Chipotle Stuffed Mushrooms

11139355_10153401353941663_3511506582072926792_nSummer is here and there’s nothing better than sitting out on our dock on a warm evening, enjoying an adult beverage and a few appetizers.  Honestly we sometimes make appetizers our meal during the summer as it’s laid back, easy and seriously, who wants to spend time in the kitchen over the stove or have the oven running for hours.  Fun-finger-food followed by marshmallow kabobs (roasted marshmallows) for dessert sure sounds perfect in our minds.  Yes, just call me Mrs. Flax.

11391173_10153401353836663_6446851691983541475_nSo with summer here, our search this month for our Secret Recipe Club had us looking for appetizers.  Our blog assignment this month was Andrea’s Adventures in all Things Food.  A few of her recipes caught our attention, including her Lamb Stew 'en Papillote', also delicious looking was her Thai inspired Chicken Patties with Sweet Chili Dipping Sauce, and her Fast and Flavorful Pineapple Mango salsa, which probably will be making an appearance on our table this summer, but as I said, we really wanted an appetizer.  In the end it was her Chipotle stuffed mushrooms we chose to make and enjoy.

10685337_10153401353876663_4813070643946948916_nAndrea’s blog shows her life with her children, there are lots of home and craft ideas and books, as she really seems to love reading.  Of course there are lots of recipes too and along with those recipes she does a lot of product reviews, endorsements and giveaways.  In this recipe she used Chipotle flavored Tabasco sauce.  We didn’t have the sauce and chose not to purchase it just for this recipe, so instead we used chipotle powder to get that nice spicy, smoky kick which was a wonderful contrast to the creaminess of the cream cheese.  The other change we made to the recipe was we chose to leave out the panko, to make the recipe lower in carbs and we also left out the egg yolk because in truth, we just forgot to put it in…oops!  All-in-all, the mushrooms were wonderful and they held together well and will be made again and again as we enjoy our summer appetizer meals.

  • 1 TBS. olive oil 
  • 1 yellow onion, diced finely
  • 48 oz. of button mushrooms, stems removed and chopped finely 
  • 6 garlic cloves, minced
  • 16 oz. natural pork sausage
  • 3/4 tsp. Chipotle powder
  • 16 oz. cream cheese, softened  
  • 3/4 c. Parmesan cheese, shredded (NOT the powdered dry grated)
  • extra shredded Parmesan for topping
Preheat the oven to 400F degrees.
Heat 1 TBS. olive oil in a large skillet. Sauté the onion until golden, add the chopped mushroom stems and sauté until soft.  Add the garlic and cook until fragrant.  Add the sausage and cook, breaking it up until no pink remains..  Add the chipotle powder and stir to combine, cook for a bout 1 minute. Remove the pan from the heat and add the cream cheese and stir to combine.  Add the Parmesan and stir to combine.   Cool slightly.  Fill each mushroom cap with filling and top with a little more Parmesan cheese.  Place the filled mushroom caps on a baking sheet.  Bake for 30 to 35 minutes, until the mushrooms are softened and the filling has turned golden brown. 
Plate and serve immediately.

Garlic Seafood in Coconut Milk1After a very.long.break, it’s once again, finally, Secret Recipe Club posting time!  It feels like forever since we were last here, between people being sick, Thanksgiving, more sickness, being with family, more sickness, the holidays, snow storms, more sickness, day-to-day life and each SRC group taking a little break…well, it’s been a long time since my last post so it’s good to be back. 

For my inaugural assignment of 2014 I was given Elizabeth’s blog, Food Ramblings.  Elizabeth’s blog is filled with wonderful healthy or healthier-than-the-original recipes, so perfect for the way we’ve been eating here in the Cook Lisa Cook home and an ideal way to begin a new year.  As soon as I received my assignment I searched through Elizabeth’s blog, reading dozens and dozens of tempting recipes and I narrowed my list down to four; garlic roasted green beans with pecans, chicken coconut curry soup, basil polenta with roasted spinach and tomatoes, which I was going to modify and do with cauli-rice in place of the polenta and, of course the chosen recipe of garlic seafood in coconut milk

1545551_10152246786856663_1547850163_n Now before I continue with the recipe, let me tell you a little small world story.  Many times our (fabulous, talented, kind, beautiful, smart, A-Maisie-ing, yes we’re bragging, proud parents) daughter Maisie, has appeared on this blog and many of our regular readers also read her blog, Moments with Maisie and know that just over seven years ago we adopted Maisie from China.  Through the years we have met, both in real life and online, many friends through the China adoption community and that’s where the choosing of this recipe comes into play. 

1546418_10151956567228723_1835727644_n You may have seen the news this past Tuesday about Atlanta being brought to a stand-still because of two inches of snow fall.  Well it wasn’t the snow amounts that caused all the problems but rather the almost instant icing that turned all the roads into a skating rink along with schools, business and government all being closed at the exact same time, but I digress…  One of our local friends, Roger, whom we originally met through the China adoption community, got stuck in all the traffic, gridlock and accidents, with most of his time being spent on Johnson Ferry Rd, the main road we live off of.  At close to 11PM, after 9+ hours and 8 miles remaining to travel to his home and family, he landed safely at our home.  After a hot dinner and a beer for him, we all thankfully slept safe and warm.  By late Wednesday afternoon he was able to safely make the trek home even though it did involve dodging wrecks & abandoned cars, detours because of road closures and avoiding re-freezing roads and black ice.  Roger was still at our home for lunch and on an icy cold day nothing is better than a steaming bowl of soup.  After checking the pantry and realizing that I had the fixings for both of Elizabeth’s soups I let Roger pick which he’d enjoy and he was the one who chose.  Now this is where the story gets a bit small-world-ish.  Elizabeth posted her garlic seafood in coconut milk recipe as a guest writer on another blog called Diana Rambles.  Now I have “known” Diana through the China adoption community for over eight years.  So how small world is that, my cooking community through Elizabeth’s Food Rambles writes a guest post on Diana’s Diana Rambles, whom I know through the China adoption community and our stranded snowmageddon house guest, whom we also know through the China adoption community happens to pick that recipe. 

Okay, enough of my ramblings…  Roger made a wonderful choice and after he returned home I heard from his wife just how much he enjoyed the soup, but oddly nothing about how much he enjoyed sleeping in Maisie’s princess palace  ;)  I think that this soup will not only be made again in our home, but become a regular in his home too.  We did made a few small changes to Elizabeth’s original recipe as we left out the rice, my blend of seafood was slightly different, I substituted lime juice for the lemon juice and fish sauce for her salt and instead of mixed frozen veggies I used what I had, sugar snap peas and then added some straw mushrooms just because I had them and knew they would work well.  I know that it sounds like a lot of substitutions but it was acid for acid, salt for salt, veg for veg and fish for fish and just goes to show, in recipes like this, you can still have the same base dish working with what you have on hand.  Check out Elizabeth’s original recipe or make our version, either one will prove to be a delicious choice.

In a large pot, heat oil on medium. Add the onion and cook slowly until they starts to turn golden.  Add the garlic and cook until fragrant and softened. Add the cilantro and red pepper flakes and cook for another couple minutes. 

Add the diced tomatoes and coconut milk. Stir to combine and then cover and simmer for 10 minutes. Add sugar snap peas & mushrooms and simmer until the snap peas are tender.  Bring to a boil and then add the seafood.  Cover and remove from the heat immediately.  Allow the seafood to poach for about 10 minutes until cooked through.  Stir in the lime juice and fish sauce to taste.

Chicken Burgers with Spinach & Mushrooms

It’s that time again, Secret Recipe Club time and this month I was assigned Ginny's wonderful blog, Cooking with Chopin, Living with Elmo. Ginny blogs about life with her husband and two cutie-patootie boys and she shares wonderful real food recipes with her readers. While most of her recipes are based on real unprocessed foods, she does sometimes venture off and use ingredients that aren't quite as healthy, but oh-so delicious, like when she was assigned my blog for Secret Recipe Club back in October 2011 and using my Rolo Brownie Bites with Caramel Cream Cheese Frosting she made Ferraro Rocher Brownie Bites with Caramel-Cream Cheese Icing.

Whether whole food and healthy or one of her delicious sinful treats Ginny has something for everyone on her blog. So many of her recipes called to me including her Braised chicken with orange and pistachios, Australian chicken strudel and the recipe I chose, Turkey burgers with spinach and shallots. Can you tell that I was in the mood for some poultry?
 
Ginny does a wonderful job walking you through the steps of a recipe showing lots of pictures and giving plenty of instruction so cooking from her blog is easy-peasy, just like the recipe I chose.

 

I made a few changes to Ginny's recipe, most noticeably, I used chicken instead of turkey and that's just because I had chicken breast in the house which I easily ground up to use in the recipe.

 

As I didn't have shallots, I used some extra onion and garlic. I pretty much followed Ginny's directions and they were perfect...just like the burgers.

 

The burgers were perfectly seared on the outside and deliciously moist and tender inside. The addition of the mushrooms added so much moisture and umami. The burgers were a huge success with all of us here in the Cook Lisa Cook house and even my spinach and mushroom hating Maisie thought they were wonderful and put dibs in for the leftover burger and she enjoyed it for lunch the following day.

So how did I get my spinach and mushroom hating girl to even try the burgers? The mushrooms I minced finely and they weren't overly noticeable mixed in with the chicken and other ingredients. Spinach of course is more difficult to hide but thankfully Maisie loves salad so I just told her it was salad cooked right into the burger...I just didn't tell her that it was spinach salad ;)

Chicken Burgers with Spinach & Mushrooms

Makes 4 large burgers

  • 1 10-ounce box chopped spinach, thawed
  • 1 pound ground lean chicken breast (or ground turkey breast)
  • 4 cloves garlic, finely chopped, divided
  • 5 TBS. minced onion, divided
  • 1/2 tsp. dry mustard
  • 10 basil leaves, shredded or chopped
  • Handful of fresh parsley, chopped (or 2 teaspoons dried parsley)
  • Salt and freshly ground black pepper, to taste
  • 3 TBS. coconut oil, divided
  • 14 oz. mushrooms, minced finely
  • 1/2 cup Cheaters Chicken Soup or chicken stock
  • Desired toppings & condiments (sautéed onions, peppers or mushrooms, mustard, mayo, ketchup, etc.)

Begin by preparing the sautéed mushroom mixture. In a small skillet, heat 1 tablespoon of the coconut oil over medium-high heat. Sauté 3 TBS. onion and 3 garlic cloves until fragrant & tender and then add the mushrooms. Stir occasionally and cook for 4-5 minutes. Add the chicken stock and cook until it has mostly evaporated from the pan (about 2-3 minutes).

Squeeze the water out of the thawed spinach and add to a large mixing bowl. to the same bowl add the ground chicken, mushroom mixture, spinach, remaining onion and garlic, dry mustard, basil, parsley, and salt & pepper. Mix together well and divide and then section the mixture into four equal parts. Form each part into an inch-thick patty.

Preheat a large cast iron skillet over medium-high heat. Swirl the remaining 2 tablespoons of coconut oil around the pan to coat. Cook the patties 5-6 minutes on each side, the pan loosely covered with a pan lid (resist the urge to flip unless you think they're burning), until the chicken is cooked through. Turn the heat off under the pan.

Serve burgers with desired toppings and/or condiments.

Honey Spiced Game Hens

IMG_6735eCornish Game Hens are a delicious alternative to everyday chicken.  When cooked properly they are tender, sweet and juicy and because they are small they cook quickly.  I know that it looks like a giant chicken half on the plate but it’s actually a salad plate in the picture.  Anyhow, this is a delicious one pan meal that has the perfect balance of spice, sweet and sour and from start to finish takes less than an hour .  Also, because it’s made in one aluminum foil lined pan, clean-up is just as quick and easy, a perfect weeknight, or any night meal.  This of course could also be made with chicken pieces if Game Hens aren’t your thing.

Preheat oven to 450F.  Line a roasting pan with aluminum foil and spray with cooking spray.  Add the carrots and whole garlic cloves to the pan.  Drizzle with one Tablespoon of oil and toss to coat well.  In a small bowl combine the garlic powder, chili powder, onion powder, coriander, salt, cumin & chipotle chili powder and mix well.  Sprinkle one Tablespoon of the spice mixture onto the carrots and garlic and toss to coat well.  Place the roasting pan into the oven and bake for 20 minutes, stirring once at the 10 minute mark. 

In a microwave safe measuring cup, heat the honey slightly, until runny, and stir in the apple cider vinegar, set aside.

Wash the game hen pieces and pat dry. Drizzle a small amount of oil over the game hens and rub it in with your hands to lightly coat all the pieces. Sprinkle the remaining spice mixture over all sides of the game hens.  Once the carrots and garlic have cooked for 20 minutes, remove the pan from the oven and add the mushrooms, stir to mix all the vegetables.  Place the game hen pieces on top of the vegetables, skin side up and return the pan to the oven.

Bake for 30 minutes.  At the 10 and 20 minute marks, drizzle one Tablespoon of the honey mixture over each of the game hen pieces.  Once plated drizzle a little more of the honey mixture over each piece.

Mom’s Beef Vegetable Soup

 IMG_6829e“Peas and Carrots, Carrots and Peas.  Book come out, please, please, please!”  That phrase of Princess Pea’s from Super Why has been haunting me like the March of the Toreadors, It’s a Small World and the music from Peter & the Wolf.  Don’t you just hate when a song gets stuck in your head and drives you crazy?  So you ask why is that phrase haunting me?  Well this month for the Improv Cooking Challenge our hostess Kristen of Frugal Antics of a Harried Homemaker has challenged the participating bloggers to make any recipe of their choosing using the two specified ingredients of, you guessed it, peas & carrots, carrots & peas, let me figure this out, please, please, please! 

If you don’t have a child or have never seen Super Why, what happens is that Whyatt, the main character gets a call on his computer in which he discovers that one of the other characters has a "super big problem". After investigating the problem Whyatt calls on all the "Super Readers" to come to the Book Club.  There the four characters, Whyatt, Pig, Red Riding Hood, and Princess Pea gather.  Whyatt plugs in his Super Duper Computer and uploads data about the problem and they all discuss it.  Once the problem is discussed, Whyatt says, "When we have a question, we look ... in a book!" Pig always asks, "Which book should we look in?" and in response, Princess Pea casts a magic spell to summon the appropriate book: “Peas and Carrots, Carrots and Peas.  Book come out, please, please, please!”  The book then magically descends from the shelves.  Whyatt, invites the audience to read along, summarizes the problem faced by the book's characters and drawing a parallel to the problem the Super Readers are trying to solve. The Super Readers follow the storyline to solve the problem applying their literacy skills to change the story when needed to overcome any obstacles.  Throughout the story they are rewarded with red glittery "Super Letters" which are uploaded into the Super Duper Computer, eventually forming the words that make up the solution to the "super big problem."  Yes I know, for those of you who have never experienced the show you now feel like you have a “super big problem” and have missed out…or maybe I have a “super big problem” as I know oh-too much about this show.  I’m just glad that Maisie’s outgrown the show…even if it is still haunting me there’s hope that the haunting will end. 

So now that you’ve read this far, let me tell you that I could have used Whyatt, the Super Readers and a magical book as I was at a complete loss as to what to make using peas & carrots.  That was until I had my DUH… moment.  I seriously for an entire month had been wondering what on earth to make using peas and carrots and then I just wasn’t feeling well, our weather was cold and stormy and I wanted to make some comforting soup, my Mom’s Beef Vegetable Soup.  I was writing out my shopping list, beef, split peas, barley, string beans, yellow squash, parsnips, carrots, lima beans, mushrooms… and light dawned on Marblehead… peas & carrots, carrots & peas, I had found my recipe, please, please, please!

My Mom doesn’t remember if it was her Mom or my Dad’s Mom who originally made this soup but either way it’s been made my entire life and has always been a favorite of mine.  Of course the recipe below can be cut down but just like my Mom does, I make the recipe as written which makes a huge, and I mean HUGE pot of soup.  I then freeze individual sized portions so that anytime I crave this delicious, comforting soup, it’s there in the freezer, ready to be eaten after just a few minutes of defrosting and heating in the microwave.  

Peas & carrots, carrots & peas, try & enjoy this soup, please, please, please!!

IMG_6831eMom’s Beef Vegetable Soup

In a very large stock pot add the meat and marrow bones and cover with 3x the depth of water.  Add the peas, barley & lima beans to a cheesecloth or put into a colander and suspend into the water.  Bring the pot to a boil and then reduce to a simmer.  Cook at a simmer for 1 1/2 – 2 hours, until the meat is tender and the peas, barley & lima beans are soft.  Skim the soup as needed.  Once everything is soft, empty the contents of the cheesecloth/colander into the beef stock and add the string beans, carrots, summer squash, parsnips, mushrooms and soup base to taste.  Simmer until the vegetables are cooked and soup has thickened to desired consistency.  Add salt to taste.

Slow Cooker Ranch Mushrooms

IMG_6112e The market had mushrooms as a loss leader (1.5 lbs. for $0.99) and as Eammon adores mushrooms and I’m one to never pass up a good bargain, I picked up a couple of pounds.  I used some of the mushrooms in recipes like these Slow Cooker Ranch Mushrooms and some I sliced up, sautéed and froze in small FoodSaver packets so that I can easily pull them out and use in future recipes. 

This recipe is a super simple and made in a Crockpot.  The mushrooms can be used not only as an appetizer or side dish but they are wonderful over roasted chicken, a grilled steak or pork chop or even with a sautéed piece of white flakey fish.  I’m sure that once you make these you’ll find many, many ways to enjoy them.

Combine all three ingredients in a slow cooker and cook on low for five hours.

Sweet Italian Sausage & Roasted Chestnut Stuffed Mushrooms PLUS a Giveaway from Mrs. Cubbison’s **Giveaway CLOSED**

I recently received a sample package from Mrs. Cubbison’s and you have the opportunity to receive an even better gift package!  Check out what I made with their Mrs. Cubbison’s Classic Dressing and then there’s info on the giveaway at the bottom of the post.

IMG_6085eI was asked recently to try a Mrs. Cubbison’s product and use it in an original recipe.  They sent a sample package which included a box of Mrs. Cubbison’s Classic Dressing.  Well with Thanksgiving coming up I figured that everyone would have a one track mind thinking and stressing about whether to make stuffing inside their turkey or dressing in a side casserole.  Honestly I don’t need the stress and just wanted something a bit different, so what better than a nice little appetizer which includes that holiday favorite, stuffing. 

hero_turkeyWhat’s nice about this recipe is that it’s really versatile, so if you don’t want to make stuffed mushrooms, just follow the recipe and use it to either stuff your bird or put it in a casserole dish and serve it as dressing.  No matter which way you go, this is one delicious stuffing/dressing.

STUFF 12-12 OZ CLASSIC DRESSING CARTON 23111698_FINAL_OLWhen I opened the Mrs. Cubbison’s Classic Dressing, it smelled like Thanksgiving with all the herbs and spices already there, I’d bet that this dressing would be delicious on its own but I’m the type of girl who has to always add to a recipe and switch it around, but I found out that there are some who don’t add a thing, other than liquid, to store-bought stuffing mix.  Who knew?    

By the way, do you call it stuffing or dressing?  Well, Mrs. Cubbison's was interested in all these questions, along with some other interesting holiday facts like, do you use store-bought stuffing mix and what do you add to your stuffing?  To find all the answers Mrs. Cubbison’s conducted a Thanksgiving Across America Survey.  Did you know that the number one item handed down from generation to generation is the stuffing/dressing recipe?  It’s a fact that I didn’t know so I guess you learn something new everyday.  I wasn’t part of the survey but I’m going to give you a little insight into the Cook Lisa Cook home as I’m going to answer all the questions here and now.  Click on the Thanksgiving Across America Survey link to see how my answers compared and how your answers compare as well, it’s quite interesting based on gender and where we live.  Our demographics in the Cook Lisa Cook home are, I’m a New Englander, married to a Londoner, our daughter is from China and we live in Georgia. 

Here are my answers to all the survey questions:  

Q:  What is your favorite holiday? 
A:  Thanksgiving as it’s all about family and food.

Q:  To whom or for what will you be giving thanks this year? 
A:  Family and health.

Q:  Who did you spend Thanksgiving with last year? 
A:  Last year it was just me, Eammon, Maisie and my parents.  We had been invited to a friend’s home but I was sick, trying to get over a major case of pneumonia, we just the week prior to Thanksgiving found out that Maisie was allergic to wheat, egg & dairy and I was still trying to find my way with food for her and my Mom wasn’t feeling well so it was just our Intimate group of five.

Q:  Who/where do you go for help with the menu? 
A:  The internet, I love finding new and interesting recipes online but year to year I tend to make our traditional favorites.

Q:  Who were the cook(s) at the Thanksgiving meal you attended last year? 
A:  I did all of the cooking and my Mom helped with a lot of the prep-work. 

Q:  What is the farthest someone has travelled to attend your Thanksgiving dinner? 
A:  My parents travel over 800 miles (round trip) each year to enjoy Thanksgiving with us.

Q:  What are favorite items for the Thanksgiving meal? 
A:  1st: my Spice Rubbed Turkey with Cognac Gravy, 2nd: stuffing,  3rd: my totally awesome Corn Soufflé, all must haves for it to feel, taste & smell like Thanksgiving.

Q:  What are your favorite items for Thanksgiving leftovers?    
A:  A flaky, buttery croissant filled with sliced turkey, stuffing, sweet potato and cranberry sauce and for Eammon, turkey dump soup which includes turkey, all the leftovers including the veggies, stuffing, Corn Soufflé and even the remaining gravy.  Everything goes in his soup but the sweet potatoes and cranberry sauce.

Q:  Which items have been handed down from previous generations at your Thanksgiving?  
A:  Though my Mom is an awesome cook and made fabulous Thanksgiving meals when I was growing up, I don’t use any of her Thanksgiving recipes.  But check out her “Grandma’s Teriyaki Steak” recipe as it’s one of Maisie’s favorite meals.

Q:  Do you make your stuffing from scratch or do you use store-bought stuffing mix? 
A:  I am a store-bought stuffing mix kind of gal.  I guess I get that from my Mom as she’s the same.

Q:  Which term do you use:  stuffing, dressing, both or something else?
A:  I call it stuffing if I stuff it into something but call it dressing if I make it in a casserole dish.

Q:  How do you cook your stuffing?
A:  I cook it on the stovetop and finish it in the oven in a casserole dish.

Q:  What ingredients do you like to add to the stuffing when you cook it? 
A:  Onions top my list and are always included.  Roasted chestnuts, mushrooms and carrots are up there too as favorite add-ins.  Honestly it just depends on my mood, who’s going to be eating it, and the direction I want to go. 

Q:  Did you do anything special last year to prepare the turkey? 
A:  For the second year in a row I made my Spice Rubbed Turkey with Cognac Gravy, totally awesome, just an all around winning recipe. (check it out!)

Q:  Have you ever had to consider special diets at your Thanksgiving meal? 
A:  Oh yes.  With Maisie’s allergies to wheat, egg & dairy, my Mom’s inability to eat dairy, my Dad’s avoidance of offal, mushrooms, asparagus and sugar, Eammon’s dislike of fruit mixed in with anything savory and me trying to not eat too many processed foods, carbs or sugar, preparing the meal is…well interesting.  I try to go simple with my recipes and we don’t all eat every item made and served but we all have our favorites which have to be made or it just doesn’t feel like Thanksgiving.  Other than Maisie because of her allergies, we all cheat a bit with what we should and should not have but hey, it’s a holiday and only once a year so we indulge a little and enjoy!

Q:  What special diets have you had to consider? 
A:  Gluten-free, lactose-free, diabetic, low carb & picky eaters.

Q:  When do you start shopping for the Thanksgiving meal? 
A:  I would say about a week ahead.  Shelf items I pick up before that if I happen to see them on a good deal.

Q:  Where do you shop for the Thanksgiving meal? 
A:  Just like my usual shopping, most items come from the International/Asian Farmer’s Market.

Q:  How much time is spent in the kitchen preparing the Thanksgiving meal? 
A:  I usually start a couple of days ahead, so to spread out the work and have everything prepped and ready to go.

Q:  Did guests bring items to the holiday dinner last year or did the host do the whole meal? 
A:  As it was just five of us, me, Eammon, Maisie and my parents, I did the whole meal with my Mom’s help.

Q:  Have you ever snuck in the kitchen and sampled some of the food when no one was looking? 
A:  Heck yea!!  And I don’t believe those people who say they haven’t…I mean with all the delicious smells, who can resist?  Resistance is futile, resistance is futile…

Q:  What is your biggest worry on Thanksgiving?
A:  I don’t really worry or stress as it’s just close family.  I just do my best to get everything out on the table, hot, juicy and delicious and thus far, no complaints…and if I hear any complaints, they’re going to be doing the dishes!!

Q:  Other than the meal, what are your family’s favorite traditions or activities on Thanksgiving.
A:  We’re a lazy bunch, after eating it’s just a relaxing day, maybe a walk around the neighborhood but most likely, a good nap!

IMG_6081eBaby portabella mushrooms stuffed and ready for the oven.  These can be prepared to this point a couple of days ahead then covered and kept in the fridge.  When you’re ready to bake them it’s just a quick 20 minutes in the oven and hot, delicious appetizers are ready to serve.

These mushroom caps were a hit with everyone who tried them and the Mrs. Cubbison’s Classic Dressing had perfect seasonings so no additional herbs, spices, salt or pepper were needed.  I liked that the bread crumbs held up well and didn’t dissolve into mush.  I now look forward to using Mrs. Cubbison’s products again.

 IMG_6091eSweet Italian Sausage & Roasted Chestnut Stuffed Mushrooms

Preheat oven to 400F.  Prepare a baking sheet by covering it with aluminum foil and coating lightly with cooking spray.  Wash and dry the mushrooms.  Remove the stems and place the mushroom caps open side up on the prepared baking sheet.  Finely mince the stems and set aside.  In a large cast iron skillet heat the oil.  Add the onions and cook until they just begin to caramelize.  Add the minced mushroom stems and cook until they are soft.  Add the garlic and cook for an additional minute until the garlic is fragrant.  Add the sausage and breaking it up and mixing it in with the onion mixture, cook until lightly browned and cooked through.  Add the diced chestnuts and the Mrs. Cubbison’s Classic Dressing.  Stir well to mix.  Add the water and toss everything well to get all the dressing moist.  Cover the pan tightly and remove from the heat.  Allow the pan to sit covered and undisturbed for 10 minutes so that all the moisture steams through the dressing mix. 

Fluff up the cooked dressing and using a tablespoon, fill the mushroom caps nice and high with the filling.  Place the filled mushrooms on the prepared baking pan.

Bake for 20 minutes until the mushrooms are tender and the top of the filling is golden brown.
