Sriracha Deviled Eggs

21752_10153332458626663_4788849239166587829_nWe can hardly believe that it’s May already and Maisie’s summer break begins in just 2 weeks!!  One of our favorite appetizer items which always seems to show up at summer parties, are deviled eggs.  We have made them on a few occasions but honestly, they were never any good.  For some reason other people’s eggs always taste wonderful and ours have been just bland and nothing special.  Well all that has now changed since we found Sid’s recipe for Sriracha deviled eggs aka Tates Hell on her blog, Sid's Sea Palm Cooking.  This month for Secret Recipe Club we were assigned Sid’s blog and let me tell you, she is one lady that loves to cook and entertain.  She host’s monthly Tapas nights, cooks for her boat club and prepares numerous senior lunches, all in addition to just general cooking. 

When we first perused her blog we really were drawn to a number of her Danish dishes, including her Frikadeller with ground turkey, Kro pork with grapes and Rødgrød med Fløde.  Then there were a few recipes, also Danish, which we’ve set aside to make for the holidays when we allow some special treats into our diet.  Check out these tasty treats which we’ve tucked away, kringle weinerbrod, mazarin tarts and adorable marzipan fruits.  In the end though it was the deviled eggs which called our name and we’re delighted that they did as this recipe is kick-a$$ fabu!  We really love not only the wonderful flavor of the eggs but the nice hot spiciness too.  No more will we be limited to enjoying deviled eggs only when others chose to make and share them, now we can enjoy delicious Sriracha Deviled Eggs anytime we desire.

11196256_10153332458216663_8824872385417613065_nWe buy local free-range eggs, which are often just gathered minutes before we purchase them, aren’t the colors just gorgeous!  Unfortunately super fresh eggs aren’t good to hard boil as they’re near impossible to peel, no matter what trick or techniques you employ.  So, since we make hard boiled eggs every-single-week, we always try to have an extra dozen or two on hand as working with week-old eggs makes for wonderful and easy peeling.

In a large pot, bring water to a boil. Carefully add the eggs to the pot and bring the water back to a full boil.  Allow the eggs to boil for 30 seconds. Cover tightly and reduce heat to low so that it’s just at a simmer.  Cook for 11 minutes. Using a large slotted spoon, remove the eggs from the hot water and place in a bowl of ice water.  Allow the eggs to cool for at least 15 minutes before peeling under cool running water.

Once the eggs are peeled, slice in half and remove the yolks to a bowl and place the hollowed out whites on a platter.  Using the tines of a fork, mash the yolks.  Add in the Sriracha, mayonnaise and Sambal Oelek.  Combine until smooth, adding more Sriracha and Sambal Oelek to taste.  Place the yolk mixture in a piping bag or ziplock bag fitted with a star or round piping tip.  Fill each egg white with the yolk mixture.  Place a dot of Sriracha on the top of each egg and dust with freshly ground pepper and salt.  Serve cold.

Thai Peanut Noodles with Chicken

IMG_5965e It’s Secret Recipe Club time again, so you know I’m excited, I love this time of month!  This month I was assigned Jessie’s blog Vanderbilt Wife.  I really loved reading her blog, seeing her adorable children and all her wonderful recipes, of which there are many so be sure to click on over and check them out.  I debated back and forth as to which recipe to make but in the end I decided on her Toddler Thai:  Noodles in Peanut Sauce with Chicken.  Jessie’s son is lactose intolerant and she makes this recipe for him and as my Maisie is allergic to wheat, egg & dairy, it was just a simple change of pasta to also make it gluten free and safe for my girl. 

IMG_5950eI sautéed up two chicken breasts as I had them defrosted and thought that I would use the second one in a chicken salad…but Maisie had other ideas.  Somehow between the time I started cooking this recipe and the time Maisie started eating it, she decided that she no longer liked the taste of peanut butter…but that of course could change tomorrow…and can we say finicky little girl???  She ate a little of the noodles and then asked for plain noodles with some of the chicken and ketchup…OY!!  I think she’s seven going on tween and definitely has become much more opinionated and picky.  Oh well, all was not lost with this recipe as I spiced it up a little with some Thai Garlic Chili Pepper Sauce and a bit of Sriracha and what was to be Maisie’s, became Eammon’s dinner.  Maisie’s loss was Eammon’s gain as he absolutely loved the pasta and all the flavors.  And little Miss Picky enjoyed her plain bean thread noodles, chicken and ketchup…oh well at least she ate and got some protein and calories into her…even if she did miss out on a delicious meal!

Prepare the noodles according to package directions.  Drain, rinse and set aside.

Season the chicken with the five spice powder and ginger.  Heat a large cast iron skillet and add a thin layer of half sesame oil and half peanut oil.  Once the oil is hot, add the chicken and sear on each side, then cover the pan and remove from the heat.  The residual heat in the cast iron pan will continue to cook the chicken and it won’t get over cooked and dried out.  Once the chicken is cooked through, remove it from the pan and slice thinly.  To the now empty pan, add the the peanut butter, soy sauce, honey, 1 TBS of sesame oil, Thai Garlic Chili Pepper Sauce, Sriracha and carrots and heat, stirring to blend well.  Once hot, stir in the noodles and the sliced chicken breast.  Garnish with cilantro and serve.

Chicken Satay Noodle Salad

IMG_5135e I have been participating in The Secret Recipe Club since June of last year and still each month I’m excited to receive my assignment so I can immediately start stalking my assigned blog searching for the recipe I want to make and feature.  This month was no different and when I received my assignment of Barbara’s Barbara Bakes I immediately started perusing her extensive list of recipes.  Finding the “one” recipe that I wanted to make was quite difficult as Barbara’s recipe list is quite extensive and so many caught my eye including zucchini bacon & cheese fritters, her braised beef short ribs and funeral potatoes (because the one time I had them they were oh-so-delicious) or one of her Daring Cooks recipes, boeuf bourguignon…yum!  Then there was her Cafe Rio sweet pork barbacoa which really called my name because I LOVE eating at Cafe Rio when I’m out visiting friends in Utah, it’s my favorite and one day I will make Cafe Rio’s sweet pork barbacoa as well as the other recipes which I bookmarked from Barbara’s site.  In the end I decided to make Barbara’s chicken satay noodle salad, a perfect meal for a hot Georgia summer night. 

IMG_5136eBecause I can never leave any recipe as it is, I did make a few changes to Barbara’s recipe but really so that it fit better with our diets and just little taste changes.  For the taste changes I used cilantro instead of parsley because I love the flavor of cilantro with satay and then as Barbara didn’t specify a hot pepper sauce I decided to use two different ones, Thai Garlic Chili Pepper Sauce and Sriracha.  To fit better with our diets I omitted the oil, used sugar free honey and I switched out Barbara’s whole wheat spaghetti for Shirataki noodles as I’m avoiding carbs and with Maisie and her allergies, the Shirataki noodles fit both our diets.

This dish easily came together as I had most of the ingredients in the house and this recipe was a perfect way to use some of the chicken I froze the last time I made my “Rotisserie” Chicken.  Also, since I decided to make this as a cold noodle salad it all came together in one bowl so my clean up was easy-peasy.

This recipe was simple and delicious with the wonderful contrasting sweet, sour, salty & spicy flavors that I love in Thai food.  This salad was a hit with all of us and I can see it gracing our table many nights to come.

In a large bowl whisk together the peanut butter, honey and tamari.  Add the lime juice & zest, hot pepper sauces and garlic then whisk until smooth.  Add the noodles, carrots and chicken and fold to mix.  Gently fold in the spinach, green onions, peanuts & cilantro.  Top with additional cilantro and peanuts for serving.

Broiled Sushi

IMG_3408e I love being a member of The Secret Recipe Club and each month I’m excited to receive my Secret Recipe Club assignment to see who I’ve been assigned.  Just as in months past, as soon as I received the email from our Group ‘A’ hostess Jane, which contained all the information for my assigned blog, I was off stalking it.  This month I was assigned Lisa’s Sweet as Sugar Cookies which is a wonderful blog filled with dozens and dozens of sweet treat recipes as well as some main dishes.  I looked at so many of Lisa’s bar, cookie and ice cream recipes and there were just dozens that I wanted to make but because of Maisie’s allergies she can’t really eat most of the sweets and the fact that neither Eammon nor I really need to be eating sweets right now I decided to look at the main dish recipes.  Once I saw Lisa’s recipe for Broiled Sushi I knew that I had found my recipe. 

I’ll bet that it was less than four hours from the time I opened the email containing my assignment to the time that I served this meal.  As it worked out I opened the email late on a Sunday morning and as I didn’t have any plans for meals that day and the fact that I had everything I needed to make this in my pantry and freezer…well it was meant to be.  I got my mushrooms and sushi rice soaking and I pulled a package of imitation crab meat from the freezer and got that defrosting and then I was good to go.  This dish came together in no time at all and Eammon especially adored it and ate it for meal after meal until he finished the entire dish.  Surprisingly for me, I didn’t change Lisa’s recipe at all, I made it exactly as written and when I make it again, which I will, I wouldn’t change a thing…well maybe I would make one of her wonderful looking sweets to enjoy after the Broiled Sushi.  Oh and if you’re turning your nose up thinking sushi = raw fish well not in this dish, as there’s nothing raw, just wonderful flavors so give it a try.

IMG_3359eIn a large bowl mix together the mushrooms, crab meat, sour cream and mayonnaise.

IMG_3349eSpread a layer of sushi rice in a baking dish.

IMG_3361eSprinkle the rice layer with furikake.

IMG_3364eAdd the crab & mushroom mixture and it’s ready for the broiler.

IMG_3354eFurikake and roasted laver (Gim).  I keep both the sheets and the individual packets of Gim in the house.  The sheets are when we eat at home and the small packets I send with Maisie for snack at school and at the gym.  To see our no-mess way of cutting the sheets into neat little squares, click here.

In a large bowl combine the chopped mushrooms, crab meat, sour cream and mayonnaise and stir to combine  Spray a 9 x13-inch Pyrex with cooking spray and spread the sushi rice in an even layer.  Sprinkle with furikake seasoning. Spread with the crab meat mixture. Put under the broiler for about 10 minutes until the top begins to brown. Serve with Sriracha.  Scoop into pieces of Gim, and eat.

Chang-Style Brussels Sprouts

IMG_2785eIt wasn’t until recently that I discovered that I really enjoy Brussels sprouts.  In the past I always found them stinky and well, cabbage-y tasting but when cooked up right as in this recipe with the addition of bacon, Sriracha and a bit of lime, well they’re absolutely delicious.  I’ve made this recipe a couple of times and because Eammon always requests Brussels sprouts as part of Christmas dinner, I served them Christmas Eve, much to everyone’s delight.

serves 4

1lb fresh Brussels sprouts
1/4lb thick-cut bacon
Butter (optional)
Sriracha hot sauce 
juice of one lime
Salt and pepper

Preheat oven to 400 degrees.

Trim stem-ends from sprouts. Half sprouts lengthwise, through core. Cut bacon into chunks. Cook in a large-ish oven-proof skillet over medium heat until crispy, about five minutes. Remove with a slotted spoon and drain on paper towels. Raise heat to medium-high. Add sprouts to skillet, cut side down, in a single layer. Sear until they start to sizzle. Transfer to the oven and roast until they are browning on the cut side, about 8 minutes. Flip sprouts over in skillet and return to oven. Remove from oven they are bright green and tender (taste check), about 10 minutes. Return pan to the stove top over medium heat. Put a pot holder on the skillet handle so you don't accidentally sear your palm. Stir in bacon and an optional tablespoon of butter. Toss until mixed through. Dump sprouts and bacon in a bowl, add a few squirts of Sriracha depending on how hot you like it (we like it hot). Squeeze in juice of one lime. Salt and pepper if necessary.
