make her special treats gluten, egg & dairy free...but still delicious. These cupcakes were a big hit with my girl and since I made them just for her, I only frosted one and then wrapped and put the extras in the freezer to be thawed, frosted and enjoyed another day.

Special Dark Chocolate Cupcakes with Chocolate Fluff Frosting ~ Gluten, Egg & Dairy Free

Frosting:

Preheat oven to 350F.

Using a food processor, combine the dates, almond milk, coconut cream & vanilla bean paste, pulsing until you have a smooth and creamy paste. In a separate bowl whisk together the rice flour, corn starch, cocoa powder, baking powder & salt. add the wet to the dry ingredients. Beat the mixture by hand for two minutes. Portion the batter into 4-6 cupcake liners.

Bake 15-20 minutes, until a tester inserted in the center comes out clean. Cool completely before frosting. To make frosting, stir together the desired amount of Marshmallow Fluff and flavor to taste with cocoa powder and a pinch of salt. Pipe frosting onto cupcake and decorate with sprinkles.

Creamy Mac & Cheese, Gluten, Egg & Dairy Free

Mac & Cheese M-safe2 I swear that the weeks are passing faster than I can keep up as here we are again at the third Thursday of the month and it’s Improv Cooking Challenge reveal day.  Years seem to be passing quickly too as this post is also my 24th reveal in this challenge, so two full years and not a month missed…yay me!!

This month for the Improv Cooking Challenge our hostess Kristen of Frugal Antics of a Harried Homemaker challenged the participating bloggers to make any recipe of their choosing using the specified ingredients of pasta & cheese!  Sounds simple enough but this was a tough one for me but shoot I wasn’t going to miss this month and break my posting streak.  The reason that this month was difficult was, I haven’t been eating pasta in any form, nor have I been eating cheese or any of it’s fake versions, Maisie has her allergies and only eats non-wheat pastas and non-dairy cheese and Eammon, well he eats pasta but doesn’t care for cheese at all.  Then I got to thinking about it and before we found out about Maisie’s allergies, one of her favorite foods was good old mac & cheese.  Well right then and there I decided it was time to make an old favorite for my girl in a Maisie “safe” version so that’s exactly how this recipe came about.  I added one of her new favorites to the dish for some added protein, sweet Italian sausage.  This dish was made exclusively for my Maisie and she just adored it, delighted to have an old and new favorite meal all in one bowl.

Mac & Cheese M-safe1Creamy Mac & Cheese, Gluten, Egg & Dairy Free

Prepare pasta according to box directions.  Once the pasta is tender, drain.  In the now empty pot melt the margarine and whisk in the flax seed, mustard and garlic powder until you have a thick paste.  Whisk in the almond milk until the sauce is smooth and creamy.  Stir in 1 1/2 cups of the Daiya and stir until completely melted.  This may take a while as Daiya cheese takes a lot longer to melt compared to real cheese.    Stir in the pasta and coat with the sauce.  Stir in the remaining 1/2 cup of Dayia and stir to incorporate. Add salt & fresh ground pepper to taste.  Add sliced grilled sweet Italian sausage and serve.

Dark Chocolate Peanut Butter Rice Krispy Treats with Vanilla Coconut Frosting

Summer is flying by and here we are again, the third Thursday of the month and it's Improv Cooking Challenge time again. Like last month I'm still out of sorts as I'm still without a computer, thus still taking pictures with my iPhone and blogging on my iPad.

This month for the Improv Cooking Challenge our hostess Kristen of Frugal Antics of a Harried Homemaker challenged the participating bloggers to make any recipe of their choosing using the specified ingredients of vanilla & chocolate. Now those ingredients sound easy enough, I mean who doesn't love vanilla and chocolate? My problem in choosing a recipe though is that I'm not eating either ingredient right now and Eammon doesn't need to eat either ingredient so I limited myself to recipes that would appeal to my Maisie. In the end it was Maisie who led me to make Dark Chocolate Peanut Butter Rice Krispy Treats with Vanilla Coconut Frosting.

In the end neither Eammon nor I tried even a morsel of the treats but by the way Maisie and her friends devoured them, I can say that they were a huge success.

Dark Chocolate Peanut Butter Rice Krispy Treats with Vanilla Coconut Frosting

Grease an 8-inch square pan and set aside.

Add 3 TBS. buttery spread and the marshmallows to a microwave safe bowl and heat for two minutes on high. Stir to combine and stir in the peanut butter. Heat for an additional 30-40 seconds and then working quickly, add the Rice Krispies and stir to combine well. Press the mixture into the prepared pan and chill until set.

Once the bars are set, cut into squares but keep them close and together. To make the frosting, combine the remaining 1/2 cup buttery spread, powdered sugar, coconut milk and vanilla bean paste and whisk together until creamy. Drizzle onto the chilled bars.

Peachy Cola Ribs

I can't believe that for the second month in a row, I almost missed a month of the the Improv Cooking Challenge. Last month I had difficulty getting my act together to just get on the computer and blog, and this month, though I'm more "together", the motherboard on my laptop died so I'm all out of sorts without my computer and I'm now blogging from my iPad mini with pictures from my iPhone. As far as cooking for this challenge, well that was done well in advance, so I'm not a total slacker. After 21 consecutive months of participating and posting with the Improv Cooking Challenge I would have hated to miss a month so I'm glad that I got I this post up, a little late but still within the time frame of the challenge.

This month for the Improv Cooking Challenge our hostess Kristen of Frugal Antics of a Harried Homemaker challenged the participating bloggers to make any recipe of their choosing using the specified ingredients of peaches & herbs! It took me a little while to decide on the direction I wanted to go with the ingredients, sweet or savory and what exactly to make. I did do a bit of back and forth thinking of cobblers and drinks but in the end I decided to make ribs which I would be cook in a spice, herb & cola braising liquid and then slather with a peach & cola BBQ sauce.

The night that I made the ribs we had guests over for dinner and the ribs were a big hit all around. The flavors of the braising liquid really permeated the meat and the BBQ sauce was the perfect accompaniment. Because I braised the ribs I was able to get that part of the cooking done before our guests arrived and then it was a quick finish on the grill with the BBQ sauce right before serving. The ribs were fall off the bone tender and totally delicious! I hope that you'll give this recipe a try


Peachy Cola Ribs


In a medium sauce pan stir together the garlic, onion, basil, allspice, ginger, red pepper flakes, bay leaves & cola. Bring to a boil and then reduce to a simmer. Stir occasionally and simmer until reduced by half.

Place the peaches & BBQ sauce into a blender and process until smooth.

Preheat the oven to 350 F. Prepare a baking sheet lined with aluminum foil and spray with cooking spray. Add the reduced braising liquid to the prepared pan and place the ribs curved side up on top of the liquid. Brush the ribs lightly with the peachy BBQ sauce. Cover the pan tightly with aluminum foil and place into the preheated oven. Cook the ribs for 90 minutes and then check to see if they are fall off the bone tender. Cook an additional 20 minutes if needed. Remove from the oven and pour off fat & braising liquid.

Heat grill to medium high. Brush the BBQ sauce over all surfaces of the ribs. Place the ribs on the hot grill and cook until the BBQ sauce caramelizes, turning the ribs as needed. Serve hot.

Salt & Vinegar Chip Crab Cakes

IMG_7281e I can’t believe that I almost missed this month of the Improv Cooking Challenge as I just have not been able to get my act together lately;  I just seem unable to sit down at the computer and actually blog.  Life has been busy and come night time, I just haven’t been in the mood to open up my laptop.  Not only have I been neglectful on this blog, but also on our family blog, Moments with Maisie.  I mean seriously, it took me a month and a half to post the pictures from our recent transatlantic cruise and time in Barcelona.  My posting was so slow that friends and family called and emailed to see if we were okay because it took so long to post!  Well today I’m making up for it… a bit.  A catch-up post on Moments with Maisie and finally, a new recipe here. 

This month for the Improv Cooking Challenge our hostess Kristen of Frugal Antics of a Harried Homemaker challenged the participating bloggers to make any recipe of their choosing using the specified ingredients of fish & chips!  She actually opened the scope of the challenge quite a bit as items like Swedish fish and chocolate chips could be counted as valid challenge fish and chip ingredients.  I thought about going the sweet route but in the end decided to go savory, a bit more traditional fish & chips…but with a twist. 

Now if I made traditional English fish & chips, well Eammon would be all over that one considering that he’s from London and next to Chicken Tikka Masala, it’s his fave!  I enjoy a good fish & chips dinner once in (rare) while but Maisie with her allergies, well it’s not something that she ever eats because I don’t deep fry and when we’re out, it’s not Maisie “safe”.  I thought about topping a nice piece of fish with some potato chips but as I did something similar for the July challenge with my Fritos Crusted Pollock, I needed something a bit different. 

I was looking in the freezer and saw that I had crabmeat and Maisie’s been on a salt & vinegar potato chip kick lately, and it hit me… crab cakes made with salt & vinegar chips.  I knew that Maisie would love them as would Eammon, I mean fish, potato and vinegar…well yum!

And well YUM these were, and easy too!  They are Maisie “safe” as they don’t contain wheat, egg or dairy like traditional crab cakes but instead use a combination of chia seed and flax seed as the binders.  The crab cakes were simple and the flavor of the crab was the star with hints of the potato chips.  I served the crab cakes simply with fresh from the garden peppers and tomatoes and an extra serving of salt & vinegar chips.  A delicious and healthy fish & chips meal which was a huge hit with all of us in the Cook Lisa Cook home.

In a large bowl mix together all ingredients except for the corn starch, salt & pepper (to taste) and peanut oil.  In a smaller bowl mix together the corn starch and season with the salt and pepper.   Using a large cookie scoop, portion out the crab mixture and shape into patties (I got 15 patties).  Dust each of the patties on all sides with the corn starch mixture. 

Over medium-high heat, heat a large cast iron skillet and add just enough oil to coat the bottom of the pan.  When the oil is hot, carefully place the crab cakes, in batches, into the pan and fry until browned and then carefully flip the crab cakes and fry on other side until golden brown.  Serve hot, plain, with some malt vinegar or sauce of your choice.

Cinnamon Bun Cookie Bars

IMG_6726eThis month for the Improv Cooking Challenge our hostess Kristen of Frugal Antics of a Harried Homemaker challenged the participating bloggers to make any recipe of their choosing using the specified ingredients of cinnamon and sugar!  I wanted to bake something sweet to share with some friends, so what better ingredients than cinnamon and sugar?  I thought about all my favorite cookie and bar recipes but realized that I tend to make the same cookies over and over again and I wanted to try something different.  So what did I do?  I checked out Pinterest of course and happened upon these cinnamon roll cookie bars from Blissful Whimsy.  

IMG_6722eThe bars sounded really good but I almost passed on making them because they use a box cake mix.  I don’t know what it is about me but I generally have this thing about using boxed mixes of any kind, thinking everything needs to be made from scratch…but something about these bars just allowed me to look past the whole cake mix thing and I’m so happy about that as these cookie bars are just wonderful.  There’s no trace of that cake mix flavor, in fact these cookie bars taste just like cinnamon buns.  Everyone really loved the crunchy edges and top and the chewy center and the glaze on top was the perfect amount of frosting.  Boxed cake mix and all, I hope that you’ll make these the next time you’re craving a sweet cinnamon treat.

Preheat oven to 350F.  Mix the cake mix, butter, eggs, brown sugar and cinnamon together in a bowl and then spread into a greased 9"x13" baking dish. Bake for 20-25 minutes.  Bake until the top is crispy and a pick inserted into the center comes out clean.  Remove from the oven and allow to cool a bit before piping on the icing.  To make the icing whisk the milk and powdered sugar together until smooth.
