Coconut Crusted Tilapia in a Coconut Garlic Lemon Sauce

Coconut Crusted Tilapia w Coconut Garlic Lemon SauceA fast but fancy, perfect for family or company, delicious way to enjoy tilapia or other white flaky fish.  The fish cooks quickly in a pan making a crunchy delicious crust while keeping the fish moist and tender.  The coconut milk adds a creaminess to the strong lemon garlic sauce without adding dairy so perfect for everyone in our home with diets and allergies.  Interestingly we all love this fish freshly made but I think we like it even better the second day.  Got to love easy leftovers! 

Coconut Crusted Tilapia in a Coconut Garlic Lemon Sauce

Sauce

Rinse and with paper towels, pat dry the filets and then season with 1/2 tsp. salt and fresh cracked pepper. Set aside.  Prepare 3 shallow bowls.  In the first mix the arrowroot, garlic and onion powders. In the second bowl, lightly whisk the eggs and water together. In the third bowl, mix the shredded coconut, paprika, thyme, and 1/2 tsp. salt.

In a large skillet, melt 1-2 TBS. of coconut oil over medium-high heat. Lightly dredge the fish in the arrowroot mixture, shaking off any excess. Then dip the fish in the egg mixture and finally dredge it in the coconut mixture, again shaking off any excess.  Lay the filet carefully in the hot pan. Repeat with the remaining pieces.

Cook until you see the edges of the filets turn opaque and the bottom crust is golden brown and crispy, then carefully turn the filets allowing the second side to crisp and brown.  Do not over-cook as you want to keep the fish moist.  Add additional coconut oil if necessary. Once cooked, remove the fish to a plate.

In the hot pan add the minced garlic and sauté quickly until fragrant but not browned.  Add the lemon juice and stir in any remaining crunchy bits in the pan.  Add the coconut milk and stir well.  Simmer the sauce until reduced and it thickly coats the back of a spoon.  Remove from the heat and stir in the parsley and season to taste with salt & pepper.  Plate the fish and top with the sauce.

Fijian Ceviche ~ Kokoda

1385395_10151965017876663_541994582_nThis month for Secret Recipe Club I was able to pretend that I was on an exotic island enjoying an incredibly delicious meal.  Well other than the less than turquoise waters in our backyard, we were able to sit on our dock, under the nice warm Georgia sun and enjoy this delicious Fijian Ceviche and for just that little while, we were transported to that island. 

1384245_10151965018046663_1878201323_nNow that I’m off of my delightful, though delusional island time, let me fill you in on the details.  This month for Secret Recipe Club I was assigned the blog Easily Good Eats.  This blog is loaded with wonderful recipes.  I started scrolling through the recipe index, looking at the usual cookies, brownies, breads, fish & meats but when I came upon the headings of exotic and unusual…well that totally caught my interest.  It didn’t take long to choose a recipe because as soon as I read the recipe for Kokoda (Fijian Ceviche) I knew I had found a winner…and a total winner it was,  We love ceviche and this one with the addition of coconut cream just brings it to a whole different level.  I actually made this recipe within 24 hours of receiving my assignment and since then I have made it three additional times…yes, it is that good!!  I hope that you’ll give this Fijian Ceviche a try and transport yourself to a wonderful and delicious paradise.

  • 12 oz. monk fish, or other firm white fish, shrimp and bay scallops work well too 
  • 5 TBS. fresh lemon juice
  • 1/2 cup finely died onion
  • 1TBS. finely diced red jalapeno
  • 1 TBS. finely diced green jalapeno
  • 1 TBS. coconut butter
  • 2 TBS coconut milk   
  • 1/2 cup small diced tomato (fresh) 
  • Salt & freshly ground black pepper

Cut the fish into 1/2 inch cubes.  Place the fish, lemon juice, onions and jalapeno in a large ceramic or glass bowl and toss to combine. Cover and place in the fridge for 8 hours or overnight to marinate, stirring occasionally. The fish will be white when ready.

Just before serving pour off the lemon juice and accumulated liquid.  Stir together the coconut butter and coconut milk and gently stir into the fish mixture, season to taste with salt and pepper.  Gently stir in the tomatoes.

Salt & Vinegar Chip Crab Cakes

IMG_7281e I can’t believe that I almost missed this month of the Improv Cooking Challenge as I just have not been able to get my act together lately;  I just seem unable to sit down at the computer and actually blog.  Life has been busy and come night time, I just haven’t been in the mood to open up my laptop.  Not only have I been neglectful on this blog, but also on our family blog, Moments with Maisie.  I mean seriously, it took me a month and a half to post the pictures from our recent transatlantic cruise and time in Barcelona.  My posting was so slow that friends and family called and emailed to see if we were okay because it took so long to post!  Well today I’m making up for it… a bit.  A catch-up post on Moments with Maisie and finally, a new recipe here. 

This month for the Improv Cooking Challenge our hostess Kristen of Frugal Antics of a Harried Homemaker challenged the participating bloggers to make any recipe of their choosing using the specified ingredients of fish & chips!  She actually opened the scope of the challenge quite a bit as items like Swedish fish and chocolate chips could be counted as valid challenge fish and chip ingredients.  I thought about going the sweet route but in the end decided to go savory, a bit more traditional fish & chips…but with a twist. 

Now if I made traditional English fish & chips, well Eammon would be all over that one considering that he’s from London and next to Chicken Tikka Masala, it’s his fave!  I enjoy a good fish & chips dinner once in (rare) while but Maisie with her allergies, well it’s not something that she ever eats because I don’t deep fry and when we’re out, it’s not Maisie “safe”.  I thought about topping a nice piece of fish with some potato chips but as I did something similar for the July challenge with my Fritos Crusted Pollock, I needed something a bit different. 

I was looking in the freezer and saw that I had crabmeat and Maisie’s been on a salt & vinegar potato chip kick lately, and it hit me… crab cakes made with salt & vinegar chips.  I knew that Maisie would love them as would Eammon, I mean fish, potato and vinegar…well yum!

And well YUM these were, and easy too!  They are Maisie “safe” as they don’t contain wheat, egg or dairy like traditional crab cakes but instead use a combination of chia seed and flax seed as the binders.  The crab cakes were simple and the flavor of the crab was the star with hints of the potato chips.  I served the crab cakes simply with fresh from the garden peppers and tomatoes and an extra serving of salt & vinegar chips.  A delicious and healthy fish & chips meal which was a huge hit with all of us in the Cook Lisa Cook home.

In a large bowl mix together all ingredients except for the corn starch, salt & pepper (to taste) and peanut oil.  In a smaller bowl mix together the corn starch and season with the salt and pepper.   Using a large cookie scoop, portion out the crab mixture and shape into patties (I got 15 patties).  Dust each of the patties on all sides with the corn starch mixture. 

Over medium-high heat, heat a large cast iron skillet and add just enough oil to coat the bottom of the pan.  When the oil is hot, carefully place the crab cakes, in batches, into the pan and fry until browned and then carefully flip the crab cakes and fry on other side until golden brown.  Serve hot, plain, with some malt vinegar or sauce of your choice.

Sesame Ginger Sea Bass

IMG_6470e Back in December I was asked by Certified Steak & Seafood* to sample and review both their Prime Angus Filet Mignon and Chilean Sea Bass.  At the time it arrived I immediately used the steaks to make Steak au Poivre but I popped the Sea Bass filets into the freezer to make another day.  When the Certified Steak & Seafood Prime Angus Filet Mignon and Chilean Sea Bass steaks arrived at my door they were individually vacuum sealed, frozen and packed in a styrofoam cooler with dry ice so it was easy to just pop all the individual steaks into the freezer. 

After enjoying the wonderful filet Mignon we couldn’t wait to try the Sea Bass and it didn’t disappoint.  I chose to prepare the Sea Bass simply as I didn’t want to overpower the delicate flavor if the fish.  Maisie especially loved the fish and ate almost a full filet herself.  The Sea Bass was delicate, sweet and totally delicious.  Maisie has requested a repeat meal so we’ll be enjoying this recipe again very soon.

IMG_6474e Sesame Ginger Sea Bass

Remove the Sea Bass steaks from the freezer and defrost overnight in the refrigerator.  Once defrosted remove from the packaging and pat dry with paper towels.  

Preheat oven to 350F.  Lay a sheet of heavy duty aluminum foil on a baking sheet and lightly spray with cooking spray.  Place the Sea Bass filets on the foil and evenly sprinkle on the garlic, ginger, sesame oil, Mirin, salt, pepper, green onion and sesame seeds.  Close foil to make a packet and put in oven for 15-20 minutes.  The fish is done when it begins to flake.  Remove from foil and serve immediately.

Toasted Sesame Ginger Salmon with Sesame Ginger Honey Glaze

IMG_5337eI don’t remember how I happened upon Jessica’s blog How Sweet It Is but once there I was immediately drawn to her recipes, especially her Toasted Sesame Ginger Salmon as her pictures had me wanting to lick my computer screen.  So as I do, I saved her recipe to my ever expanding “need to make file.”  Then I was emailing with my bloggy pal Colleen and she mentioned that this week she was making my Coriander Roasted Salmon with Cilantro Yogurt Sauce and that got me in the mood for some salmon.  Though my Coriander Roasted Salmon with Cilantro Yogurt Sauce is one of my favorites I remembered that I had Jessica’s recipe saved and other than the salmon, I thought that I had everything in the house* so that’s the direction I went. 

I of course changed Jessica’s recipe a bit by upping some of the flavors and to better fit with my diet I reduced the oil and made sugar free substitutions for the honey and brown sugar.  I also used salmon with skin and made sure to crisp it up as Eammon loves salmon skin.  So how did it turn out?  Well oh my word this salmon was a huge hit, moist, flavorful and wonderfully delicious.  Maisie loved the sweetness of the glaze and ate a huge portion, as large as mine.  Eammon and I loved it too and were both picking at the scraps on the baking sheet, enjoying every last bit.  I made two large filets so I had one left over and the following day we enjoyed the leftovers, Maisie and Eammon ate it heated and I loved it cold, flaked on a salad with a bit of the glaze used as dressing.  The day after we finished both filets I asked Maisie what she wanted for dinner and she asked for more salmon!!  I will be making this salmon again and again and very soon as it was totally delicious and a winning recipe in all our books.

*  I thought that I had all the ingredients in the house, including fresh green onions but that wasn’t to be so I had to pull some from the freezer so they look a bit limp on the salmon.  Oh well, still delicious.

Toasted Sesame Ginger Salmon

Line a baking sheet with aluminum foil and spray with cooking spray.

In a large bowl or baking dish, combine the sesame oil, vinegar, Whey Low Gold, soy sauce, garlic, ginger & ground pepper and whisk well until combined. Add salmon to the dish or place everything in a Ziplock bag, then refrigerate and marinate for 30 minutes.

Preheat the broiler in your oven to high and move the rack as close to the broiler coils as possible.

Remove salmon from the marinade and place skin side up on the prepared pan and then place directly under the broiler. Cook for 5 minutes until the skin is crispy.  Remove from broiler and turn the filets over.  Top with some of the marinade, getting as much of the minced garlic and ginger on to the salmon as possible.  Return the salmon to the broiler for approximately 5 more minutes until the inside of the salmon is opaque and easily flakes with a fork.

Serve immediately topped with some toasted sesame seeds, green onions and some of the Sesame Ginger Honey Glaze  (below)

Sesame Ginger Honey Glaze

Combine all the glaze ingredients in a bowl and whisk until smooth. Pour over salmon.

Fritos Crusted Pollock

IMG_4926e It’s month ten of the Improv Cooking Challenge and I’m still participating and loving the challenge.  The Improv Cooking Challenge is hosted by Kristen of Frugal Antics of a Harried Homemaker.  This month the participating bloggers were asked to make any recipe of their choosing using the two given ingredients of corn & butter.  As always I looked forward to participating and finding or coming up with a great recipe which included the two theme ingredients but for some reason I just had trouble this month thinking beyond a gorgeous ear of grilled corn slathered in butter.  It’s not like I was limited to just those two ingredients but I don’t know why, I just seemed uninspired.  Then it came time for dinner and I needed something that was healthy, delicious and fast as my family was hungry and then it struck me what to make, a simple, five ingredient Fritos Crusted Pollock.  I figured that Fritos are corn chips so it met the corn part of the challenge and though I didn’t use actual butter because of Maisie’s dairy allergy, I was allowed to substitute dairy free margarine, which I did but butter would work just as well.

IMG_4898e This fish was beyond simple as I crushed the Fritos in the food processor with the butter and some garlic powder,  I then topped the fish filets with the mixture, added a sprinkle of paprika and a quick few minutes under the broiler and dinner was served. 

IMG_4905e Maisie especially loved this fish and ate an entire filet herself.  I loved that from start to table this meal was being eaten in less than 20 minutes. 

IMG_4927e For Eammon I made a wrap with Romaine lettuce and fresh from our garden veggies, cucumber, bell pepper & tomato.  I added a little spicy sauce and wrapped it all up in a tomato basil tortilla and all was good.  Even though I was struggling and a bit uninspired, in the end we enjoyed a delicious dinner with a twist on corn and butter.

  • 2 Pollock filets, skinless (or white flaky fish of your choice)
  • 1 cup Fritos
  • 1 TBS. Earth Balance Buttery Spread or butter
  • 1/2 tsp. garlic powder 
  • smoked sweet paprika
    • Place oven rack up close to the broiler and preheat to high.  Add the Fritos, butter and garlic powder to the bowl of a food processor and pulse until a nice crumbly mix.  Lay the fish filets on a foil lined baking sheet which has been sprayed with cooking spray.  Coat the top of each filet with the Fritos mix and then sprinkle lightly with paprika.  Cook the filets under the broiler for approx. 7 minutes or until the Fritos mixture starts to turn golden and the fish is cooked through.

      Broiled Sushi

      IMG_3408e I love being a member of The Secret Recipe Club and each month I’m excited to receive my Secret Recipe Club assignment to see who I’ve been assigned.  Just as in months past, as soon as I received the email from our Group ‘A’ hostess Jane, which contained all the information for my assigned blog, I was off stalking it.  This month I was assigned Lisa’s Sweet as Sugar Cookies which is a wonderful blog filled with dozens and dozens of sweet treat recipes as well as some main dishes.  I looked at so many of Lisa’s bar, cookie and ice cream recipes and there were just dozens that I wanted to make but because of Maisie’s allergies she can’t really eat most of the sweets and the fact that neither Eammon nor I really need to be eating sweets right now I decided to look at the main dish recipes.  Once I saw Lisa’s recipe for Broiled Sushi I knew that I had found my recipe. 

      I’ll bet that it was less than four hours from the time I opened the email containing my assignment to the time that I served this meal.  As it worked out I opened the email late on a Sunday morning and as I didn’t have any plans for meals that day and the fact that I had everything I needed to make this in my pantry and freezer…well it was meant to be.  I got my mushrooms and sushi rice soaking and I pulled a package of imitation crab meat from the freezer and got that defrosting and then I was good to go.  This dish came together in no time at all and Eammon especially adored it and ate it for meal after meal until he finished the entire dish.  Surprisingly for me, I didn’t change Lisa’s recipe at all, I made it exactly as written and when I make it again, which I will, I wouldn’t change a thing…well maybe I would make one of her wonderful looking sweets to enjoy after the Broiled Sushi.  Oh and if you’re turning your nose up thinking sushi = raw fish well not in this dish, as there’s nothing raw, just wonderful flavors so give it a try.

      IMG_3359eIn a large bowl mix together the mushrooms, crab meat, sour cream and mayonnaise.

      IMG_3349eSpread a layer of sushi rice in a baking dish.

      IMG_3361eSprinkle the rice layer with furikake.

      IMG_3364eAdd the crab & mushroom mixture and it’s ready for the broiler.

      IMG_3394eBubbly and lightly browned, fresh from the broiler.

      IMG_3354eFurikake and roasted laver (Gim).  I keep both the sheets and the individual packets of Gim in the house.  The sheets are when we eat at home and the small packets I send with Maisie for snack at school and at the gym.  To see our no-mess way of cutting the sheets into neat little squares, click here.

      In a large bowl combine the chopped mushrooms, crab meat, sour cream and mayonnaise and stir to combine  Spray a 9 x13-inch Pyrex with cooking spray and spread the sushi rice in an even layer.  Sprinkle with furikake seasoning. Spread with the crab meat mixture. Put under the broiler for about 10 minutes until the top begins to brown. Serve with Sriracha.  Scoop into pieces of Gim, and eat.

      Rum Cured Salmon

      Back in February 2010 I posted Rum-Cured Salmon Summer Rolls and I posted the recipe for the salmon along with a single picture of the summer roll.  We honestly adore this salmon recipe and since I was making it again recently I decided to document the recipe.    

      IMG_2001e1On a foil and then plastic wrapped sheet pan, place salmon skin side down and cover the salmon with the curing mixture.

      IMG_2010eCover the tray with plastic wrap and then place a second sheet pan directly on the salmon along with 5 pounds of weights and refrigerate for 18-24 hours.

      IMG_2163eI used two filets totaling 3 pounds of salmon so I scaled the recipe below to fit my needs.  We enjoyed one filet and I froze the second one and we’re looking forward to enjoying it very soon.

      Rum Cured Salmon

      1 cup (lightly packed) chopped fresh cilantro
      1/2 cup light brown sugar
      1/4 cup kosher salt
      1/4 cup finely chopped fresh ginger
      3 TBS. Sichuan peppercorns, cracked
      one 2-pound fresh salmon fillet with skin still attached (I use steelhead salmon)
      1/3 cup dark rum

      In a bowl, combine the cilantro, brown sugar, salt, ginger and Sichuan peppercorns.  Line a sheet pan with foil and then cover the foil with plastic wrap.  Place the salmon on the prepared pan skin side down. Press the cilantro mixture evenly over the fish and then drizzle the rum over the salmon.  Lay a piece of plastic wrap over the salmon, covering completely. Place a second sheet pan directly on top of the covered salmon and then place about 5-pounds of weight on top of that. Refrigerate for no less than 18 hours and no more than 24.

      After salmon has cured, scrape off the curing mixture and discard. Using a sharp knife, cut the salmon into thin slices on the diagonal. Store the salmon for up to a week in a tightly sealed, air squeezed out, Ziplock bag or freeze the the entire filet for later use.
